One-Pot Pasta & Beef Ribs (Makarooni Isku-Karis) Poêlée de pâtes et côtes de boeuf

One of the things we miss about Somalia is the way the whole family used to eat the midday meal together. In Mogadishu, civil servants used to finish work at 2:00 pm, which was also the end of the school day. By 3:00 pm, the hustle and bustle of city life would wind down and the busy streets would be semi-deserted. It was time for the main meal of the day, soon to be followed by the cherished afternoon siesta. No, it wasn’t a brief respite from work. The workday was over.

Lunch was usually an outdoor affair. The midday heat made this almost mandatory and we would sit under the shade of the trees in our yard. Pasta, bananas, salad, a pitcher of grapefruit juice, ripe papayas, chatter, lots of chatter. It was as if all the city activity moved into peoples’ yards. 

Then the yard would be quickly vacated and the last few occupants (the children), forcefully evicted. We remember being forced to bed so as not to disturb our father. The only sound was that of cats arguing. Until life resumed again an hour or so later, for the Asr prayer and Asariye (Somali afternoon tea).

This pasta dish brings back those memories of Mogadishu. It is easy just like Mogadishu was, and fulfilling just like life was…

 

Une des choses qui nous manquent de la Somalie est quand toute la famille mangeait ensemble le repas du midi. A Mogadishu, les fonctionnaires finissaient à 14h, ce qui était aussi la fin de la journée d’école. Vers 15h, l’animation de la vie citadine diminuait et les rues animées devenaient à moitié désertes. C’était le moment du repas principal de la journée, ensuite suivi de la sacro-sainte sieste. Ce n’était pas une brève pause. La journée de travail était terminée.

Le déjeuner se prenait dehors. La chaleur de la mi-journée le rendait presque obligatoire et nous nous asseyions à l’ombre des arbres de notre jardin. Des pâtes, des bananes, de la salade composée, un pichet de jus de pamplemousse, des papayes mûres, des bavardages, beaucoup de bavardages. C’était comme si toute l’activité de la ville se déplaçait dans les jardins des gens.

Puis le jardin était déserté rapidement et les quelques derniers occupants (les enfants), étaient évacués contre leur gré. Nous nous rappelons que nous étions forcés d’aller au lit pour ne pas déranger notre père. Le seul son était celui des chats qui se disputaient. Jusqu’à ce que la vie reprenne environ une heure plus tard, pour la prière Asr et Asariye (le thé de l’après-midi Somali).

Ce plat de pâtes nous évoquent ces souvenirs de Mogadishu. Il est simple comme Mogadishu l’était, et riche juste comme la vie l’était…

Ingredients: 

Serves 6

¼ cup (59 mL) Canola oil
1 tsp (15 ml) Olive oil (for the spicy sauce)
1 Onion (diced)
4 Jalapeno pepper (for the spicy sauce)
1 Lemon (for the spicy sauce)
3 Tbsp White vinegar (for the spicy sauce)
1 tsp Salt (for the spicy sauce)
5 Garlic cloves (minced) (3 cloves for the stew + 2 cloves for the spicy sauce)
1 Tbsp + 1 tsp (20 mL) Vegetable seasoning (or to taste – we added the ½ tsp later)
1 tsp (5 mL) Xawaash (Somali spice mix)
2.2 lb (1 kg) Beef ribs with bones cut into 1.5 inch cubes
8 Tomatoes (1 for the spicy sauce + 4 blended for the stew + 3 added to the stew)
1 Yellow pepper (diced)
1½ cups Chopped cilantro (½ cup for the spicy sauce + 1 cup for the stew)
6 litres Water (1 litre for the stew + 5 litres for cooking the pasta)
½ tsp (2.5mL) Black pepper (ground)
1.1 lb (500g) Pasta shells

4 Basbaas cagaar waaweyn (jalapeno)
3 Q.W. Qal cad (basbaaska ayaa lagu sameeyay)
1 Liin dhanaan (basbaaska ayaa lagu sameeyay)
1 q.y. Cusbo (basbaaska ayaa lagu sameeyay)
5 Tuun (toon) (la-xoqay) (3 xabbo maraqa ayaa lagu daray + 2 xabbo basbaaska)
1 Q.W. + q. y. (20 mL) Maraq dajaaj (qaaddada yar gadaal ayaan maraqa ku darnay, waad ka-dhaafi kartaa)
1 q.y. (5 mL) Xawaash
2.2 lb (1kg) Feero lo’aad
8 (1+4+3) Yaanyo (1 basbaaska lagu daray + 4 la shiiday + 3 maraqa loo jarjaray)
1 Barbarooni jaallo (la yaryareeyey)
1½ koob Kabsaro caleen lajarjaray (½ koob basbaaska lagu daray + 1 koob maraqa lagu daray)
6 (1 + 5) litir Biyo (1 litir maraqa lagu kariyay + 5 litir baastada lagu kariyay)
½ q.y. (2.5 mL) Filfil madow (basbaaska ayaa lagu daray)
1.1 lb (500g) Baasto makarooni

