This is not everyday Somali food. Not even a once-in-a-month thing, unless you frequent Somali restaurants. This chutney is consumed on special occasions which explains why some Somalis know it as Basbaas Alla-bari (feast hot sauce). Alla-bari is a large prayer gathering followed by a feast. That name also gives a clue that Somalis usually make their chutney spicy hot.

In this recipe, we decided to break with tradition and did not add any chilli to the chutney. We know many who like the phenomenal taste of the chutney but cannot handle the heat from hot peppers. Chilli lovers can add as much hot sauce as they wish.

There are many variations of this chutney, each cook using different ingredients and preparing it differently. It is known as Shidni, Shigni, or Basbaas Alla-bari. In Brava, Somalia, it is known as Achaari and is usually prepared from either dates and tamarind or mangoes and tamarind. Our version has dates, mangoes, and tamarind in addition to the tomatoes, onion, garlic, green pepper, and cilantro. It has salt, sugar, and vinegar added as well as the ubiquitous Xawaash seasoning. The result is a sweet, sour, salty, and tangy tasting chutney that is simply irresistible.

The oil in the recipe seem like it is a lot but it is required to help caramelize the chutney. It also acts a preserving agent, making the chutney safe to keep in the fridge for several months.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 
Serves 24

  • 1 Onion – Small
  • 6 Garlic cloves
  • ½ Green pepper
  • ½ (¼ + ¼) cup (118 mL) Water
  • 4 Tomatoes
  • ⅔ (100 g) Dates (pitted)
  • ½ lb (225 g) Mango flesh
  • ½ cup (55 g) Fresh cilantro – UK: coriander
  • 1 cup (237 mL) Canola oil
  • 2 Tbsp (30 mL) Xawaash
  • 1 cup (100 g) Tomato paste
  • 1 Tbsp (15 mL) Salt
  • 2 Tbsp (55 mL) Tamarind (seeded)
  • 2 Tbsp (30 mL) Sugar
  • ¼ cup(s) (59 mL) White vinegar

Directions:

Steps for preparing the chutney

  1. In a blender place the onions, garlic, green pepper and ¼ cup water. Blend until smooth.
  2. Add the tomatoes and blend until pureed.
  3. Add the dates, mango flesh and cilantro. Blend until smooth.
  4. In a 6 litre pot set on low heat, add the oil and the Xawaash seasoning mix.
  5. Add the pureed mixture immediately and mix well. Add tomato paste and salt, and mix well.
  6. Soften the tamarind paste in a ¼ cup hot water. Mix well. Add to the mixture. You could also use tamarid sauce.
  7. Cover and cook on low heat for two hours. Stir every half hour. Wear mittens when stirring.
  8. After the 2 hours have elapsed, add the sugar.
  9. Add the vinegar and stir well. Cover and cook for 5 minutes on low heat.

Preparing the tamarind

  1. Measure 2 packed tablespoons (100 g) of the tamarind paste.
  2. Add to a ¼ cup hot water.
  3. Mix well.

Shidniga kama mid ahan cuntooyinka mar walba la cuno. Waxaa badi la cunaa munaasabaadka qaarkood. Waxaa jira dad shidniga u yaqaana Basbaas Alla-bari, iyadoo munaasabaddaas ay tahay waqtiga keliya ay shidniga arkaan. Waxaa jira dhoor si oo loo sameeyo shidniga. Midka aan Soomaaliya ku naqiinnay waxaa laga sameyn jiray timir iyo raqay ama timir iyo cambe. Soo’daan waxaan isticmaalnay timir, raqay, iyo cambe. Waxaan aragnay in dhadhanka uu sii fiicnaanaayo marka saddexda lagu wada daro.

Saliidda aan isticmaalnay waxay dadka qaarkood ula muuqan kartaa inay aad u badan tahay. Saliidda waxay kugu kaalmaynaysaa inuu shidniga gaduuto. Saliiddaas waxay leedahay faa’iido kale. Diyaarinta:

Habka loo diyaariyo shidniga

  1. Makiinadda casiirka ku rid basasha, tuunta, barbarooniga cagaaran iyo biyaha. Isku shiid.
  2. Yaanyada ku dar. Si fiican u shiid.
  3. Ku dar timirta, cambaha iyo kabsaro caleenta. Si fiican iskugu shiid.
  4. Digsi 6 litir qaada, saliidda ku shub. Xawaashka ku shub. Dab hoose isticmaal.
  5. Waxyaabaha aad isku shiidday isla markii ku shub ee walaaq. Ku dar yaanya shiishiid iyo cusbo, si fiican u walaaq.
  6. Raqayga ¼ koob biyo kulul ku shub. Walaaq ilaa uu ka qasmo. Yaanyada karaysa ku dar ama raqay soos ah isticmaal.
  7. Dab hoose adoo isticmaalaysa. Kari muddo laba saacadood. Nus saac walbana walaaq.
  8. Ku dar sokorta.
  9. Qalka ku dar si fiican u walaaq. Kari muddo 5 daqiiqo.

Il ne s’agit pas d’une nourriture Somali du quotidien. Pas même du plat qu’on fait une fois par mois, à moins que vous fréquentiez les restaurants Somalis. Ce chutney est consommé pour les occasions spéciales ce qui explique pourquoi certains Somalis le connaissent sous le nom de Basbaas Alla-bari (sauce piquante de banquet). Alla-bari est un grand rassemblement pour prier suivi d’un festin. Ce nom indique aussi que d’habitude les Somalis font un chutney très épicé.

