Whether you like it with a smoky flavour or not, this is an easy appetizer to prepare that you will enjoy. For us, the smoky flavour is a definite taste booster and we cannot imagine mutabbal without it. It adds a summery touch to your meal, reminding you of grilled foods and warmer times.

This winter has been extremely cold and snow has piled higher than we have ever seen before. Thanks to the smoky mutabbal, summer cheer was brought to our table. We thought we made a large batch but it was scooped in no time and the bowl was wiped clean.

Muttabal is one of those dishes that get better the next day. The flavours will blend and it will taste better than when it is freshly made. Just before serving, we like to sprinkle some ground sumac on top. Sumac is made by grinding the dried berries of the sumac bush and it adds a nice tart flavour. We also like the nice colour contrast with the muttabal. Another garnish that also adds a beautiful colour to the dish is pomegranate seeds. They look like rubies and we were happy with the look of the ruby ‘necklace’ that we made on the edge of the bowl. Pomegranate seeds have a sweet, tart flavour that bursts into your mouth when you bite into them.

You can serve it with rice, grilled meats or vegetables, spread it on pita bread, or scoop it with pita chips. We served it with broiled chicken thighs, cauliflower tabbouleh, seasoned red onions, and pita bread wedges.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Eggplant Dip:

  • 2 Large Eggplants
  • 3 Tbsp (45 mL) Olive oil
  • 1 ¼ tsp (6.25 mL) Salt
  • ½ tsp (2.5 mL) Ground black pepper
  • 1 cup (237 mL) Yogurt
  • ½ cup (118 mL) Tahini sauce
  • 1 tsp (5 mL) Garlic paste
  • 1 tsp (5 mL) Cumin (ground)
  • ¼ cup (59 mL) Lemon juice

Garnish:

  • Pomegranate seeds
  • Sumac
  • Olive oil

 

Directions:

 

Steps for preparing the eggplant dip

  1. Slice the eggplant in half, then drizzle with 2 teaspoons of olive oil and sprinkle with a quarter teaspoon of salt and a quarter teaspoon of ground black pepper. Roast the eggplant in a preheated oven at 450°F/232°C for 45 minutes or until soft.
  2. For a smoky flavour, fire-roast the eggplant on the stove top for 15 minutes or until soft. Turn every one or two minutes. For a less smoky flavour, roast for 6 minutes and continue roasting in the oven until soft.
  3. Tightly wrap the fire-roasted eggplant in aluminum foil and let sit for 20 minutes. This will make the skin come off easily.
  4. Scoop out the flesh from the eggplant and discard the skin.
  5. Chop well and place the chopped eggplant in a sieve to drain.
  6. Place the chopped eggplant and all the other ingredients in a bowl. Mix well and keep refrigerated until serving.

  • 2 Bitingaan , Weyn
  • 3 QW (45 mL) Saliidda oliifada
  • 1 ¼ qy (6.25 mL) Cusbo
  • ½ qy (2.5 mL) Filfil madoow shiidan
  • 1 koob (237 mL) Caano fadhi
  • ½ koob (118 mL) Taxiino
  • 1 qy (5 mL) Tuun (toon) macjuun
  • 1 qy (5 mL) Kaamuun (shiidan)
  • ¼ koob (59 mL) Casiir liin dhanaan

qurxin:

  • Miro rummaan
  • Sumaa’
  • Saliidda oliifada

  1. Bitingaanka kala gooy. Ku bilbil 2 qaaddo yar saliidda oliifada, rubac qaaddo yar cusbo iyo rubac qaaddo yar filfil madoow shiidan. Ku dub foorno la sii kululeeyey oo kulaylkeeda yahay 450°F/232°C. Dub muddo 45 daqiiqo.
  2. Haddaad rabtid dhadhan qaac leh, dabka korkiis ku dub muddo 15 daqiiqo ama ilaa uu bitingaanka ka jilco. Haddaad rabtid dhadhan qaac aan badneyn, 6 daqiiqo dabka ku dub kaddibna foornada geli ilaa uu ka bislaado oo uu ka jilco.
  3. Bitingaanka dabka lagu dubay, xaanshi alamuunyam si fiican ugu duub. Taas waxay kuu fududaynaysaa inaad qolofta ka fiiqdid.
  4. Bitingaanka qolofta ka saar.
  5. Burburi, kaddibna miire ku rid si ay biyaha uga baxaan.
  6. Bitingaanka iyo mukawinaadka kale baaquli ku rid ee isku qas. Qaboojiyaha geli ilaa laga qaddimo.

Que vous l’aimiez avec ou sans saveur fumée, vous apprécierez cette entrée facile à préparer. Pour nous, ce goût fumé améliore le plat et nous ne pouvons pas imaginer le muttabal sans. Il ajoute une touche d’été à votre repas, vous rappelant les grillades et le beau temps.

