Potato & Cumin Rice (Pilau) Pilaf de Riz aux Pommes de Terre et au Cumin

 

This is an easy and tasty rice dish. It brings back beautiful memories of Mombasa, Kenya. However, this dish is not limited to Kenya but is popular in many parts of East Africa.

The cumin seeds gives it a flavour that is hard to resist and the potatoes make it very delicious. There are many variations of the dish. You can add diced carrots and peas, or you can substitute the potatoes with lima beans.

It can be served with any stew that you like. We served it with Swahili Fish Curry (Mchuzi Wa Samaki) and it was an exceptional combination.

 

C’est un plat de riz facile et savoureux. Il nous évoque de très bons souvenirs de Mombasa, Kenya. Cependant, ce plat n’est pas préparé qu’au Kenya mais est aussi populaire dans beaucoup de régions d’Afrique de l’Est.

Les graines de cumin apportent un parfum auquel il est difficile de résister et les pommes de terre sont délicieuses. Il existe de nombreuses variations de ce plat. Vous pouvez ajouter des carottes en dés et des petits pois, ou vous pouvez substituer les pommes de terres par des haricots lima (haricots blancs).

Il peut être servi avec votre viande préférée. Nous l’avons servi avec un Curry de Poisson Swahili (Mchuzi Wa Samaki) et c’était une association parfaite.

 

 

Ingredients: 

1                              Onion
2                              Garlic cloves (minced) 
2 Tbsp                       Canola (or vegetable) oil
2                              Potatoes (diced)
1 tsp                         Cumin seeds
1 Tbsp                       Vegetable seasoning
2 cups                       Basmati Rice
3 cups                       Water (boiling) 


Waxa loo baahanyahay:   

(Q.W. waa qaaddo weyn – midda cunnada lagu cuno) (q.y. waa qaaddo yar)

1                             Basal
2                             Tuun ama toon (xoqan) 

2 Q.W.                     Saliid caddeey
2                             Bataato ama baradho (la-yaryareeyey)
1 q.y.                       Xawaash dhuudhuub
1 Q.W.                     Maraq dajaaj
2 koob                     Bariis basmati
3 koob                     Biyo (karkaraaya) 

Waxaa fiirsataa ‘video’ga sida loo kariyey.

 

Ingrédients:

1 Oignon
2 Gousses d’Ail (hachées)
2 cs d’Huile de Colza (ou d’huile végétale)
2 Pommes de Terre (Coupées en dés)
1 cc de Graines de Cumin
1 cs d’Assaisonnement pour légumes
2 mesures de Riz Basmati
3 mesures d’Eau (bouillante)

 

Directions:

Wash the basmati rice, then soak for 10 minutes. 

In a pan set on medium heat, saute the onions in the oil, then add the garlic and the vegetable seasoning. Add the cumin seeds and stir well, then add the diced potatoes. Cover and cook for 10 minutes.

With the potatoes half-cooked, add the soaked rice stir well. Add the boiling water, then cover tightly and cook for 15 minutes on very low heat.

Serve with Swahili Fish Curry (Mchuzi Wa Samaki) or any stew that you prefer. 

 

Instructions:

Laver le riz basmati, puis le faire tremper 10 minutes.

Dans une sauteuse chaufée à feu moyen, faire revenir les oignons dans l’huile, puis ajouter l’ail et l’assaisonnement. Ajouter les graines de cumin et bien mélanger, puis ajouter les dés de pommes de terre. Couvrir et cuire 10 minutes.

Lorsque les pommes de terre sont à moitié cuites, ajouté le riz trempé et bien mélanger. Ajouter l’eau bouillante, puis couvrir hermétiquement et cuire pendant 15 minutes à feu très doux.

Servir avec un Curry de Poisson Swahili (Mchuzi Wa Samaki) ou le ragoût que nous préférez.

Steps for cooking the rice - Étapes pour cuire le riz 

1. Faire revenir les oignons dans l’huile
2. Ajouter l’assaisonnement
3. Ajouter les graines de cumin
4. Ajouter les dés de pommes de terre
5. Couvrir et cuire 10 minutes à feu doux
6. Ajouter le riz trempé 10 minutes
7. Ajouter 3 mesures d’eau bouillante
8. Couvrir et cuire pendant 45 minutes

    Acww, aad baad umahadsantihiin walaalayaal A&L … I hv one question: cumin seeds ka markaad ku darayseen ma aydan tumin, ee do u think it’s better that way, coz annaga waan tunnaa or shiidnaa somtimz, plz advise ,so I stop shiiditaanka ama tunka .. Thanks huge :)

    I am new beginner in the somali kitchen, and I made this dish yesterday for the first time.

    The taste was great, but I experienced that my rice was a little bit undercooked. I used the exact same amount of rice and water in the recipe. How low does the heat have to be? I think maybe my heat was too low?

    HELP :)

      Wa-alaikum as-salaam,
      Thank you for the comment and the question. The heat has to be at the lowest during the last 15 minutes. Make sure you soak the rice for 10 minutes and when you add the HOT water, lower the heat immediately and cover well.

    I don’t have cumin seeds can I use cumin seasoning instead ?

      You will not get the same flavour, but you can use cumin seasoning.
