We used baby spinach leaves because of their tender texture and mild, sweet taste. Mature spinach can taste bitter and requires blanching to reduce its bitterness. When buying fresh spinach, look for leaves that are crisp and have a dark-green colour.

You can also use frozen spinach in this recipe. With frozen spinach, you have two options. You can sauté it like we did the fresh spinach or you can thaw it, squeeze out all the liquid then add it, without cooking, to the sautéed vegetables.
