That is the relationship for me between ful mudammas and classical Egyptian music. During my undergraduate years as a student of architecture, I was introduced to both of them. All-nighters were quite common; in fact they were expected of us as we were given deadlines that gave us no other choice but to stay up all night, time and again.

Um Kalthoum and Abdel Halim Hafiz made the long nights bearable and lively. The role of ful mudammas came later, during the early morning hours. We would drive to Old Jeddah for the Fajr prayer, then right after, it was ful time. The traditional restaurants where it was served were simple and unpretentious. The ful would be cooking all night in a copper pot and is timed to be ready by Fajr time, perfectly synchronized with our all-nighters. It is served with tamees, a traditional bread baked in a tandoori oven. The ful is topped with blended tomatoes, ground cumin, salt and ground black pepper.

A breakfast of ful mudammas, tamees and tea with milk, provided us with a boost of energy that made it possible for us to go to classes in the morning and concentrate.

In many parts of the Middle East, ful mudammas is a must for breaking the fast in Ramadan. By late afternoon, long lines form at ful joints. Ful is also great for suhoor (the pre-dawn meal during Ramadan). The song we chose for the video is by Sayyed Makkawi who was well-known for his role as the Missaharati (announcer of the pre-dawn meal). He composed music for Um Kalthoum and was also a great singer.

Both ful mudammas and classical Egyptian music are addictive. Both slow, both to be savoured. For some, inseparable, an association that can be lifelong.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Ful Mudammas:

  • 1 lb (450 g) Small dry fava beans
  • 6 cups (1.5 litres) Water – For soaking
  • 2 (275 g) Medium tomatoes (chopped)
  • 1 (130 g) Medium onion (chopped)
  • ¼ cup (80 g) Cilantro (chopped) – UK: coriander
  • 4 Large garlic cloves (minced)
  • 2 tsp (10 mL) Salt – To taste
  • ¼ tsp (1.25 mL) Ground black pepper
  • 1 tsp (5 mL) Xawaash – Somali spice mix
  • 6 cups (1.5 litres) Water – For cooking
  • 2 Lemon slices
  • 1 Large garlic clove

Tomato Blend:

  • 2 (275 g) Medium tomatoes (blended)
  • ¼ tsp (1.25 mL) Xawaash
  • ⅛ tsp Ground black pepper (Pinch)
  • ¼ tsp (1.25 mL) Salt – To taste
  • 1 tsp (5 mL) Olive oil

Chili Oil:

  • ½ cup (118 mL) Olive oil
  • 2 Jalapeno peppers (chopped)

Steps for preparing ful mudammas

  1. Wash the beans and boil for 10 minutes.
  2. Turn off the heat then cover and let the beans soak for one hour.
  3. After one hour elapsed, drain the water and wash the beans. Put the beans in a 5 litre clean pot. Add all the other ingredients except for the one garlic.
  4. Cover and cook on medium heat for one hour. Stir after every 15 minutes.
  5. Mash the beans using a laddle, or a wooden spoon.
  6. Add the garlic and cook for another 10 minutes.

Cela résume à mon avis le lien entre le ful mudammas et la musique classique Égyptienne. Je les ai découverts tous les deux lorsque j’étais étudiant en premier cycle d’architecture. Je faisait souvent des nuits blanches, que l’on devait faire car nous avions des dates butoirs qui ne nous laissaient pas d’autre choix que de rester debout toute la nuit, à de multiples reprises.

Oum Kalthoum et Abdel Halim Hafiz rendaient nos longues nuits plus tolérables et animées. Le ful mudammas entrait en scène plus tard, aux premières heures du jour. Nous conduisions jusque dans le Vieux Jeddah pour la prière de Fajr, puis juste après, il était l’heure du ful. Les restaurants traditionnels qui servaient du ful étaient simples et sans prétention. Le ful était cuit dans la nuit dans des marmites en cuivre pour qu’il soit prêt à l’heure de Fajr, il était donc parfaitement synchronisé avec nos nuits blanches. Il était servi avec des tamees, un pain traditionnel cuit dans un four tandoori. Le ful est garni avec de la purée de tomate, du cumin moulu, du sel et du poivre noir moulu.

Le petit déjeuner à base de ful mudammas, de tamees et de thé au lait, nous apportait assez d’énergie pour aller en cours le matin et nous concentrer.

Dans de nombreuses régions du Moyen Orient, le ful mudammas est un plat populaire pour rompre le jeûne pendant le Ramadan. En fin d’après-midi, de longues files d’attentes se forment devant les magasins de ful. Le ful convient aussi très bien pour suhoor (le repas pris avant l’aube pendant le Ramadan). La chanson que nous avons choisi pour cette vidéo est de Sayyed Makkawi qui était un Missaharati (l’annonceur du repas d’avant l’aube) renommé. Il a composé de la musique pour Oum Kalsoum et était aussi un grand chanteur.

