Sweet Plantains

www.xawaash.com

This sweet plantain dessert is a popular Ramadan dish in Somalia, particularly in the southern parts of the country. It is very easy to make and it is also quite economical. The plantains are usually flavoured with coconut and in some places, ground cardamom is also added.

For this dish, the plantains have to be ripe. Choose plantains that have many patches of black but whose skin is not fully black, because when a plantain becomes over-ripe, it has a strong smell and taste that we do not like.

This dessert is best eaten warm but can also be served when it is at room temperature. The plantains tend to get harder the more they cool down. A serving of warm, caramelized sweet plantains is a homey treat and is a heart-warming comfort dessert.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

Sweet Plantains:

  • 4 Plantains (ripe)
  • 1½ cups (300 g) Granulated white sugar
  • 4 cups (1 litre) Water
  • 2 Tbsp (30 mL) Coconut cream
  • 1 Tbsp (15 mL) Shredded coconut (toasted)
  • ¼ tsp (1.25 mL) Cardamom (ground) – Optional

Directions:

Steps for preparing the sweet plantains

  1. Wash the plantains, peel and cut into 1 inch (2.5 cm) slices. Place all the ingredients in a pot except the coconut cream.
  2. Cover and cook over low heat for 2 hours. If the plantains are not fully ripe, you will need to cook them longer.
  3. Add the coconut cream and swirl the pot to coat the plantain slices with the coconut. Do not stir so the plantains stay intact. Turn off the heat and serve warm.

Plantains Confits

www.xawaash.com
