We first had cubed chicken at Hamdi Restaurant. It is a Somali restaurant in Toronto that is quite popular. Whenever we go to Somali restaurants, we never order individual dishes. We choose the large platters of rice served with different types of meat dishes: roasted goat meat, goat shanks, beef cubes, chicken cubes, thin-sliced beef or chicken steaks, kingfish steaks, etc.

We usually order two types of meat along with the rice and we share the food, eating from the platter. The sharing part makes the food taste even better. Out of courtesy, they bring you extra plates, spoons, forks, and knives but only a few of the patrons use them.

This chicken dish is great for students, and those who are single. It is quick and easy and it is very budget-friendly. You can buy boneless and skinless chicken or you could debone the chicken and save money. Deboning the chicken will also give you bones that you could use for preparing stock. Put the bones in the freezer until you get the time to prepare the stock.

For this dish, we prefer dark meat but you could also use chicken breast. Just make sure it does not become dry.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 
Serves 6

  • 1½ lb (680 g) Chicken legs (cubed) – Skinless & boneless
  • ¼ cup (59 mL) Canola oil
  • 1 Onion (sliced)
  • 1 Potato (cut into sticks)
  • 1 Carrot (cut into sticks)
  • 1 tsp (5 mL) Xawaash
  • ¼ tsp (1.25 mL) Turmeric powder
  • 1 tsp (5 mL) Paprika
  • 1 tsp (5 mL) Salt
  • ¼ cup (59 mL) Water
  • 1 cup (100 g) Sweet peppers (sliced)
  • ¼ tsp (1.25 mL) Black pepper (ground)
  • 1 tsp (5 mL) Green chilli sauce (to taste)

Directions:

Chicken legs


 

Skining & deboning

  1. Remove the skin
  2. Trim the fat
  3. Debone

 

Cut the vegetables


 

Steps for preparing the cubed chicken

  1. In a pan set on medium heat, add the onions to the oil. Add the potatoes and carrots. Stir well then cover & cook for 8 to 10 minutes.
  2. Add the Xawaash seasoning mix, turmeric powder, paprika, and salt. Stir well.
  3. Add the chicken and stir well. Cook uncovered for 3 minutes.
  4. Add the water, then cover and cook for 5 minutes
  5. Add the sliced peppers and cook for 2 to 3 minutes.
  6. Add the ground black pepper and the chilli sauce. Serve.

Waxaan dalbannaa saxan weyn oo bariis ah oo wata noocyo kala duwan oo hilib ah: hilib ari la foorneeyay, duubi, suqaar hilib, suqaar digaag, bisteeki hilib ama digaag, kalluun…

Badanaa waxaan dalbannaa laba nooc hilib ah, waana wadaagnaa annagoo ka cunayna isla saxankii. Wadaagidda waxay sii macaysaa cuntada. Waa la keenaa saxammo, qaaddooyin, fargeetooyin, iyo middiyo, laakiin macaamiisha badidood ma isticmaalaan.

Suqaarka digaagga waa cunto ku fiican ardayda iyo dadka keligooda nool. Waa cunto sameyskeeda aad u fudud yahay oo degdeg loo sameyn karo. Waxaa intaas u sii dheer inay tahay cunto kharashkeeda yar yahay. Waa soo gadan kartaan digaag maqaarka laga fiiqay, lafahana laga saaray, ama idinka ayaa hawshaas sameysan kartaan oo sidaas lacag idinkugu dhaqaaloobaysaa.

Fiidiyaha waxaan idinku tusnay sida lafaha looga saaro lugta iyo cajarka digaagga. Waxaan ognahay in meelaha qaarkood aan laga helin digaagga la diyaariyay, qaas ahaan waxaan fiidiyaha qaybtaas ugu talagalnay dadka jooga dhulka hooyo.

Diyaarinta suqaarka digaagga

  1. Bir dab dhexdhexaad ah saaran, ku shub saliidda kaddibna basasha ku rid. Ku dar bataatada (baradhada) iyo karootada. Si fiican u walaaq, kaddibna dabool oo 8 ilaa 10 daqiiqo kari.
  2. Ku dar Xawaashka, huruudda, babriikada, iyo cusbada. Si fiican u walaaq.
  3. Digaagga jarjaran ku rid, si fiicanna u walaaq. Dabool la’aan kari muddo 2 ilaa 3 daqiiqo.
  4. Biyaha ku dar, kaddibna dabool oo kari muddo 5 daqiiqo.
  5. Barbarooniga jarjaran ku dar, kaddibna 2 ilaa 3 daqiiqo kari.
  6. Filfisha madoow iyo basbaas cagaarka shiidan ku dar.

