The moment we tasted the hot bowl of lentil soup in one of our favourite restaurants in Istanbul, we decided it was going to be the next recipe to post. That day, we had just finished a long walking tour of Sultanahmet, including a visit to the Grand Bazaar. Sultanahmet is the soul of old Istanbul and we thoroughly enjoyed the sightseeing. It was early evening and the weather was moderately cold and we were hungry by then.

The lentil soup was very delicious and it had all the spices and flavours that we love. Apart from the ground black pepper in the soup, none of the other spices added any heat. The soup was served with freshly-baked bread and it was a great start for an amazing Turkish meal.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Lentil Soup:

  • 3 Tbsp (45 mL) Olive oil
  • 1 Medium onion (chopped)
  • 2 Garlic cloves (minced)
  • 1 Tbsp (15 mL) Paprika
  • ½ tsp (2.5 mL) Turmeric powder
  • ¼ tsp (1.25 mL) Ground cinnamon
  • ½ tsp (2.5 mL) Cumin (ground)
  • ½ tsp (2.5 mL) Ground black pepper
  • 1 Medium tomato (chopped)
  • 1 Small sweet red bell pepper (chopped)
  • 1 Small carrot (chopped)
  • 1½ cups (270 g) Split red lentils (washed)
  • 8 cups (2 litres) Water
  • 2 Tbsp (30 mL) Xawaash Bouillon Powder – Or 1 tsp Xawaash spice mix + 2 tsp salt

Garlic & Cumin Oil:

  • 3 Tbsp (45 mL) Olive oil
  • 1 Garlic clove (sliced)
  • ½ tsp (2.5 mL) Cumin (ground)

 

Directions:

 

Steps for preparing the lentil soup

  1. Using medium heat, saute the chopped onion with 3 tablespoons of olive oil for 3 minutes, then add the garlic.
  2. Add the paprika, turmeric powder, ground cinnamon, ground cumin, ground black pepper, and stir well.
  3. Add the chopped tomatoes and stir well. Add the bell pepper and carrot and cook for 5 minutes. Then add the lentils and water.
  4. Add the xawaash bouillon powder (or xawaash spice mix and salt) and stir well.
  5. When it comes to a boil, cover and cook over low heat for 45 minutes.
  6. Blend until smooth.
  7. Using low heat, fry the sliced garlic in 3 tablespoons of olive oil until golden brown.
  8. Remove the fried garlic, then add the cumin and turn off the heat.

Shurbat Cadas:

  • 3 QW (45 mL) Saliidda oliifada
  • 1 Basal , Dhexdhexaad (jarjaran)
  • 2 Tuun (toon) (shiidan)
  • 1 QW (15 mL) Babriika
  • ½ qy (2.5 mL) Huruud shiidan
  • ¼ qy (1.25 mL) Qorfe shiidan
  • ½ qy (2.5 mL) Kaamuun (shiidan)
  • ½ qy (2.5 mL) Filfil madoow shiidan
  • 1 Yaanyo , Dhexdhexaad (jarjaran)
  • 1 Barbarooni macaan , Yar (jarjaran)
  • 1 Karooto (dabacase) , Yar (jarjaran)
  • 1½ koob (270 g) Cadas (Misir)
  • 8 koob (2 litre(s)) Biyo
  • 2 QW (30 mL) Maraq Xawaash

Saliid tuun & kaamuun leh:

  • 3 QW (45 mL) Saliidda oliifada
  • 1 Tuun (toon) (jarjaran)
  • ½ qy (2.5 mL) Kaamuun (shiidan)

 

Diyaarinta:

 

Diyaarinta shurbat cadaska

  1. Basasha ku dallac 3 qaaddo saliidda oliifada muddo 3 daqiiqo. Tuunta ku dar.
  2. Ku dar babriikada, huruudda shiidan, qorfaha shiidan, kaamuunta shiidan iyo filfisha madoow. Si fiican u walaaq.
  3. Ku dar yaanyada, si fiicanna u walaaq. Ku dar barbarooniga, iyo karootada. Kari muddo 5 daqiiqo. Kaddib ku dar cadaska (misirta) iyo biyaha.
  4. Ku dar maraq xawaashka (ama xawaash iyo cusbo), si fiicanna u walaaq.
  5. Markuu soo karo, dabool oo dab yar ku kari muddo 45 daqiiqo.
  6. Si fiican u shiid.
  7. Sameey saliidda udgoon. Saliidda oliifada iyo tuunta isku shiil ilaa ay tuunta ka gaduudato.
  8. Tuunta ka saar. Kaamuunta shiidan ku dar, dabkana ka demi.