L’hiver a été extrêmement froid et la neige a atteint une hauteur que nous n’avons jamais vu. Grâce au muttabal fumé, nous avons apporté un peu de bonne humeur estivale à notre table. Nous pensions avoir préparé une grande quantité mais le muttabal n’a pas duré longtemps et le bol est ressorti pratiquement propre.

Le muttabal fait partie des plats qui sont meilleurs le lendemain. Quand il est juste fait, toutes les saveurs ne se sont pas encore mariées. Juste avant de servir, nous aimons saupoudrer du sumac dessus. Le sumac est fait à partir de graines de sumac séchées moulues qui proviennent de l’arbuste sumac et il apporte une saveur acidulée agréable. Nous aimons aussi le contraste de sa couleur sur le muttabal. Les graines de grenade sont aussi une garniture qui apportent une jolie couleur au plat. Elles ressemblent à des rubis et nous sommes très contents du “collier” de rubis que nous avons mis tout autour du bol. Les graines de grenade ont un goût sucré acidulé qui éclate en bouche quand on les croque.

Vous pouvez servir le muttabal avec du riz, de la viande ou des légumes grillés, étalé sur du pain pita, ou avec des chips pita. Nous l’avons servi avec des cuisses de poulet rôties, du taboulé de chou fleur, de la salade d’oignons rouges, et des triangles de pain pita.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Dip d’Aubergine:

  • 2 grosses Aubergine
  • 3 cs (45 mL) d’Huile d’Olive
  • 1 ¼ cc (6.25 mL) de Sel
  • ½ cc (2.5 mL) de Poivre Noir moulu
  • 1 mesure (237 mL) de Yaourt
  • ½ mesure (118 mL) de Sauce Tahini
  • 1 cc (5 mL) de Pâte d’ail
  • 1 cc (5 mL) de Cumin (moulu)
  • ¼ mesure (59 mL) de Jus de Citron

Garniture:

  • Grains de Grenade
  • Sumac
  • Huile d’Olive

 

Instructions:

 

Étapes de préparation de la sauce d’aubergine

  1. Couper l’aubergine en deux dans le sens de la longueur, arroser avec 2 cuillères à café d’huile d’olive, saupoudrer un quart de cuillère à café de sel et un quart de cuillère à café de poivre noir moulu. Faire rôtir l’aubergine 45 minutes dans le four préchauffé à 450°F/ 232°C ou bien jusqu’à ce qu’elles soient cuites.
  2. Pour obtenir un goût fumé, faire griller l’aubergine sur le feu de la cuisinière pendant 15 minutes ou jusqu’à ce qu’elle soit cuite. Tourner toutes les une ou deux minutes. Pour un goût moins fumé, griller 6 minutes et continuer la cuisson dans le four jusqu’à ce qu’elle soit cuite.
  3. Emballer les aubergines grillées au feu dans de l’aluminium et laisser reposer 20 minutes. La peau sera plus facile à enlever.
  4. Retirer la chair de l’aubergine et jeter la peau.
  5. Hacher menu et mettre la chair d’aubergine à égoutter dans une passoire.
  6. Mettre la chair d’aubergine et les autres ingrédients dans un bol. Bien mélanger et réfrigérer en attendant de servir.

طريقة التحضير:

 

طريقة تحضير متبل الباذنجان

يقطع الباذنجان الى نصفين ويرش بملعقتين صغيرة زيت زيتون، 1/4 ملعقة صغيرة ملح و1/4 ملعقة صغيرة فلفل اسود. يشوى الباذنجان في فرن مسخن مسبقا على درجة حرارة 232 د.م. (450 ف) لمدة 45 دقيقة. -1
للحصول على الطعم المدخن يشوى الباذنجان على النار مباشرة لمدة 15 دقيقة او الى ان ينضج، للتقليل من الطعم المدخن يشوى لمدة 6 دقائق ويكمل الشوي في الفرن -2
يلف الباذنجان بورق الالمونيوم باحكام ويترك لمدة 20 دقيقة. هذه الخطوة ستسهل عملية تقشير الباذنجان. -3
ينزع اللب من القشرة -4
يهرس ويوضع الباذنجان المهروس في مصفاة للتخلص من الماء -5
يوضع الباذنجان المهروس وباقي المكونات في سلطانية ثم تخلط جيدا، يحفظ في الثلاجة حتى وقت التقديم -6

    This is amazing. what can I do if I don’t have tahini? can I leave it out? put more yoghurt or add blended cauliflower or peanut butter?

    Love this recipe! I’ve only used one large eggplant and it’s delicious. How many pounds of eggplant do you think you use for your measure of 2 large eggplants?
    Is Greek style yogurt what you’re using?
