Eye of Round Roast (Hilib Aroosto) Rôti de Rond de Gîte روستو العجل

The eye of round roast is a very lean cut and can be quite tough if not cooked properly. There are different ways of cooking it but our favourite method is to cook it slowly in a flavourful broth. The meat releases its juices, making the broth even more flavourful.

Even though the cooked meat is dry, this is not a problem. Reduce the roast beef juices and add to the thinly sliced meat for a tender, juicy and delectable roast. For an even more delicious roast, place the sliced meat in pan and cover with some of the roast juices. Cook until all or most of the juices are absorbed.

Perhaps the reason we favour this method has to do with the fact that it was how the roast was prepared at home in Somalia. There, the meat was always studded with slivered garlic cloves but we found that adding a good amount of garlic to the broth, achieves the same result.

 

Le rôti de rond de gîte est un morceau très maigre et il peut être très coriace s’il n’est pas cuit de la bonne manière. Il existe plusieurs façons de le cuire mais notre méthode préférée est la cuisson longue dans un bouillon parfumé. La viande relâche son jus, ce qui rend le bouillon encore meilleur.

Même si une fois cuite, la viande est sèche, ce n’est pas un problème. Faitesune réduction avec le jus du rôti et ajoutez la viande coupée en fines tranches pour en faire un rôti tendre, juteux et exquis. Pour un rôti encore plus délicieux, mettez les tranches de rôti dans une poêle et couvrez-les avec le jus du rôti. Cuire jusqu’à ce que la plupart ou tout le jus soit absorbé.

Peut être que la raison pour laquelle nous préférons cette méthode est que c’est comme ça qu’on préparait le rôti à la maison en Somalie. Là-bas, la viande était toujours piquée de gousses d’ail entières mais nous avons découvert qu’en ajoutant une bonne quantité d’ail  au bouillon produisait le même résultat.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

Serves 8

3½ lb (1½ kg) Veal (or beef) Eye of Round
¼ tsp (1.25 mL) Salt
¼ tsp (1.25 mL) Ground black pepper
2 Tbsp (30 mL) Canola or vegetable oil
2 Medium onions (chopped)
7 Garlic cloves (smashed)
4 litres Water (hot)
1 Rosemary sprig
2 Bay leaves
4 Knorr beef bouillon cubes

Ku-filan 8 qofood

3½ lb (1½ kg) Hilib lo’aad oo aroostada laga sameeyo (Eye of Round)
¼ qy (1.25 mL) Cusbo
¼ qy (1.25 mL) Filfil madoow shiidan
2 QW (30 mL) Saliid caddeey
2 Basal (jarjaran)
7 Tuun (toon)
4 litir Biyo kulul
1 Laan roosmeri
2 Caleenqaar
4 Mukacab Knorr nooca hilibka lo’aad (beef)

 

Ingrédients:

(cs est une cuillère à soupe; cc est une cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL) mesures à ras

Pour 8 parts

3½ livres (1½ kg) de Rond de Gîte de Veau ou de Boeuf
¼ cc (1.25 mL) de Sel
¼ cc (1.25 mL) de Poivre Noir Moulu
2 cs (30 mL) d’Huile de Colza ou Végétale
2 Oigons Moyens (hachés)
7 Gousses d’Ail (écrasées)
4  Litres d’Eau (chaude)
1 Brin de Romarin
2 Feuilles de Laurier
4 Bouillon Cubes au boeuf Knorr

Steps for cooking the roast - Étapes de cuisson du rôti

1. Season the meat with salt and pepper. 2. In a large pot set on medium heat, add the oil and brown the meat on all sides. 3. Remove the meat from the pot. Add the onions and garlic, and saute for 1 minute. 4. Place the meat back in the pot and add the hot water. 5. Add the rosemary sprig and the bay leaves. 6. Add the Knorr beef bouillon cubes. 7. Cover and cook on medium heat for 2½ hours. 8. Remove the roast beef and let it cool down. Refrigerate for two hours. This will make it easy to cut the meat into very thin slices. 9. Reduce the roast juices if you wish, but watch the saltiness.

