2 Sponge Cakes (2 Doolsho Soomaali) 2 Génoises ٢ كيك إسفنجي

 
A sponge cake was the first cake we baked in Somalia. The ingredients were: 6 eggs, 1 cup sugar, and 1 cup flour. The steps were: separate the yolks from the egg whites; beat the egg whites with the sugar until foamy; beat in the egg yolks, then gently add the flour. Bake. The process, however, was not as easy as cake. Most people did not have electric mixers, and the majority had no ovens.
 
Cakes were baked in pots set on a charcoal stove. Hot embers were put on top of the lid, and these together with the warm coals underneath the pot, baked the cake. The right amount of coals, as well as the correct baking time, was determined by experience. Those who knew it, knew it.
 
Sponge cakes are by nature dry, but some are more dry than others. To make the cake more moist, we added a little melted butter to the batter. We also made sure that we did not bake the cake too long. Baking it too long, results in a very dry cake.
 
We wanted the cake to be very light, but using cake flour was not an option because many of our readers do not have access to it. To get similar results, we added cornstarch (cornflour) to the all-purpose (plain) flour. We experimented with different proportions until we settled on a ratio of 1 cup all-purpose flour to ½ cup cornstarch. We like the result and we hope that you will too.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

Serves 10

1 cup (140 g) All-purpose (plain) flour
½ cup (65 g) Cornstarch (cornflour)
¼ tsp (1.25 mL) Salt

4 Tbsp (60 mL) Unsalted butter (melted)
1 Tbsp (15 mL) Vanilla essence (cake #1 )
1 tsp (5 mL) Ground cardamom (cake #2)
1 tsp (5 mL) Lemon zest (cake #1)
6 Large eggs
1 cup (200 g) Granulated white sugar

1 Tbsp (15 mL) Butter (soft) for greasing the cake pan
1 Tbsp (15 mL) flour for the cake pan 

Macerated strawberries:
½lb (225 g) Fresh strawberries 
1½ Tbsp (22.5 mL) Granulated sugar
1 Tbsp (15 mL) Fresh mint (chopped) 

 

Steps for preparing sponge cake #1

1. Combine the flour, cornstarch (cornflour) and salt and sift twice. 2. In a bowl, combine the melted butter, vanilla essence and the lemon rind. Mix well. 3. Place the bowl of the stand mixer in a larger bowl with hot tap water. 4. Place the eggs in the bowl for 10 minutes to warm them up. Stir frequently to prevent the eggs from cooking. 5. Attach the warm bowl to the mixer and add the sugar. 6. Beat on high for 5 to 7 minutes. Do not beat for less than 5 minutes. 7. Set the mixer speed to low and gradually add the flour mixture. Do not unnecessarily prolong the time for adding the flour8. Add the butter mixture and mix until just combined. 9. Pour the batter into a buttered and floured 9½” (24 cm) mould. Bake in a preheated oven at 350°F/177°C for 35 minutes.

 

Bring the eggs to room temperature

Steps for preparing sponge cake #2

1. Separate the yolks from the egg whites. 2. Place the bowl, that you intend to use, in a larger bowl with hot tap water. 3. Place the egg whites in the bowl and beat as you gradually add the sugar. 4. Beat the eggs and sugar until foamy and thick (8 to 10 minutes). 5. Add the egg yolks. 6. Beat for 1 minute. 7. Gently fold in the flour mixture. Mixing vigorously will deflate the batter. It is the air that was incorporated in the eggs that makes the cake rise (no need for a leavening agent). 8. Add the butter mixture and fold until just combined. 9. Pour the batter into a buttered and floured 9½” (24 cm) mould. Bake in a preheated oven at 350°F/177°C for 35 minutes.

