This recipe has its origins in Bardera, Somalia. There, a Somali cook trained by Italians used to prepare a ricotta crostata using a delicious, buttery dough. A few years later, my mother, Hooyo Fadumo, replaced the ricotta with jam and our Doolsho Malmalaaddo was born. It was prepared in our home during the Eids and occasionally when we had guests.

This dough is great with many different types of fillings: jams, ricotta, fresh fruits, custard, etc… It is this versatility that we love so much.

The Doolsho Malmalaaddo, that mother used to make, had a very rustic look. The base was spread by hand and the top was decorated by ropes of dough. Using this method, the chilling of the dough was not necessary and the whole process was very quick. The ease and speed of preparation meant that there was no need to worry if we ran out of crostata by mid afternoon on Eid day. Fresh ones were prepared in less than an hour.

Mother used to make different types of fruit preserves and they were used for the crostata. She made jams from mangoes, mandarin oranges, guava, and papaya. However, our favourite Doolsho Malmalaaddo was made with canned watermelon jam.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Recipe #1:

  • 1 cup (200 g) Granulated white sugar
  • 1 cup (250 mL) Unsalted butter (softened)
  • 1 Large Egg
  • 1 Egg yolk
  • ½ tsp (2.5 mL) Baking powder
  • 1 tsp (5 mL) Vanilla extract
  • 3 cups (420 g) All-purpose (plain) flour
  • ¼ tsp (1.25 mL) Salt
  • 1 cup (237 mL) Jam

Recipe #2:

  • 1 cup (200 g) Granulated white sugar
  • 1 cup (250 mL) Unsalted butter (softened)
  • 2 Large Eggs
  • 1 tsp (5 mL) Vanilla extract
  • ½ tsp (2.5 mL) Baking powder
  • 3 cups (420 g) All-purpose (plain) flour
  • ½ cup (100 g) Almonds (ground)
  • ¼ tsp (1.25 mL) Salt
  • 1 cup (237 mL) Jam

Directions:

 

Steps for preparing the crostata using Recipe #1

  1. Using a food processor or stand mixer, mix the sugar and butter for 3 minutes.
  2. Add the eggs, baking powder, vanilla essence or extract and salt (if using). Mix for 1 minute.
  3. Add the flour and mix for another minute.
  4. Divide the dough into ⅓ and ⅔.
  5. Place each piece of dough in between two pieces of cling wrap. Roll out the larger piece of dough to a 13″ (33 cm) diameter circle. Chill for 1 hour.
  6. Roll out the smaller piece of dough to an 11″ (28 cm) diameter circle. Chill for 1 hour then cut into ⅔” (2 cm) strips.
  7. Peel off the cling wrap from one side of the chilled, larger piece of dough and flip the dough onto an 11″ (28 cm) cake pan. Press the dough down to fit the pan and peel off the cling wrap. Using a rolling pin, trim any excess dough.
  8. Place the jam on top and spread to cover the whole pie.
  9. Place the strips evenly as shown. You can also place them diagonally. Bake in a preheated oven for 35 minutes at 380°F/193°C.

Steps for preparing the crostata using Recipe #2

  1. Using a wire whisk, beat the sugar and butter for 6 minutes. Add the eggs, baking powder, vanilla and salt (if using). Mix for 2 more minutes.
  2. Add the flour and ground almonds.
  3. Mix until well-combined.
  4. Divide the dough into ⅓ and ⅔.
  5. Grease an 11″x14″ (28×35 cm) baking pan with butter. Place the larger piece of dough in the pan and using your fingers, spread it evenly in the pan.
  6. Place the jam on top and spread to cover the whole pie.
  7. Flour the work surface and take a piece of dough from the smaller piece.
  8. Roll the smaller piece of dough into ropes.
  9. Place the dough ropes as shown or use any design you like. Bake in a preheated oven for 35 minutes at 380°F/193°C.

Soo’da #1:

  • 1 koob (200 g) Sokor cad
  • 1 koob (250 mL) Buuro aan cusbo lahayn (la jilciyay)
  • 1 Ukun (weyn)
  • 1 Shaharka ukunta
  • ½ qy (2.5 mL) Qamiir
  • 1 qy (5 mL) Faniilla
  • 3 koob (420 g) Bur cad
  • ¼ qy (1.25 mL) Cusbo
  • 1 koob (237 mL) Malmalaaddo

Soo’da #2:

  • 1 koob (200 g) Sokor cad

Diyaarinta:

 

