      Thank you for your comment and question. You can use kale and spinach if you like. However, we prefer spinach only.

    My name is Luis and I’m writing from Portugal
    How do you do so that the spinach fatayer stay closed when you bake them? Is there any trick so that the dough doesn’t fall apart??
    I tried to do them. In terms of taste they are very nice but the dough opened and the filling became exposed…

      Thank you for your comment and question.

      Make sure your flour measurement is accurate. The dough should be a little bit sticky, also do not use flour when rolling out the dough. Pinch hard and create an edge of about 1/4 inch high; as soon as you finish shaping them bake them right away.

    I’ve made these several times and they’ve always turned out perfect and amazing! Thank you so much for the delicious recipe.

    I plan to make them next week for an event, but I don’t have too much time the night before. Could I made them a couple days in advance and freeze the dough after rising?
