Meso (Meeso) Meso مَيْسُوا

Brava, Somalia, is known for its culinary tradition which includes its renowned sweets. One example is Pera which is known, in other parts of Somalia, as Caano Baraawe (Bravanese milk). We hope to post a recipe for it in the near future. Meso is not as well known as Pera, but it is one of the special sweets made in Brava. Part of the reason it was not prepared as often as Pera is because it contains many eggs, and eggs were somewhat of a luxury.

The coastal towns of Somalia were exposed to many cultural influences and Brava was no exception. Through trade and migration from lands as far as Indonesia, those cultural influences could be seen in the foods prepared in these towns. In turn, those influences found their way to the hinterland. The fact that many of the sweets became street food, helped spread them far and wide. Meso, however, was not street food but was a special confectionary prepared for valued visitors.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 
Yields about 30 to 40 meso

  • ½ Cup (85 mL) Unsalted butter
  • 6 Large Egg(s)
  • 2¼ Cups (450 g) Granulated white sugar
  • 3 Tbsp (45 mL) All-purpose (plain) flour
  • 1 Tbsp (15 mL) Cardamom (ground)

 

Directions:

Preparing the meso

  1. In a bowl beat the eggs with the sugar.
  2. In a 3-litre sauce pan set on medium-high heat, melt the butter and brown it for 2 to 3 minutes.
  3. Add the egg mixture and cook for 9 minutes, stirring very frequently.
  4. Add the flour and mix vigorously.
  5. Add the ground cardamom and mix well.
  6. Cook for one more minute.
  7. Transfer to an oiled surface and spread quickly with a spatula while still hot.
  8. Cut before it hardens.
  9. Cut into the shape you desire.

(QW waa qaaddo weyn – midda cuntada lagu cuno; qy waa qaaddo yar)
(1 koob = 237 mL = 2.4 dl; 1 QW = 15 mL; 1 qy = 5 mL)

 
Waxaad ka-sameyn kartaa 30 ilaa 40 meeso

  • ½ koob (85 mL) Buuro aan cusbo lahayn
  • 6 Ukun waaweyn
  • 2¼ koob (450 g) Sokor
  • 3 QW (45 mL) Bur cad
  • 1 QW (15 mL) Hayl (shiidan)

 

Diyaarinta:

Diyaarinta meesada

  1. Ukunta iyo sokorta isku-garaac.
  2. Buurada dab dhexdhexaad-sare ku-dhalaali ilaa ay ka-gaduudato (2 ilaa 3 daqiiqo).
  3. Ukunta iyo sokorta aad isku-qastay ku-shub. Muddo 9 daqiiqo kari.
  4. Burka ku-dar. Xoog u-walaaq.
  5. Heylka ku-dar, si-fiicanna u-walaaq.
  6. Hal daqiiqo kale sii kari.
  7. Ku-geddi weel saliid la-mariyay. Dhaqso fidi intay weli kulushahay.
  8. Jar intaysan adkaanin.
  9. U-jar qaabka aad jeceshahay.

 

Meeso iyo qaxwo

Brava, Somalie, est renommée pour sa tradition culinaire dont ses célèbres confiseries. Comme Pera qui est connue dans d’autres régions de Somalie sous le nom de Caano Baraawe (Lait Bravanais). Nous espérons publier la recette dans un futur proche. Meso est aussi connu sous le nom de Pera, mais il fait partie des confiseries spéciales faites à Brava. Une des raisons pour laquelle il n’est pas préparé plus souvent que Pera est qu’il contient beaucoup d’oeufs, et les oeufs sont considérés une denrée de luxe.

Les villes côtières de Somalie sont exposées à de nombreuses influences culturelles et Brava en fait partie. Par le commerce et les migrations de pays aussi lointains que l’Indonésie, ces influences culturelles se reflètent dans la cuisine dans ces villes. Ensuite ces influences ont trouvé leur chemin jusque dans l’arrière-pays. Le fait que beaucoup de ces confiseries soient devenues des snacks vendus dans la rue a aidé à les diffuser largement. Meso, cependant n’est pas un snack de rue mais une confiserie spéciale préparée pour les visiteurs estimés.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 
Pour environ 30 à 40 meso

  • ½ mesure (85 mL) de Beurre doux
  • 6 Gros Oeufs
  • 2¼ mesure (450 g) de Sucre en Poudre
  • 3 cs (45 mL) Farine Blanche
  • 1 cs (15 mL) Cardamome Moulue

 

Instructions:

Préparation du Meso

  1. Battre les oeufs et le sucre dans un bol.
  2. Faire fondre le beurre dans une casserole de 3 litres chauffée à feu moyen fort, laisser colorer pendant 2 à 3 minutes.
  3. Ajouter le mélange d’oeufs et cuire pendant 9 minutes, mélanger très fréquemment.
  4. Ajouter la farine et mélanger vigoureusement.
  5. Ajouter la cardamome moulue et bien mélanger.
  6. Cuire une minute de plus.
  7. Transférer sur une surface huilée et étaler rapidement avec une spatule tant qu’il est chaud.
  8. Découper avant qu’il durcisse.
  9. Découper la forme que vous désirez.

    Waan idin salaamay mark hore. Don’t you think it will be easier if you add the flour and the cardamon before it thickens to get them evenly spread throughout? Or does that cause problems?

      Adding the flour at the end helps it to set. The cardamom is added at the end to maximize the flavour. Thank you for the question.

    Hi, I am american but love your website and have tried many things from this. My question is, what is the texture of meeso supposed to be? I tried this and it came out rather like a very thick jelly. Should I have cooked it longer? Thanks! :)

    salaam sister, I absolutely love your page and recipes mashaAllaah you re very talented.. I wanted to ask you for the meeso i remember my grandma used to use ghee instead of the butter and it had a stronger flavour, so how much ghee would i need to use to substitute for the butter?

    Assalamou aleykoum ! First of all you have a great site everything is clear.
    I would like to try the meeso bars but I was wondering if I use liquid egg white only would I have the same result. Thank you .

      Thank you very much for your nice comment. We never tried it with liquid egg whites. If you use egg whites only you will end up with something totally different. Thanks for the question.