Ingrédients:

Pour 6 parts

¼ de mesure (59 mL) d’Huile de Colza
1 cs (15 mL) d’Huile d’Olive (pour la sauce épicée)
1 Oignon (haché)
4 Piments de force modérée (ex piment d’espelette, jalapeno) (pour la sauce épicée)
1 Poivron Jaune (en dés)
1 Citron (pour la sauce épicée)
3 cs de Vinaigre Blanc (pour la sauce épicée)
1 cc de Sel (pour la sauce épicée)
5 Gousses d’Ail (haché)(3 gousses pour le ragoût + 2 gousses pour la sauce épicée)
1 cs + 1 cc (20 mL) d’assaisonnement pour légumes (ou selon votre goût, nous avons rajouté ½ cc plus tard)
1 cc (5 mL) de Xawaash (Mélange d’Epices Somali)
2.2 livres (1 kg) de Côtes de Boeuf
8 Tomates (1 pour la sauce + 4 mixées pour le ragoût + 3 ajoutées dans le ragoût)
1½ mesure de Coriandre Haché (½ mesure pour la sauce + 1 mesure pour le ragoût)
6 Litres d’Eau (1 pour le ragoût + 5 pour cuire les pâtes)
½ cc de Poivre Noir (moulu)
1.1 livre (500 g) de pâtes coquillage (conchiglie)

 

Directions:

Using a blender, puree four of the tomatoes.

In a pan set on high heat, sautee the onions in the oil for 3 minutes, then add the garlic, vegetable seasoning and Xawaash, and cook for one more minute.

Add the beef ribs, and brown for five minutes on high heat. Add the blended fresh tomatoes, then cover and cook on medium heat for 10 minutes.

Add one litre of water, then cover and cook on medium heat for one and half hours until the meat becomes fork tender.

 

Peel and seed the tomatoes:

In a separate pot boil about 4 cups water. Score the base of the tomaoes, then drop them in boiling water for 20 seconds. Remove the tomatoes and let them cool. You don’t need an ice bath if the tomatoes are firm.

Core the tomatoes as shown in the picture and remove the seeds, then dice the tomatoes and set aside.

 

Make the hot sauce:

In a food processor combine 3 jalapeno peppers, ½ cup chopped cilanto, 2 garlic cloves, 1 peeled and seeded tomato, 1 teaspoon olive oil, the juice of a lemon, 1 teaspoon salt, ½ teaspoon black pepper, and 3 tablespoons white vinegar.  Blend for 1 minute.

 

Cook the pasta:

Bring 5 litres of water to a boil, then add 1 tablespoon of salt. Add the pasta shells to the boiling water and cook for about 10 minutes. Make sure the pasta is a little undercooked as it will finish cooking in the meat sauce.

While the pasta is cooking, add the diced yellow pepper and cilantro to the stew and mix well. Then add the diced tomatoes.

Combine the slightly undercooked pasta with the stew, add 1 cup of the pasta water, then add 2 tablespoons of the spicy sauce. You can adjust it to your taste.

Stir well, then cover and cook on medium heat for 5 minutes. Serve hot.

 

Instructions:

A l’aide d’un mixer, réduire en purée quatre tomates.

Dans une poêle chauffée à feu fort, faire sauter les oignons dans l’huile pendant 3 minutes, puis ajouter l’ail, l’assaisonnement pour légumes et le Xawaash, puis cuire une minute de plus.

Ajouter les côtes de boeuf, faire colorer pendant 5 minutes à feu fort. Ajouter les tomates mixées, puis couvrir et cuire à feu moyen pendant 10 minutes.

Ajouter un litre d’eau, puis couvrir et cuire à feu moyen pendant une heure et demie jusqu’à ce que la viande soit tendre quand piquée à la fourchette.

