Beef Cubes with Vegetables (Suqaar) Cubes de Boeuf aux Légumes

The Somali name for this dish is Hilib Suqaar Ah or just Suqaar for short. The word suqaar comes from the Arabic word (صغار) which means “small ones.” The small ones referred to here are of course the very small cubes of beef. There is also chicken suqaar. If you order suqaar in a Somali restaurant, you will be asked if you want beef or chicken suqaar

There is no standard as to how small the cubes are cut and the sizes can vary anywhere between 1/4 inch to 1/2 inch. Somali butchers, or any butcher shops that cater to Somalis, are familiar with suqaar and you can order ready-cut beef cubes from them. However, if you are far away from civilization :) , you can cut your own. The meat is first cut into 1/2 inch thick slices or the thickness you prefer. The slices are cut into long strips which are then cut into cubes.

When it comes to choosing the meat for the suqaar, we prefer beef over veal, since beef is more flavourful. Veal is more tender but when the cubes are very small, beef suqaar are also tender.

You can serve suqaar with rice, grits (soor), anjero, muufo baraawe (maanda), or any other bread that you prefer.

 

Le nom Somali de ce plat est Hilib Suqaar Ah ou juste Suqaar en raccourci. Le mot suqaar vient du mot arabe (صغار) qui veut dire “les petits”. Les petits pour désigner ici les touts petits cubes de boeuf bien sûr. Il existe aussi le suqaar de poulet. Si vous commandez du suqaar dans un restaurant Somali, on vous demandera alors si vous voulez du suqaar au boeuf ou au poulet.

Il n’y a pas de standard de taille pour couper les cubes et ils varient entre ¼ et ½ pouce (0.6 à 1.3 cm). Les bouchers Somali, ou toute boucherie qui a une clientèle Somali, est habitué au suqaar et vous pouvez commander du boeuf déjà découpé par eux. Sinon si vous habitez loin de tout :) , vous pouvez les couper vous même. La viande est d’abord coupée en tranches épaisses de ½ pouce (1.5cm) ou à l’épaisseur désirée. Les tranches sont ensuite découpées en longues bandes qui sont ensuite coupées en cubes.

Pour le choix de la viande à suqaar, nous préférons le boeuf au veau, car le boeuf a plus de goût. Le veau est plus tendre mais quand les cubes sont très petits, le boeuf devient aussi tendre.

Vous pouvez servir suqaar avec du riz, de la bouillie de maïs, de l’anjero, du muufo baraawe, ou tout autre type de pain que vous préférez.

Ingredients:

Serves 8-10 persons

2 lb.                                           Beef (cut into small cubes)
1                                               Onion (sliced)
4                                               Garlic cloves (minced)
1 Tbsp                                        Vegetable seasoning
1 tsp                                          Xawaash
2                                               Potatoes (peeled & diced)
2                                               Carrots (peeled & diced)
1/4 cup (4 Tbsp)                          Vegetable (or canola) oil
2 cups                                        Water (boiling)

 

Ingrédients:

Pour 8-10 personnes

2 livres de Boeuf (coupé en petits cubes)
1 Oignon (émincé)
4 Gousses d’Ail (hachées)
1 cs d’Assaisonnement Légumes
1 cc de Xawaash
2 Pommes de Terre (pelées et coupées en dés)
2 Carottes (pelées et coupées en dés)
¼ de mesure (4 cs) d’Huile Végétale (ou Huile de Colza)
2 mesures d’Eau (bouillante)

 

Directions:

Add the oil to a heated pot (on medium heat), then add the sliced onions. When the onions begin to soften, add the minced garlic. Then add the vegetable seasoning and xawaash. After a minute or so, add the cubed beef and stir well. Add two cups of boiling water then cover and cook for 30 minutes.

After the 30 minutes are over, add the diced potatoes and carrots, then cover and cook for an additional 15 minutes.

 

Instructions:

Verser l’huile dans un faitout chauffé à feu moyen, puis ajouter les tranches d’oignon. Quand les oignons commencent à fondre, ajouter l’ail émincé. Puis ajouter l’assaisonnement légumes et le xawaash. Après une minute environ, ajouter les cubes de boeuf et bien mélanger. Ajouter les deux mesures d’eau bouillante puis couvrir et cuire pendant 30 minutes.
Une fois les 30 minutes passées, ajouter les dés de pomme de terre et de carotte, puis couvrir et cuire 15 minutes supplémentaires.

You can also use other vegetables - Vous pouvez aussi utiliser d’autres légumes

Dans le sens des aiguilles d’une montre; dés de carotte, dés de pomme de terre recouverts d’eau pour éviter qu’ils noircissent; ail pelé pour être écrasé.
