Custard (Labaniyad) Costarde / Crème dessert الكاسترد

We had many requests for a custard recipe but we knew that most of those who were requesting it, expected us to use custard powder. Unless you are allergic to eggs or have other dietary concerns, there is no reason not to make custard from scratch. It is easy, has very few ingredients, and tastes infinitely better.

Custard is a very versatile dessert that is delicious both hot and cold. It also tastes great at room temperature. One of the things we like about this recipe is the many variations you could make by tweaking the ingredients. If you greatly reduce the cornstarch, or eliminate it altogether, and serve the custard hot, you will have an amazing drink for a cold winter night. It is also a soothing drink to have when you have a cold and need a hot cup of something. Add some good dark chocolate and it becomes even better.

Since we use different types of flavouring, we never tire of having custard. We use vanilla beans, milk steeped with orange rind, or with cinnamon, ginger root, and cloves. We also use cardamom and garnish the custard with chopped nuts. Then there are days when we just like to have our custard plain without any flavouring. Scoop the custard over a bowl of fruit salad and it becomes a very fulfilling dessert.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

  • 4 Egg yolk(s) , Large
  • 4 Tbsp Granulated white sugar
  • 3 Tbsp Corn starch – UK: corn flour
  • 2 Cup(s) Milk – 3.25% or 2%

Chocolate Custard:

  • 4 Egg yolk(s) , Large
  • 6 Tbsp Granulated white sugar
  • 3 Tbsp Corn starch – UK: corn flour
  • 3 Tbsp Cocoa powder
  • 2 Cup(s) Milk – 3.25% or 2%

Directions:

Steps for preparing the custard

  1. Separate the yolks from the egg whites
  2. Add in the granulated sugar
  3. Add the corn starch
  4. Mix well
  5. Put the milk in a saucepan set on medium heat

Labaniyadda waa macaan kuleeyl iyo qaboow labadaba ku fiican. Waxyabaha aan ku jecel nahay soo’daaan waxaa ka mid ah sida looga sameeyn karo dhowr nooc oo kala duwan. Haddii aad waraangada ka yareeysid ama kaba dhaaftid, kuleeylna ku cabtid, waxaa sameeyn kartaa cabitaan aad u fiican waqtiyada qaboobaha. Cabitaankaas wuxuu kaloo aad u fiican yahay markii hargab (duray) kugu dhaco oo aad u baahan tahay wax kulul oo nafaqo leh inaad cabtid. Haddaad doontid waxaa ku darsan kartaa shukulaato, middaas oo cabitaanka sii fiicnaynaysa.

Labaniyadda marna kama xiiso dhacno, sababtoo ah waxaan isticmaalnaa dhowr waxyaabood oo kala duwan oo aan ku carfinno labaniyadda. Waxaan ku darnaa faniilla, ama waxaan ka sameeynaa caano lagu kariyay qolofta oranjada. Markaan ka dhigeeyno cabitaan kulul, waxaan ku darnaa sanjabiil, dhegayare, iyo qorfe. Waqtiyada qaarkood waxaan ku darnaa hayl shiidan, korna waxaan uga qurxinnaa loos. Waxaa jira maalmo aan jecelnahay inaan caraf dhanba ka dhaafno. Labaniyad la qaboojiyay haddaad furuut la jarjaray korka uga dartid, wuxuu kuu noqonaayaa furuut aad u macaan.

Nous avons reçu beaucoup de demandes pour la recette de la costarde et nous savions que la plupart de ceux qui la demandaient, s’attendaient à ce que nous utilisions de la crème en poudre. A moins que vous soyiez allergique aux oeufs ou ayez d’autres restrictions alimentaires, il n’y a pas de raison de ne pas la réaliser du début à la fin. C’est facile, contient très peu d’ingrédients, et est infiniment meilleur.

La costarde est un dessert très volatile qui est délicieux chaud ou froid. Il est aussi très bon consommé à température ambiante. Ce que nous aimons dans cette recette c’est toutes les variations que nous pouvons faire en modifiant les ingrédients. Si vous réduisez beaucoup la fécule de maïs, ou l’éliminez entièrement, et servez la costarde chaude, vous obtiendrez une boisson parfaite pour une froide nuit d’hiver. C’est aussi une boisson réconfortante quand vous avez un rhume et avez besoin d’une boisson chaude. Ajouter du chocolat noir de qualité et elle sera encore meilleure.

Comme nous utilisons des parfums différents, nous ne lassons pas de la costarde. Nous utilisons des gousses de vanille, de lait infusé de zest d’orange, ou de la cannelle, de la racine de gingembre, et du clou de girofle. Nous utilisons aussi de la cardamome et nous garnissons la costarde avec des éclats de noix. Et puis il y a des jours où nous préférons notre costarde nature. Une salade de fruit garnie avec de la costarde fera un dessert consistant.

  • 6 cs de Sucre en poudre
  • 3 cs de Fécule de maïs
  • 3 cs de Cacao en poudre
  • 2 mesure de Lait – 3.25% ou 2% (entier ou demi-écrémé)

Instructions:

  1. Séparer les jaunes des blancs d’oeuf
  2. Ajouter le sucre en poudre
  3. Ajouter la fécule de maïs
  4. Bien mélanger
  5. Verser le lait dans une casserole, chauffer à feu moyen
  6. Ajouter une demie mesure de lait chaud aux oeufs. Bien mélanger
  7. Verser le mélange dans la casserole
  8. Tourner constamment jusqu’à ce que le liquide épaissise
  9. Verser la crème encore chaude dans des coupes à dessert

    Is it true that egg yolk or yellow part of the egg has more cholesterol than egg whites ? Can I make Labaniyad egg whites instead of egg yolks?

      It is true that egg yolks contain a lot of cholesterol. You can make Labaniyad using egg whites. You can add saffron to get the yellow colour.