1. Hilibka cusbo iyo filfil dhinac walba ka-mari. 2. Digsi weyn oo dab dhexdhexaad ah saaran, saliidda ku-shub, hilibkana ku-rid. Dhinac walba ka-gaduudi. 3. Hilibka ka-bixi digsiga. Basasha iyo tuunta ku-rid. Muddo hal daqiiqo shiil. 4. Hilibka ku-celi, biyahana ku-shub. 5. Ku-dar roosmeriga iyo caleenqaarka. 6. Ku-dar mukacabaadka Knorr. 7. Dabool oo ha-karo muddo 2½. 8Hilibka ka-bixi digsiga. Markuu qaboob, geli qaboojiyaha muddo laba saacadood. Wuxuu kuu fududaynaayaa inaad hilibka qafiif u-jartid. 9. Haddaad jeceshahay, maraqa gursii, laakiin cusbadiisa dhedhemi. Yuusan aad kaaga dhanaanaan.

1. Saler et poivrer la viande. 2. Dans un grand faitout chauffé à feu moyen, verser l’huile et faire colorer la viande sur tous les côtés. 3. Retirer la viande du faitout. Ajouter les oignons et l’ail, et faire sauter pendant 1 minute. 4. Remettre la viande dans le faitout et ajouter l’eau chaude. 5. Ajouter la branche de romarin et les feuilles de laurier. 6. Ajouter les cubes Knorr de bouillon de boeuf. 7. Couvrir et cuire à feu moyen pendant 2½ heures. 8. Sortir le rôti de boeuf et le laisser refroidir. Réfrigérer pendant 2 heures. Cela le rendra plus facile à couper en tranches très fines. 9. Faire réduire le jus si vous le souhaitez, mais faites attention à la concentration de sel.

Sauteing the roast in its juices (Hilibka oo maraqiisa lagu sii kariyay) Faire revenir le rôti dans son jus

1. Add 1 Tbsp olive oil to a pan set on medium heat. 2. Pour in some of the roast beef juices. 3. Add the sliced beef. 4. Cook until the juices reduce. 5. Brown the meat on both sides. 6. Assemble the sandwich as follows: on a crusty bread, pour some of the roast beef juices, add mayonaise and mustard, add the roast beef, add sauteed onions and mushroom, then top with white cheddar cheese. Place the sandwich under the broiler (oven or toaster) until the cheese melts. Dig in.

1. Bir dab dhexdhexaad saaran, ku-shub 1 QW saliidda oliifada. 2. Hilibka mariqiisa qaar ku-shub. 3. Hilibka ku-rid. 4. Kari ilaa uu ka-gursado. 5. Labada dhinac ka-gaduudi. 6. Saandwiish-ka sidaan u-diyaari: Rooti ku-shub wax yar maraqa hilibka, mayoneeys iyo mastard mari, hilibka saar, boqoshaar (mashruum) iyo basal laysku gaduudiyey saar, farmaajo sheedar cad saar. Waxaad gelisaa foorno ama toostar ilaa farmaajada ay ka-dhalaasho.

1. Mettre une cs d’huile d’olive dans une poêle chauffée à feu moyen. 2. Verser une partie du jus de cuisson du rôti. 3. Ajouter le boeuf coupé en tranches. 4. Cuire jusqu’à ce que le jus ait réduit. 5. Faire colorer la viande des deux côtés. 6. Assembler le sandwich comme suit: Sur un morceau de pain croustillant, verser le jus de rôti, ajouter de la mayonnaise et de la moutarde, ajouter le rôti de boeuf, ajouter les oignons et des champignons sautés, et terminer par une couche de cheddar blanc. Passer le sandwich ouvert au grill (four ou mini grill) jusqu’à ce que le fromage fonde. Attaquez.

Soak crusty bread with au jus, add mayonnaise and honey mustard, add the juicy, browned meat, add sauteed onions and mushrooms, and top with white cheddar cheese.

Rooti xoogaa adag (maraqa iska celin kara) ku-shub xoogaa maraqa hilibka. Mayoneeys iyo mastard mari. Saar hilibka maraqa lagu dhex gaduudiyay. Basal iyo boqoshaar (mashruum) laysku gaduudiyay dul saar. Farmaajo dhusha ka-saar.

Verser du jus sur un morceau de pain croustillant, ajouter de la mayonnaise et de la moutarde au miel, ajouter la viande revenue dans son jus, ajouter les oignons et les champignons sautés, et finir avec du cheddar blanc.

      All the halal butchers in our area sell eye of round roast and it is very affordable. Maybe it is time you moved north of the border. :-) We suggest that you ask your halal butcher to get you this cut. We hope they will accomodate your request.