Le ful mudammas et la musique classique Égyptienne sont tous deux addictifs. Tous deux lents, tous deux à savourer. Pour certains, inséparables, associés tout au long d’une vie.

Ingrédients:

(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Ful Mudammas:

  • 1 livre (450 g) de Petites Fèves sèches
  • 6 mesures (1.5 litres) d’Eau – pour le trempage
  • 2 (275 g) tomates moyennes (hachées)
  • 1 (130 g) Oignon moyen (haché)
  • ¼ mesure (80 g) de Coriandre (haché)
  • 4 de Grosses Gousses d’Ail (émincées)
  • 2 cc (10 mL) de Sel (à votre goût)
  • ¼ cc (1.25 mL) de Poivre Noir moulu
  • 1 cc (5 mL) de Xawaash – mélange d’épices Somali
  • 6 mesure (1.5 litres) d’Eau – pour la cuisson
  • 2 Tranches de Citron
  • 1 Gros Gousse d’Ail

Sauce Tomate:

  • 2 (275 g) tomates moyennes (mixées)
  • ¼ cc (1.25 mL) de Xawaash
  • ⅛ cc de Poivre Noir moulu (une pincée)
  • ¼ cc (1.25 mL) de Sel (à votre goût)
  • 1 cc (5 mL) d’Huile d’Olive

Huile au Piment:

  • ½ mesure (118 mL) d’Huile d’Olive
  • 2 de Piments Jalapeno (hachés)

Étapes pour préparer le ful mudammas

  1. Laver les haricots et les bouillir 10 minutes.
  2. Couper le feu et couvrir puis laisser les fèves tremper pendant une heure.
  3. Au bout d’une heure, égoutter l’eau et rincer les fèves. Mettre les fèves dans un faitout de 5 litres. Ajouter tous les autres ingrédients sauf l’ail.
  4. Couvrir et cuire à feu moyen pendant une heure. Tourner toutes les 15 minutes.
  5. Écraser les fèves avec une louche ou une cuillère en bois.
  6. Ajouter l’ail et cuire 10 minutes de plus.

طريقة تحضير الفول المدمس

تغسل حبوب الفول وتغلى لمدة 10 دقائق -1
يطفئ النار، تغطى وتنقع في الماء الساخن لمدة ساعة -2
تصفى من الماء بعد ساعة، تغسل وتوضع في قدرنظيف سعة 5 لترثم تضاف اليها المكونات الاخرى ما عدى حبة الثوم -3
تغطى وتطهى على نار متوسطة لمدة ساعة، تحرك كل ربع ساعة -4
تهرس بملعقة الشربة او ملعقة خشبية -5
تضاف حبة الثوم وتطهى لمدة 10 دقائق -6

      Thank you very much for your kind words. As explained in the video skip the quick soak method of boiling the beans for 10 minutes and soaking for one hour. Wash the beans you soaked then cook with the rest of the ingredients.

        What if I already cooked the beens, can I follow these directions? would the measurement for the beans change? and the beans I have are large.

          You just have to remember that 1 cup of dry beans yields roughly 3 cups of cooked beans. We used 1lb (450g) dry beans which is equivalent to 2 cups dry beans. The 2 cups will yield 6 cups cooked beans.

          Do not worry about the cooking time since ful mudammas always benefits from extra cooking time.

    Thanks so much for this recipe. I notice that you did not remove the outer skin of the beans. I keep reading from Western websites that you need to do this, however, I recently met people from Morocco, Palestine, and Israel who all said they did not ever remove the skin. Taking their advice, I just cooked some semi-mature beans (from my garden – they were part fresh and part dry) and they definitely have a rather tough skin that is unpleasant to eat. Are Westerners just sensitive to this or does it depend on the type of fava bean?

      Yes, it depends on the type of fava beans. Small fava beans do not need to be peeled. However, the large, broad beans have to be peeled. Even in the middle east, the large ones are always peeled.

          We find the smaller ones a lot more convenient. For the broad beans, the less dry they are the easier it is to peel. Fresh ones are usually blanched, then peeled one by one. For dry beans, we suggest soaking them over night, boiling in fresh water for half an hour, then Peeling individually.

    Salam Alaikom! I loooove fuul and I want to learn to make it before Ramadan comes insha’allah. I am having a hard time finding dry fava beans… I was wondering of is possible to use canned fava been a instead? Thanks!!!! :-)