Cuisses de Poulet

Nous avons mangé du poulet en dés pour la première fois au restaurant Hamdi. C’est un restaurant Somali à Toronto qui est très populaire. Quand nous allons dans des restaurants Somali, nous ne commandons jamais de plats individuels. Nous choisissons les grands plats de riz servis avec un assortiment de plats de viandes: viande de chèvre rôtie, jarrets de chèvre, cubes de boeuf, cubes de poulet, émincé de boeuf ou steaks de poulet, steaks de poisson, etc.

D’habitude nous commandons deux sortes de viande avec le riz et nous partageons la nourriture, en la mangeant dans le plat. Le fait de partager rend la nourriture meilleure. Par politesse, on vous apporte des assiettes, des cuillères, des fourchettes, et des couteaux mais très peu de clients s’en servent.

Cette recette de poulet convient très bien pour les étudiants, et ceux qui sont seuls. Elle est rapide, facile et très économique. Vous pouvez acheter du poulet déjà désossé et préparé ou vous pouvez désosser le poulet vous-même et économiser de l’argent. Désosser le poulet vous-même vous permettra de garder les os que vous pourrez utiliser pour préparer du bouillon. Mettez les os au congélateur en attendant d’avoir le temps de préparer le bouillon.

Pour réaliser ce plat, nous préférons la viande brune du poulet mais vous pouvez tout aussi utiliser des escalopes de poulet. Il faut juste faire attention à ce que la viande ne sèche pas dans ce cas.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 
Pour 6 parts

  • 1½ livre (680g) de Cuisses de Poulet (en dés) – pelées et désossées
  • ¼ de mesure (59 mL) d’Huile de Colza
  • 1 Oignon (émincé)
  • 1 Pomme de Terre (coupée en bâtons)
  • 1 Carotte (coupée en bâtons)
  • 1 cc (5 mL) de Xawaash
  • ¼ cc (1.25 mL) de Poudre de Curcuma
  • 1 cc (5 mL) de Paprika
  • 1 cc (5 mL) de Sel
  • ¼ de mesure (59 mL) d’Eau
  • 1 mesure (100 g) de Poivron Doux (émincé)
  • ¼ cc (1.25 mL) de Poivre Noir (moulu)
  • 1 cc (5 mL) de Sauce Chilli Verte (à volonté)

Instructions:

Cuisses de Poulet


 

Peler & Désosser

  1. Retirer la peau
  2. Enlever le gras
  3. Désosser

 

Découper les légumes


 

Étapes de préparation du poulet en dés

  1. Faire chauffer les oignons dans une poêle chauffée à feu moyen. Ajouter les pommes de terre et les carottes. Bien remuer puis couvrir et cuire 8 à 10 minutes.
  2. Ajouter l’assaisonnement Xawaash, la poudre de curcuma, le paprika, et le sel. Bien mélanger.
  3. Ajouter le poulet et bien mélanger. Cuire sans couvrir pendant 3 minutes.
  4. Ajouter l’eau puis couvrir et cuire 5 minutes.
  5. Ajouter les poivrons émincés et cuire 2 à 3 minutes.
  6. Ajouter le poivre noir moulu et la sauce chilli. Servir.

ازالة الجلد والعظام

يزال الجلد -1
تزال الشحوم -2
تزال العظام -3

 

تقطع الخضروات


 

طريقة تحضير مكعبات الدجاج

يحمى الزيت فى مقلاه على نار متوسطة، يضاف البصل، البطاطس والجزر. يقلب جيدا ثم يغطى ويطهى لمدة 8 الى 10 دقائق. -1
يضاف الحوائج Xawaash، مسحوق الكركم (الهرد)،البابريكا والملح،يقلب جيدا -2
يضاف الدجاج يقلب ويطهى لمدة 3 دقائق بدون ان يغطى -3
يضاف الماء، يغطى ويطهى لمدة 5 دقائق -4
يضاف شرائح الفلفل الرومي، يطهى لمدة 2 الى 3 دقائق -5
يضاف مسحوق الفلفل الاسمر والبسباس، يقدم بالهناء والشفاء -6