Dès l’instant où nous avons goûté un bol de soupe de lentilles bien chaude dans un de nos restaurants préférés à Istanbul, nous avons décidé d’en faire notre prochaine recette. Ce jour là, nous venions juste de finir une longue ballade dans Sultanahmet, dont une visite du Grand Bazaar. Sultanahmet est le coeur du vieux Istanbul et nous avons beaucoup apprécié ce quartier. C’était la fin de l’après midi, il faisait froid et nous avions faim.

Cette soupe de lentilles était délicieuse et avait toutes les saveurs et les épices que nous aimons. A part le poivre noir moulu dans la soupe, aucune autre épice n’ajoutait de piquant. La soupe était servie avec du pain frais. C’était l’entrée parfaite d’un excellent repas Turc.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Soupe de Lentilles:

  • 3 cs (45 mL) d’Huile d’Olive
  • 1 Oignon moyen (haché)
  • 2 de Gousses d’Ail (haché)
  • 1 cs (15 mL) de Paprika
  • ½ cc (2.5 mL) de Curcuma en Poudre
  • ¼ cc (1.25 mL) de Cannelle en Poudre
  • ½ cc (2.5 mL) de Cumin (moulu)
  • ½ cc (2.5 mL) de Poivre Noir moulu
  • 1 tomate moyenne (hachée)
  • 1 Petit poivron rouge (haché)
  • 1 Petite carotte (hachée)
  • 1½ mesures (270 g) de Lentilles corail décortiquées (lavées)
  • 8 mesures (2 litres) d’Eau
  • 2 cs (30 mL) de Bouillon de Hawa’ij – Ou 1 cc de Xawaash + 2 cc de sel

Huile au cumin & à l’ail:

  • 3 cs (45 mL) d’Huile d’Olive
  • 1 de Gousses d’Ail (émincé)
  • ½ cc (2.5 mL) de Cumin (moulu)

 

Instructions:

 

Étapes de préparation de la soupe de lentilles

  1. Faire sauter l’oignon haché à feu moyen dans 3 cuillères à soupe d’huile d’olive pendant 3 minutes, puis ajouter l’ail.
  2. Ajouter le paprika, le curcuma en poudre, la cannelle moulue, le cumin moulu, le poivre noir moulu, et bien mélanger.
  3. Ajouter la tomates hachée et bien mélanger. Ajouter le poivron et les carottes et cuire 5 minutes. Puis ajouter les lentilles et l’eau.
  4. Ajouter le bouillon xawaash en poudre (ou le xawaash et le sel) et bien mélanger.
  5. Dès l’ébullition, couvrir et cuire à feu doux pendant 45 minutes.
  6. Mixer pour obtenir une soupe lisse.
  7. Frire l’ail émincé à feu doux dans 3 cuillères à soupe d’huile d’olive jusqu’à ce qu’il soit doré.
  8. Retirer l’ail frit, puis ajouter le cumin et couper le feu.

بصل 1
(فص ثوم( مفروم 2
فلفل احمر حلو ملعقة كبيرة 1
مسحوق الكركم (الهرد) ملعقة صغيرة ½
قرفة مطحون ملعقة صغيرة ¼
(( مطحون ملعقة صغيرة ½
فلفل اسود مطحون ملعقة صغيرة ½
طماطم 1
فلفل رومي 1
جزر 1
عدس جم 270
ماء كوب 8
مرق حوائج ملعقة كبيرة 2
زيت بنكهة الثوم والكمون
زيت زيتون ملعقة كبيرة 3
(فص ثوم( مقطع شرائح 1
(( مطحون ملعقة صغيرة ½

 

طريقة التحضير:

 

طريقة تحضير شربة العدس

يحمر البصل في الزيت باستخدام نار متوسطة لمدة 3 دقائق ثم يضاف الثوم -1
يضاف البابريكا، مسحوق الكركم (الهرد)، مسحوق القرفة، مسحوق الكمون، ومسحوق الفلفل الاسود ثم يحرك جيدا -2
يضاف الطماطم ويحرك جيدا ثم يضاف الفلفل الرومي والجزر ويطهى لمدة 5 دقائق. ثم يضاف العدس والماء -3
يضاف مسحوق مرق الحوائج او بهارات حوائج وملح ويحرك جيدا -4
بعد ان يصل الى درجة الغليان، يغطى ويطهى على نار هادئة لمدة 45 دقيقة -5
تخلط الشربة بالخلاط -6
يحمر الثوم في الزيت -7
يرفع الثوم ويضاف مسحوق الكمون ثم تطفئ النار مباشرة -8

    we use this alot in ethiopia. diri dawa. they call missir over there, and sometimes because people are poor they cook straight plain with water mix with rice, but it comes out tasting good.

      Thank you very much for your comment. Yes, you can definitely add potato. In many parts of the Middle East, potatoes are added. Finely dice 1 potato and add it along with the carrot. The potato will thicken the soup so you will need to add hot water to thin it to the consistency you prefer.
