Good chocolate cake reminds both of us of La Baguette in Jeddah. It was one of those places we liked to frequent during our stay in Jeddah, Saudi Arabia. It was without doubt the best Patisserie/Cafe in Jeddah. We remember the owner, a young Saudi gentleman, who was always present making sure that everything was top-notch. That hardworking entrepreneur didn’t fit into any stereotypes. Well, stereotypes are just stereotypes.
The delicious aroma of freshly baked pastries drew you in, but everything that was prepared there was of excellent quality: the French baguettes, croissants, crepes, cakes, etc… There was one dessert that stood head and shoulders above all the other great offerings. That was the chocolate ganache cake that was always fresh, always moist and always unbelievably delicious. Our chocolate cake was inspired by that amazing cake. It is a tribute to La Baguette that did its part to make life enjoyable to us in the early to mid 90s.
Ingredients:
(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements
- 2 Tbsp (30 mL) Unsalted butter (softened) – For the cake pan
- 1 Tbsp (15 mL) Unsweetened Cocoa powder – For the cake pan
- 1⅓ cups (267 g) Granulated white sugar
- 3 Large Eggs
- 2 Tbsp (30 mL) Unsalted butter (softened)
- ½ cup (118 mL) Canola oil – Or vegetable oil
- 2 tsp (10 mL) Vanilla extract
- 1 tsp (5 mL) Orange zest
- ¼ cup (59 mL) Coffee
- ½ cup (118 mL) Milk
- 1½ cups (210 g) All-purpose (plain) flour
- ½ cup (65 g) Cocoa powder (unsweetened)
- 1 tsp (5 mL) Baking powder
- ½ tsp (2.5 mL) Baking soda
- ¼ tsp (1.25 mL) Salt
Directions:
- Butter a 9½” (24 cm) cake pan then dust with cocoa powder
- Beat the eggs with the sugar to a thick and foamy mixture
- Beat in the soft butter then add the oil, vanilla, orange zest, coffee, and milk. Mix until well combined.
- Sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- Sift the dry ingredients on top of the wet ingredients, then mix well.
- Bake in a preheated oven for 35 minutes at 350°F/177°C.
- After the cake cools down completely, use a serrated knife to trace a line in the middle of the cake, then use a long knife to cut along the line.
- Use the top of the cake as a base and soak it with 3 tablespoons of simple syrup (half a cup of water and half a cup of sugar boiled together until dissolved). Spread buttercream (recipe to be posted) or fresh whipped cream.
- Add fruits if you so desire.
- Build the layers by repeating the steps above, making sure to soak each layer with syrup. We used TWO cakes for the layer cake, each cut into two. If you wish, use a serrated knife to level the sides of the cake.
- Spread buttercream on the top and sides of the cake.
- Pour chocolate ganache on top (recipe to be posted).

Diyaarinta:
- Birta doolsho cabirkeeda yahay 9½” (24 cm) buuro mari, kaddibna budo kakaaw korka uga rushaay
- Sokorta iyo ukunta garaac ilaa ay ka noqdaan xumbo culus.
- Buurada aad jilcisay ku dar si fiicanna u garaac. Kaddib, ku dar saliidda, faniilada, bishirka (qolof la xoqay) oranjada, kafeega, iyo caanaha. Si fiican u qas.
- Isku shaqshaq burka, budada kakaawga, beekin baawdarka, beekin soodaha, iyo cusbada.
- Mukawinaadka qalalan waxaa ku kor shaqshaqdaa mukawinaadka qoyan, kaddibna si fiican isku qas.
- Ku dub foorno lasii kululeeyay 350°F/177°C muddo 35 daqiiqo.
- Markuu doolshahasi fiican u qaboobo, waxaa dhexda uga sartaa middi miinshaar ah, kaddibna middi dheer ku jar meesha aad calaameysay.
- Geddi gabalka sare ee doolshaha waxaana ka dhigataa salka toortaha. Waxaa ku qoydaa 3 qaaddo weyn sirab ah (koob biyo iyo koob sokor oo la karkariyay ilaa ay sokorta si fiican u dhalaasho). Markaas kaddib, waxaa doolshaha marisaa kareemo buuro iyo shukulaato (waan soo gelin doonnaa hadduu Eebbe idmo) or mari kareemo cad.
- Waxaa ku dari kartaa furuut haddii aad jeclaatid.
- Dabaqyada kale ee doolshaha waxaa u sameysaa sida kor ku qoran. Toortahaan waxaan ka sameynay laba doolsho oo midkiiba laba gabal alaga dhigay. Haddaad doontid doolshaha dhinacyadiisa ku sin middi miinshaar ah.
- Doolshaha waxaa kor iyo dhinacyada ka marisaa kareemo buuro iyo shukulaato.
- Kor uga shub shukulaato ganaash (waan soo gelin doonnaa hadduu Eebbe idmo)
Un bon gâteau au chocolat nous fait toujours penser à La Baguette à Jeddah (en Arabie Saoudite), un des endroits où nous aimions aller quand nous y habitions. C’était la meilleure Pâtisserie-Café de la ville. Le propriétaire était un jeune gentleman Saoudien, toujours présent pour s’assurer que tout soit parfait. Cet entrepreneur qui travaillait dur ne correspondait à aucun cliché mais les clichés ne sont heureusement que des clichés.
L’odeur appétissante des pâtisseries fraîchement cuites attirait les clients dans le magasin, mais à l’intérieur tout était d’excellente qualité: les baguettes, les croissants, les crêpes, les gâteaux etc…Il y avait un dessert qui se démarquait nettement des autres: le gâteau à la ganache au chocolat qui était toujours frais, toujours moelleux, et toujours incroyablement délicieux. Notre gâteau au chocolat s’inspire de cette pâtisserie remarquable. Ceci est notre hommage à La Baguette qui a égayé notre vie pendant une partie des années 90.