Soo’da koowaad ee diyaarinta doolsho malmalaaddada

  1. Buurada iyo sokorta makiinad ku qas muddo 3 daqiiqo.
  2. Ku dar ukunta, qamiirka (baking powder), faniillada iyo cusbada (haddaad ku dareysid). Qas muddo 1 daqiiqo.
  3. Burka ku dar, kaddibna daqiiqad kale qas.
  4. Cajiinka labo u qaybi: ⅓ iyo ⅔.
  5. Gabalka weyn laba bac dhexdooda geli, kaddibna u fidi wareeg 13″ (33 cm) ah. Qaboojiyaha geli muddo hal saac.
  6. Gabalka yar laba bac dhexdooda geli, kaddibna u fidi wareeg 11″ (28 cm) ah. Qaboojiyaha geli muddo hal saac. Markaad diyaar noqotid inaad isticmaashid, u jar gaballo dhaadheer oo balacooda yahay ⅔ ” (2 cm).
  7. Gablkaweyn bacda hal dhinac ka fiiq, birtana ku geddi. Cajiinka si tartiib ah faraha hoos ugu riix, kaddibna bacda ka wada fiiq.
  8. Malmalaaddada ku shub ee kuwada fidi.
  9. Gabalada dhaadheer ku qurxi, sida aad ka arki kartid sawirka ama fiidiyaha. Ku dub foorno lasii kululeeyay 380°F/193°C muddo 35 daqiiqo.

Soo’da labaad ee diyaarinta doolsho malmalaaddada

  1. Sokorta iyo buurada isku dar, si fiicanna u qas muddo 6 daqiiqadood. Markaas kaddib, ukunta, qamiirka (baking powder) iyo faniillada ku dar. Qas muddo 2 daqiiqo.
  2. Burka iyo looska la shiiday ku dar.
  3. Si fiican u qas.
  4. Cajiinka labo u qaybi: ⅓ iyo ⅔.
  5. Buuro ama saliid mari bir foorno oo cabbirkeeda yahay 11″x14″ (28×35 cm). Gabalka weyn ee cajiinka ku fidi birta.
  6. Malmalaaddada ku shub ee kuwada fidi.
  7. Miiska aad ku shaqeynaysid waxaad ku firdhisaa in yar oo bur ah. Cajiinka yar gabal ka soo gooso.
  8. Gabalka aad soo goosatay ka dhig sida xarig oo kale.
  9. Doolshaha waxaa dusha ka saartaa xargaha cajiinka. Ku dub foorno lasii kululeeyay 380°F/193°C muddo 35 daqiiqo.

Tarte à la confiture

Cette recette est originaire de Bardera, Somalie. Là-bas, un cuisinier Somali formé par des Italiens faisait une crostata à la ricotta avec une pâte au beurre délicieuse. Quelques années plus tard, ma mère, Hooyo Fadumo, a remplacé la ricotta par de la confiture et notre Doolsho Malmalaaddo était née. A la maison, elle était préparée pendant l’Eid et occasionnellement quand nous avions des invités.

La pâte allait très bien avec toutes sortes de garnitures: confitures, ricotta, fruits frais, crème, etc… C’est sa versatilité que nous aimons tant.

La Doolsho Malmalaado, que faisait ma mère, avait un aspect très rustique. La base était étalée à la main et le dessus était décoré avec des boudins de pâte. Avec cette méthode, la pâte n’avait pas besoin d’être réfrigérée et la fabrication était très rapide. La tarte était tellement rapide et facile à faire que nous n’avions pas peur de manquer de crostata en plein milieu d’après midi le jour de l’Eid. Des tartes fraîches étaient préparées en moins d’une heure.

Maman faisait des conserves de fruits qui étaient utilisées pour la crostata. Elle faisait de la confiture de mangue, de mandarine, de goyave, et de papaye. Mais notre Dolsho Malmalaaddo préférée était préparée avec de la confiture de melon.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Recette #1:

  • 1 mesure (200 g) de Sucre en Poudre
  • 1 mesure (250 mL) de Beurre Doux (ramolli)
  • 1 Gros Oeuf
  • 1 Jaune d’Oeuf
  • ½ cc (2.5 mL) de Levure
  • 1 cc (5 mL) d’Extrait de Vanille
  • 3 mesures (420 g) de Farine Blanche
  • ¼ cc (1.25 mL) de Sel
  • 1 mesure (237 mL) de Confiture

Recette #2:

  • 1 mesure (200 g) de Sucre en Poudre
  • 1 mesure (250 mL) de Beurre Doux (ramolli)
  • 2 Gros Oeufs
  • 1 cc (5 mL) d’Extrait de Vanille
  • ½ cc (2.5 mL) de Levure
  • 3 mesures (420 g) de Farine Blanche
  • ½ mesure (100 g) de Poudre d’Amandes
  • ¼ cc (1.25 mL) de Sel
  • 1 mesure (237 mL) de Confiture

Instructions:

 