Dans cette recette, nous avons décidé de rompre la tradition et de ne pas ajouter de piment au chutney. Nous savons que beaucoup adorent le goût phénoménal du chutney mais ne supportent pas la chaleur des piments. Les amateurs de piments peuvent ajouter autant de sauce piquante qu’ils veulent.

Il existe beaucoup de variations de ce chutney, chaque cuisinier utilisant des ingrédients différents et le préparant différemment. Il est appelé Shidni, Shigni, ou Basbaas Alla-bari. A Brava, Somalie, il est connu sous le nom de Achaari et il est soit à base de dattes et tamarin soit de mangues et tamarin. Notre version contient des dattes, des mangues, et du tamarin en plus des tomates, de l’oignon, de l’ail, du poivron vert, et du coriandre. Il contient du sel, du sucre, et du vinaigre ainsi que l’omniprésent Xawaash. Le résultat est un chutney au goût sucré, salé, aigre et acidulé qui est tout simplement irrésistible.

La quantité d’huile de la recette peut sembler importante mais elle est nécessaire pour caraméliser le chutney. Elle sert aussi de conservateur, et permet de conserver le chutney au frigo pendant plusieurs mois.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 
Pour 24 parts

  • 1 Petit Oignon
  • 6 Gousses d’Ail
  • ½ Poivron Vert
  • ½ (¼ + ¼) de mesure (118 mL) d’Eau
  • 4 Tomates
  • ⅔ (100 g) dattes (dénoyautées)
  • ½ livre (225 g) de chair de Mangue
  • ½ mesure (55 g) de Coriandre Frais
  • 1 mesure (237 mL) d’Huile de Colza
  • 2 cs (30 mL) de Xawaash
  • 1 mesure (100 g) de Concentré de Tomates
  • 1 cc (5 mL) de Sel
  • 2 cs (55 mL) de Tamarin (épépiné)
  • 2 cs (30 mL) de Sucre
  • ¼ de mesure (59 mL) de Vinaigre Blanc

Instructions:

Étapes pour préparer le chutney:

  1. Placer les oignons, l’ail, le poivron vert et ¼ de mesure d’eau dans un blender. Mixer jusqu’à ce que ce soit lisse.
  2. Ajouter les tomates et mixer en purée.
  3. Ajouter les dattes, la chair de mangues et le coriandre. Mixer jusqu’à ce que ce soit lisse.
  4. Dans un faitout de 6 litres chauffée à feu doux, ajouter l’huile et le mélange d’épices Xawaash.
  5. Ajouter le mélange en purée immédiatement et bien mélanger. Ajouter le concentré de tomate et le sel, bien mélanger.
  6. Ramollir la pâte de tamarin dans ¼ de mesure d’eau chaude. Bien mélanger. Ajouter au mélange. Vous pouvez aussi utiliser de la sauce de tamarin.
  7. Couvrir et cuire à feu doux pendant deux heures. Touiller toutes les demies heures. Utilisez des gants de cuisine pour tourner.
  8. Au bout des 2 heures, ajouter le sucre.
  9. Ajouter le vinaigre et bien mélanger. Couvrir et cuire pendant 5 minutes à feu doux.

 

Tamarin


 

Préparation du tamarin

  1. Mesurer 2 cuillères à soupe pleines (100g) de pâte de tamarin.
  2. Les mettre dans ¼ de mesure d’eau chaude.
  3. Bien mélanger.

طريقة التحضير:

 

طريقة تحضير الشتني

اخلط البصل، الثوم، الفلفل الاخضروالماء -1
يضاف الطماطم ويخلط جيدا -2
يضاف التمر، المانجو والكزبرة، ويخلط جيدا -3
يوضع قدر سعة 6 لتر على نار هادئة، يحمى الزيت قليلا ويضاف اليه الحوائج Xawaash. -4
يضاف خليط الطماطم مباشرة ويقلب جيدا، ثم يضاف معجون الطماطم والملح -5
يخلط التمر هندي مع ربع كوب من الماء. يمكن استعمال صلصة التمر هندي الجاهزة، ثم يضاف الى القدر. يغطى ويطهى على نار هادئة لمدة ساعتين. يقلب كل نصف ساعة. -6
يضاف السكر -7
يضاف الخل ويقلب جيدا. يغطى ويطهى على نار هادئة لمدة 5 دقائق. -8

    Salam Alaikum, Many congratulations on your fabulous website! It is so inspiring, I find myself visiting your site everyday, mashallah may Allah reward you and your family.
    I see Somali cuisine has so many similarities to Bengali cuisine( my country!) which helps me so much since my husband is Somali and I seem to do a lot of fusion cooking these days. I really enjoy the wonderful nostalgic trips down memory lane you take the readers on, it is such a beautiful touch to you recipes:) Somali food is so humble, much like the people and should definitely be celebrated:) big thanks!

    I love shiidni and try cooking it different ways with different spices, this recipe looks great anything with mango i love it . as a matter of fact I have it on the stove as I’m writing this. And the smell is intoxicating good. I can’t wait to have it with dinner tonight inshallah . Shukran once again. Keep up the awesome job! P.s. I would love a recipe for lemo Achari … A different receipe inshallah In the future Shukran.