Ingrédients:
(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras
- 2 cs (30 mL) de Beurre Doux (ramolli) – pour le moule à gâteau
- 1 cs (15 mL) de Cacao en Poudre (sans sucre) – pour le moule à gâteau
- 1⅓ mesure (267 g) de Sucre en Poudre
- 3 Gros Oeufs
- 2 cs (30 mL) de Beurre Doux (ramolli)
- ½ mesure (118 mL) d’Huile de Colza – ou d’huile végétale
- 2 cc (10 mL) d’Extrait de Vanille
- 1 cc (5 mL) de Zeste d’Orange
- ¼ mesure (59 mL) de Café
- ½ mesure (118 mL) de Lait
- 1½ mesure (210 g) de Farine Blanche
- ½ mesure (65 g) de Cacao en Poudre (sans sucre)
- 1 cc (5 mL) de Levure Chimique
- ½ cc (2.5 mL) de Bicarbonate de Soude
- ¼ cc (1.25 mL) de Sel
Instructions:
- Beurrer un 24 cm (9½ pouces) moule à gâteau puis le saupoudrer de cacao en poudre
- Blanchir les oeufs et le sucre jusqu’à ce qu’ils soient épais et mousseux
- Ajouter et battre le beurre ramolli puis l’huile, la vanille, le zest d’orange, le café, et le lait. Mélanger jusqu’à ce que la pâte soit homogène.
- Tamiser ensemble la farine, le cacao en poudre, la levure chimique, le bicarbonate, et le sel.
- Tamiser les ingrédients secs sur les ingrédients liquides, puis bien mélanger.
- Cuire 35 minutes dans un four préchauffé à 350°F/177°C.
- Une fois le gâteau entièrement refroidi, tracer une ligne au milieu de la tranche du gâteau avec un couteau à dents, puis découper le long de la marque avec un couteau long.
- Utiliser le dessus du gâteau comme base et l’imbiber avec un sirop léger (une demie mesure d’eau et une demie mesure de sucre bouillis ensemble). Étaler une couche de crème au beurre (recette à venir) ou de crème chantilly fraîche.
- Ajouter des fruits si vous le désirez.
- Construire des couches en répétant les étapes ci-dessus, en faisant attention à bien imbiber chaque couche de sirop. Nous avons utilisé DEUX gâteaux pour ce gâteau à étages, chacun coupé en deux. Si vous le souhaitez, vous pouvez égaliser les bords avec un couteau à dents.
- Étaler de la crème au beurre sur le dessus et la tranche du gâteau.
- Verser une ganache au chocolat sur le dessus (recette à venir).

طريقة التحضير:
يدهن قالب كيك 24 سم بالزبدة ويرش بمسحوق الكاكاو | -1 |
يخفق البيض مع السكر حتى يصبح الخليط كثيفا وفاتح اللون | -2 |
تضاف الزبدة الطرية ويخفق الخليط جيدا، ثم يضاف الزيت، الفانيلا، بشر البرتقال، الكوفي، والحليب. يخلط جيدا | -3 |
ينخل الطحين (الدقيق) مع مسحوق الكاكاو والبيكنج باودر والبيكنج صودا والملح | -4 |
تنخل المكونات الجافة فوق المكونات السائلة ثم تخلط جيدا | -5 |
يوضع خليط الكيك فى القالب المحضر ثم يخبز فى فرن مسخن سابقا على درجة حرارة 177 د.م. (350 ف) لمدة 35 دقيقة | -6 |
يعلم الكيك من الوسط بسكين منشار ثم يقطع بواسطة سكينة طويلة | -1 |
تستخدم الشريحة العليا كقاعدة للتورتة. تسقى كل شريحة من الكيك بـ 3 ملعقة كبيرة شيرة (يغلى كوب ماء مع كوب سكر الى ان يذوب السكر). تفرد كريمة الزبدة بالشوكولاتة (سنقوم قريبا بنشر الوصفة ان شاء الله) على الكيك. | -2 |

Slm alkm, wrwb. Thank you for this post, i did cook yesterday this cakekforfmy son birthday with one variation. I beat the eggs whites separately made it fomy, added sugar. As for the dry ingredients i mixed all and then added eggs yellows, oil, milk. Then i added the first mixture and mixed with spoon. It becomes quite inflated even before puting in oven, so we enjoyed decorating it afterwards. As for fruits the best would be to put after 2 layer variety of fruits, kiwi, strawberry, orange,pinapple, so all vitamin c fruits. I am going to stick anyway with your recepie for now. Thanks ahain