Étapes de préparation de la crostata avec la méthode #1

  1. Mélanger le sucre et le beurre 3 minutes dans un mixer ou un robot ménager.
  2. Ajouter les oeufs, la levure, l’essence de vanille ou l’extrait et le sel (si utilisé). Mélanger 1 minute.
  3. Ajouter la farine et mélanger une minute de plus.
  4. Couper la pâte en deux morceaux de 1/3 et 2/3.
  5. Poser chaque morceau entre deux feuilles de film alimentaire. Étaler le plus gros morceau en un cercle de 13” (33 cm) de diamètre. Réfrigérer 1 heure.
  6. Étaler le plus petit morceau de pâte en un cercle de 11” (28 cm) de diamètre. Réfrigérer 1 heure puis couper en bandes de 2/3” (2 cm).
  7. Retirer le film d’un côté du plus grand morceau de pâte et retourner la pâte sur un moule à tarte de 11” (28 cm). Ajuster la pâte au moule et retirer le film. Retirer l’excès de pâte avec un rouleau à pâtisserie.
  8. Verser la confiture dessus et recouvrir toute la pâte.
  9. Poser les bandes espacées régulièrement comme ci-dessus. Vous pouvez aussi les poser en diagonales. Cuire 35 minutes au four préchauffé à 380°F/193°C.

Étapes de préparation de la crostata avec la Méthode #2

  1. Battre le sucre et le beurre avec un fouet pendant 6 minutes. Ajouter les oeufs, la levure, la vanille, et le sel. Mélanger 2 minutes de plus.
  2. Ajouter la farine et la poudre d’amandes.
  3. Mélanger jusqu’à ce que la pâte soit homogène.
  4. Couper la pâte en deux morceaux 1/3 et 2/3.
  5. Graisser une plaque de cuisson de 11”x14” (28×35 cm) avec le beurre. Poser le gros morceau de pâte au milieu du plat et étaler la pâte uniformément avec les doigts.
  6. Verser la confiture dessus et étaler sur toute la pâte.
  7. Fariner le plan de travail et prendre un petit morceau de pâte du morceau restant.
  8. Rouler un boudin avec ce morceau de pâte.
  9. Poser les boudins de pâte comme ci-dessus ou créer les motifs que vous voulez. Cuire 35 minutes dans un four préchauffé à 380°F/193°C.

طريقة تحضير كيك المربى بإستخدام الوصفة الاولى

يخلط السكر مع الزبدة لمدة 3 دقائق -1
يضاف البيض، البيكنج بودر، الفانيلا والملح (اختياري)، يخلط لمدة دقيقة -2
يضاف الطحين (دقيق) ويخلط لمدة دقيقة -3
تقسم العجينة الى قطعتين: 1/3 و 2/3 -4
توضع كل قطعة بين قطعتين بلاستك التغليف. تفرد القطعة الكبيرة الى دائرة قطرها 33 سم ثم توضع في الثلاجة لمدة ساعة -5
تفرد القطعة الصغيرة الى دائرة قطرها 28 سم ثم توضع في الثلاجة لمدة ساعة، قبل الاستعمال تقطع الى شرائح 2 سم -6
يزال البلاستك من جهة واحد من القطعة الكبيرة وتقلب العجينة فى قالب الكيك. تضغط العجينة ويزال البلاستك من الجهة الاخرى -7
يضاف المربي ويفرد -8
تزين بشرائح العجينة ثم يخبز الكيك في فرن مسخن مسبقا على حرارة 380°F او 193°C لمدة 35 دقيقة. -9

طريقة تحضير كيك المربى بإستخدام الوصفة الثانية

يخلط السكر مع الزبدة بمضرب يدوي لمدة 6 دقائق. يضاف البيض، البيكنج بودر، الفانيلا والملح (اختياري)، تخلط لمدة دقيقتين اخرى -1
يضاف الطحين (دقيق) واللوز المطحون -2
تخلط العجينة جيدا -3
تقسم العجينة الى قطعتين: 1/3 و 2/3 -4
تدهن صينية فرن مقاس 28×35 سم بزبدة. تفرد القطعة الكبيرة في الصينية -5
يضاف المربي ويفرد -6
يُرش سطح أملس بقليل من الدقيق وتفرد علية قطعة صغيرة من العجين -7
تشكل العجينة على هيئة حبل -8
يزين الكيك ثم يخبز في فرن مسخن مسبقا على حرارة 380°F او 193°C لمدة 35 دقيقة. -9

    This recipe brings up a lot of memories!

    I live in the south of the Netherlands and I grew up eating ‘vlaai’ a lot. It is a type of pie with a tasy crust and filled with apricots, cherries, apple crumbs or rice pudding. Thank you so much for the crostata recipe. I’ll be trying it very soon!