Doolsho Soomaaliga wuxuu ahaa nooca koowaad ee doolshayaasha oo aan ku dubnay Soomaaliya. Maqaadiirta waxay ahaayeen: 6 ukun, koob sokor, iyo koob bur ah. Tallaabooyinka waxay ahaayeen: kala saar shaharka iyo xabka ukunta; xabka iyo sokorta isku garaac ilaa ay xumbo cad ka noqdaan; shaharka ku dar oo ku garaac, kaddibna burka si tartiib ah ugu dar. Dub. Laakiin howshaas ma ahayn mid fudud. Dadka in aad u yar ayaa qabeen makiinadda ukunta lagu garaaco, badidoodna guryaha foorno kuma qabin.
 
Doolshaha waxaa lagu dubi jiray digsi oo burjiko saaran. Dab yar ayaa hoos kaga shidnaan jiray, daboolkana dab ayaa la saari jiray. Qiyaasta dabka iyo inta waqti loo baahan yahay in la dubo doolshaha, labadaasba waxaa lagu bartay waayo aragnimo iyo qibrad. Qofkii yaqaannaa yaqaan.
 
Doolsho Soomaaliga sidiisaba waa doolshe aan qoyanayn. Laakiin qaar ayaa jira oo dhuunta ku istaagaaya haddaad damacdid inaad cuntid. Waxaan ku darnay in yar oo buuro ah si aan u jilcinno. Waxaan kaloo hubinnay inaan dubidda ku daahinin si uusan u qalalin. 
 
Waxaan rabnay inuu doolshaha qafiif noqdo oo uusan culusaanin. Doolshayaasha qafiifka ah waxaa badi laga sameeyaa bur doolsho (cake flour), laakiin waxaan go’aasannay inaan isticmaalin, sababtoo ah dadka badidood ma heli karaan burka noocaas ah. Si aan u helno natiijo u dhiganta, waxaan burka ku darnay waraango. Dhoor jeer ayaan tijaabinnay anagoo isticmaalayna cabirro kala duwan. Natiijada ugu fiican waxaan helnay markaan koob bur ah ku darnay ½ koob waraango ah. Annaga waan jeclaysannay doolshaha aan sidaas u sameynay, waxaanna rajeynaynaa inaad idinkana jecleysataan.

La génoise est la première pâtisserie que nous avons réalisée en Somalie. Les ingrédients étaient: 6 oeufs, 1 mesure de sucre, et une mesure de farine. Les étapes étaient: séparer les jaunes et les blancs d’oeufs; battre les blancs d’oeufs avec le sucre jusqu’à ce qu’ils soient mousseux; ajouter les jaunes en battant, puis ajouter doucement la farine. Cuire. Cependant faire le gâteau ce n’était pas de la tarte. La plupart des gens n’avait pas de batteur électrique, et la majorité n’avait pas de four.
 
Les gâteaux étaient cuits dans des pots posés sur un fourneau à charbon. Des braises chaudes étaient posées sur le couvercle, et combinées à la chaleur des charbons dessous, cuisaient le gâteau. La bonne quantité de braises, ainsi que le temps de cuisson précis, s’apprenaient avec le coup de main. Ceux qui le savaientt, le savaient.
 
Les génoises sont par nature assez sèches, mais certaines plus que d’autres. Pour rendre le gâteau plus moelleux, nous avons ajouté un peu de beurre fondu à la pâte. Nous avons aussi fait attention à ne pas cuire le gâteau trop longtemps. Une cuisson trop longue donne un biscuit très, très sec.
 
Nous voulions que le gâteau soit très léger, mais utiliser de la farine à gâteau n’était pas une option car beaucoup de nos lecteurs n’y ont pas accès. Pour obtenir des résultats similaires, nous avons ajouté de la fécule de maïs (maïzena) à la farine blanche (ménagère). Nous avons expérimenté avec différentes proportions jusqu’à ce qu’on choisisse un mélange de 1 mesure de farine blanche pour ½ mesure de fécule de maïs. Nous apprécions le résultat et nous espérons que vous l’apprécierez aussi.