Peler et épépiner les tomates:

Dans une autre casserole faire bouillir 4 mesures d’eau. Inciser la base des tomates puis les plonger dans l’eau bouillante pendant 20 secondes. Retirer les tomates et les laisser refroidir. Si les tomates sont fermes, il n’est pas nécessaire de les plonger dans de l’eau glacée.

Évider les tomates comme montré sur la photo et retirer les pépins, puis détailler les en dés et réserver.

Faire la sauce piquante:

Dans un robot mixer, rassembler 3 piments, 2 gousses d’ail, 1 tomate pelée et épépinée, 1 cuillère à café d’huile d’olive, le jus d’un citron, 1 cuillère à café de sel, une demie cuillère à café de poivre noir, et 3 cuillère à soupe de vinaigre blanc.

Mixer pendant 1 minute.

Cuire les pâtes:

Faire bouillir 5 litres d’eau, puis ajouter 1 cuillère à café de sel. Ajouter les pâtes coquillages à l’eau bouillante et cuire pendant 10 minutes. Faites attention à laisser les pâtes pas complètement cuites pour qu’elles puissent finir leur cuisson dans la sauce à la viande.

Pendant que les pâtes cuisent, ajouter les dés de poivron jaune et le coriandre au ragoût et bien mélanger. Puis ajouter les dés de tomates.

Ajouter les pâtes pas tout à fait cuites au ragoût, ajouter une mesure d’eau de cuisson des pâtes, puis ajouter 2 cuillères à soupe de sauce épicée.

Vous pouvez doser selon votre goût. Bien tourner, puis couvrir et cuire à feu moyen pendant 5 minutes. Servir Chaud.

1. Faire sauter les oignons dans l’huile et cuire pendant 3 minutes à feu fort. 2. Ajouter l’assaisonnement pour légumes. 3. Ajouter l’ail haché. 4. Ajouter le Xawaash et cuire une minute de plus. 5. Ajouter les côtes de boeuf et cuire pendant 5 minutes à feu fort. 6. Ajouter les tomates mixées et cuire à feu moyen pendant 10 minutes. 7. Ajouter l’eau et cuire pendant 1H30 à feu moyen. 8. Ajouter le poivron jaune et le coriandre. 9. Ajouter les tomates hachées.

1. Inciser la base des tomates. 2. Les plonger dans l’eau bouillante pendant 20 secondes. 3. Peler les tomates une fois qu’elles ont refroidi. 4. Évider les tomates comme montré. 5. Retirer les pépins. 6. Les détailler en dés.

Cooking the pasta & finishing the dish - Cuire les pâtes et finir le plat

1. Ajouter le sel dans l’eau bouillante.
2. Ajouter les pâtes.
3. Bien mélanger et cuire pendant 10 minutes à feu soutenu.
4. Goûter les pâtes pour vérifier la cuisson.
5. Ajouter les pâtes à la sauce à la viande.
6. Ajouter une mesure d’eau de cuisson des pâtes.
7. Ajouter deux cuillères à soupe de sauce épicée et bien mélanger.
8. Couvrir et cuire 5 minutes à feu moyen.

    Hi. I just wanted to say that this recipe looks very good, and I’m hoping to make it sometime soon. However, I noticed that in the ingredient list at the top, it doesn’t mention yellow pepper. How much should I put in? 1/2? 1 whole pepper? Also, in the part of the instructions which tell how to make the hot sauce for the Isukaris, the cilantro wasn’t mentioned. Should I still put it in?

    First, I would like to thank you so much for this amazing website! So informative, beautifully photographed and above all else DELICIOUS! I was wondering, if when you have time, you would be willing to lend your expertise! When I made this dish, despite letting the meat/pureed tomato/water mix simmer on medium heat for about an hour and 45 minutes, the liquid did not evaporate as it has in your version. What did I do wrong?? I used a large enameled pot with a lid (perhaps it fit too tightly?) Would it be ok to remove the liquid to a separate pan and reduce it that way? Any ideas you could share would be very much appreciated!

      Thank you very much for your wonderful comment. First, we would like to ask you if you cooked the meat for 5 minutes (that reduces the moisture). Second, did you cook it for a further 10 minutes after adding the pureed tomatoes? If you followed those two steps, then there are two other possibilities: 1) Ours is a gas stove and the BTUs on the medium setting could be higher than an electric stove. 2) If the lid fits too tightly on the pot, the liquid will not reduce as much, so you would need to use less liquid than we did.
