Sesame Snaps (Sisin) Croquants au sésame

 

Sesame snaps make for a great snack and they keep well. In Brava, these treats were always available when we visited relatives. Grandmothers and aunts, in particular, “had” to have them stashed in large tins and they would hand out one or two of these brittles to their nephews and nieces whenever they visited them. Never mind the cavities; the sugary crispiness was awesome. Childhood memories…

Sesame snaps (Sisin in Somali) are also popular in other parts of Somalia. In Brava, they are known as Zinoorho za Mashtaayta. They are called Mashatta when made into balls.

This recipe has very few ingredients: sesame seeds, sugar, and a little oil for rolling out the sesame paste. The oil can be eliminated altogether if you roll out the sesame paste on parchment paper.

When making sesame balls, it is better to reduce the sugar, so your teeth can get less of a workout. Biting into a sesame ball is much more difficult than tackling a thin sheet that crumbles easily.

 

Les croquants au sésame font un très bon en-cas et ils se conservent très bien. A Brava, ces sucreries étaient toujours servies lorsque nous visitions la famille. Les grands-mères et tantes, en particulier, se faisaient un devoir d’en garder de grandes quantités dans des grandes boites en fer et elles donnaient un ou deux croquants à leurs neveux et nièces quand ils venaient les voir. Qu’importe les caries, ces croustillantes sucreries étaient grandioses. Souvenirs d’enfance…

Les croquants au sésame (Sisin en Somali) sont aussi populaires dans d’autres régions de Somalie. A Brava, ils sont connus sous le nom de Zinoorho za Mashtaayta. Ils sont appelés Mashatta quand ils sont présentés en boules.

Cette recette a très peu d’ingrédients: graines de sésame, sucre, et un peu d’huile pour étaler la pâte de sésame. L’huile peut être supprimée entièrement si vous étalez la pâte de sésame sur du papier sulfurisé.

Si vous faites des boules de sésame, c’est mieux de mettre moins de sucre, comme ça vos dents sont moins sollicitées. Mordre dans une boule au sésame est beaucoup plus difficile que d’attaquer une feuille fine qui s’effrite facilement.

 

 

Ingredients: 

2 cups                    Sesame seeds
1 cup                     Sugar (Reduce to 3/4 cup if making sesame balls)
1 tsp                      Oil (for rolling out the sesame paste)

(Q.W. waa qaaddo weyn – midda cunnada lagu cuno) (q.y. waa qaaddo yar)

2 koob                    Sisin
1 koob                    Sokkor (Koob rubi dhiman haddaad rabtid inaad kuuskuustid)
1 q.y.                     Saliid (meesha aad ku-fidinaysid mari)

Ingrédients:

2 mesures de Graines de Sésame
1 mesure de Sucre (réduire à ¾ de mesure si vous faites des boules au sésame)
1 cc d’Huile (pour étaler la pâte de sésame)

 

Directions

Toast the sesame seeds for 4 to 5 minutes on medium heat, or until they become crunchy. Stir frequently to ensure even toasting. Transfer to a bowl.

Preheat the same pot on medium heat and melt the sugar gradually, adding a little sugar at a time. From time to time, lift the pot and use a swirling motion to mix. Do not stir. Melting the sugar will take 4 to 5 minutes.

With the pot still on medium heat, add the toasted sesame seeds and stir vigorously until the mixture becomes homogenous (about 1 minute). Do not leave on the heat for longer than that, otherwise the sesame paste will harden.

Wrap a large cutting board with aluminum foil and coat with 1 teaspoon of canola oil. Transfer the sesame paste on to the cutting board. Using a rolling pin, roll out the sesame paste into the desired thickness. We like the sesame snaps to be very thin.

Use a sturdy knife to cut into diamonds or squares. You should do the cutting while the sesame paste is still warm and soft.

For sesame balls, start shaping the balls with your hands while the sesame paste is still very warm and pliable. Use a spoon to scoop or wear food-safe gloves. Start with the outer edges and work your way inwards.

 

Instructions:

Faire griller les graines de sésame pendant 4 à 5 minutes à feu moyen, ou jusqu’à ce qu’elles deviennent croustillantes. Mélanger régulièrement pour que les graines grillent uniformément. Transférer dans un bol.

Préchauffer la même casserole à feu moyen et faire fondre le sucre progressivement, en l’ajoutant petit à petit. De temps en temps, soulever la casserole et faire tourner pour bien mélanger. Ne pas remuer. Faire fondre le sucre prendra 4 à 5 minutes.

La casserole toujours sur feu moyen, ajouter les graines de sésame et mélanger vigoureusement jusqu’à ce que le mélange devienne homogène (environ 1 minute). Ne pas laisser sur le feu plus longtemps que ça, sinon la pâte de sésame durcit.

Recouvrir une grande planche à découper d’aluminium et l’enduire avec 1 cuillère à café d’huile de colza. Transférer la pâte de sésame sur la planche à découper. Avec un rouleau à pâtisserie, étaler la pâte de sésame à l’épaisseur désirée. Nous aimons nos croquants très fins.

Utiliser un couteau large pour couper en losanges ou en carrés. Vous devez faire la découpe pendant que la pâte de sésame est encore chaude et molle.

Pour les boules au sésame, commencer à former les boules avec vos mains pendant que la pâte de sésame est toujours très chaude et malléable. Utiliser une cuillère pour mouler ou bien des gants alimentaires. Commencer par les bords externes puis travailler vers l’intérieur.

Steps for preparing the sesame snaps - Étapes pour préparer les croquants au sésame 

1. Faire griller les graines de sésame (4-5 min). 2. Ajouter le sucre progressivement, en petites quantités, dans la casserole préchauffée à feu moyen. 3. Attendre que le sucre soit complètement fondu avant d’en ajouter une autre couche. 4. Soulever la casserole et faire tourner le sucre pour mélanger. Ne pas touiller. 5. Lorsque le sucre est complètement fondu (4-5 min), mélanger avec une cuillère en bois. 6. Ajouter les graines de sésame grillées. 7. Bien mélanger jusqu’à homogénéisation (1 min). 8. Étaler sur une surface légèrement huilée. La pâte peut être étalée aussi fine que vous voulez. 9. Pendant que la pâte est encore chaude etmalléable, découper les formes désirées.

    Thank you so much for this recipe! I just made it and I am very happy with the result. I have one question. After I mixed the sesame with the sugar, there where some sesame sticking to the pot. How do I prevent this?