1 cc (5mL) de Cardamome en poudre (gâteau #2)
1 cc (5mL) de Zest de Citron (Gâteau #1)
6 Gros Oeufs
1 mesure (200 g) de Sucre Blanc en Poudre

1 cs (15 mL) de Beurre ramolli pour graisser le moule à gâteau
1 cs (15 mL) de Farine pour le moule

Fraises Macérées

½ livre (225 g) de Fraises Fraîches
1½ cs (22.5 mL) de Sucre en Poudre
1 cs (15 mL) de Menthe Fraîche (ciselée)

 

Étapes pour préparer la génoise #1

1. Mélanger la farine, la fécule et le sel et tamiser deux fois. 2. Dans un bol, mélanger le beurre fondu, l’extrait de vanille et le zest de citron. Bien mélanger. 3. Placer le bol du robot dans un saladier plus grand rempli d’eau chaude du robinet. 4. Placer les oeufs dans le bol pendant 10 minutes pour les réchauffer. Mélanger souvent pour éviter que les oeufs cuisent. 5. Attacher le bol chaud au mixer et ajouter le sucre. 6. Battre à vitesse rapide pendant 5 à 7 minutes. Ne pas battre moins de 5 minutes. 7. Réduire à vitesse du mixer à lente et ajouter petit à petit le mélange de farine. Ne pas prolonger inutilement le temps pour ajouter la farine. 8. Ajouter le mélange de beurre et mélanger jusqu’à ce qu’il soit juste incorporé. 9. Verser la pâte dans un moule beurré et fariné de 24 cm (9½ pouces). Cuire dans le four préchauffé à 350°F/177°C pendant 35 minutes.

Étapes de préparation de la génoise  #2

1. Séparer les jaunes des blancs d’oeufs. 2. Placer le bol que vous allez utiliser dans un saladier plus grand rempli d’eau chaude du robinet. 3. Placer les blancs d’oeufs dans le bol et battre tout en ajoutant petit à petit le sucre. 4. Battre les blancs d’oeufs et le sucre jusqu’à ce qu’ils soient mousseux et épais (8 à 10 minutes). 5. Ajouter les jaunes d’oeufs. 6. Battre 1 minute. 7. Incorporer délicatement le mélange de farine. Si la pâte est trop battue, elle se dégonflera.  C’est l’air qui a été incorporé dans les oeufs qui fera gonfler le gâteau (pas besoin de levure). 8. Ajouter le mélange de beurre et d’épices et ajouter doucement en retournant la pâte jusqu’à ce qu’il soit juste incorporé. 9. Verser la pâte dans un moule beurré et fariné de 24 cm (9½ pouces). Cuire dans un four préchauffé à 350°F/177°C pendant 35 minutes.

    i am so proud OF you guys i always imagine the effort you put in this work the hard work u do n how u reply to all queries.. i made this cake n made a victorian cake out of your sponge cake… the idea of using corn starch n hot water during mixin the egg… i personally use several websites for cookin but i find u the best sincerely..most of the times i have the ingridients at home…n macshara n mashmash i use to crave for them when i was early pregnant now i can make it THANKS A MILLION FOR THE WORK U DO AND THE GENEROSITY…….

      Thank you very much for your comment. It is the same recipe. You can add about 3 Tbsp water or milk for a softer cake. Bake at 350°F/177°C for 12-14 minutes.

      Gacantaada ayaad isticmaali kartaa haddaadan qabin makiinadda. Buuro waxaa loo yaqaanaa “butter” af Ingiriss, af Carabiguna waa zubda “زبدة”. Faraawalo waa “strawberry” haddaadan heli karin furuut kale ku beddel sida cambaha. Meento waa caraf sida vanilla-da oo kale. Nacnaca ayaa lagu daraa, cabitaanna waa laga sameeyaa. Af-Carabi waxaa lagu yiraahdaa نعناع. Af-Ingiriisiga-na waa “mint.” Waraango waa nashad, xalwaddana waa lagu kariyaa.

This is a great cake but my first try didn’t turn out the way I wanned I divided everything in half because I wanted small cake and I baked it for 25mnt in 350f but the cake became dry and crumbly I need your help because I want to try it again is it the baking time and if it’s how long should I bake it for.       It looks like the cake was over baked. The baking time also has to be adjusted based on the size of the pan you used for baking.
