When we started this blog, one of our objectives was to feature recipes from neighbouring countries. This is one such recipe that is popular among the Swahili-speaking peoples of East Africa. We added a few touches of our own and we simplified the recipe. This dish is very mild and the flavours are more subtle than the original recipe.

An important ingredient in Swahili cuisine is fresh coconut milk. In this recipe, we used canned coconut milk and we added it a little early. This toned down the coconut flavour and it did not overpower the fish.

Serve with Potato & Cumin Rice.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Swahili Fish Curry:

  • 7 Tilapia Fillets
  • 1 Tbsp Fresh ginger (grated)
  • 2 Garlic cloves (minced)
  • 3 Tbsp Fresh cilantro (chopped) – (UK: coriander)
  • 1 Jalapeno pepper – Or to taste
  • 1 Tomato (peeled, seeded & diced)
  • 1 tsp Tomato paste
  • ¼ cup Canola oil – Or vegetable oil
  • 1 can (400 mL) Coconut milk
  • 1 Lime or lemon
  • 1 Tbsp Vegetable seasoning salt

Spice mix:

  • 1 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1 tsp Black pepper

 

Directions:

 

Steps for cooking the fish

  1. Grind the spices using a spice mill.
  2. In a pan set over medium heat, add the oil and the spice mix. Stir well and cook for 1 minute.
  3. Add the garlic and ginger.
  4. Add the diced tomato and stir.
  5. Add tomato paste, stir well and cook for 2 minutes.
  6. Add the coconut milk.
  7. Add vegetable seasoning.
  8. Add the jalapeno and the chopped coriander. Stir well.
  9. Add the tilapia fillets. Cover and cook over medium heat for 3 minutes.
  10. Carefully flip the fish using a fork or spatula. Cover and cook for an additional 4 minutes. Squeeze one fresh lime on top of the fish and serve with Potato & Cumin Rice.

Mukawinaadka:

(QW waa qaaddo weyn – midda cuntada lagu cuno; qy waa qaaddo yar)
(1 koob = 237 mL = 2.4 dl; 1 QW = 15 mL; 1 qy = 5 mL)

 

Mchuzi Wa Samaki:

  • 7
  • 1 QW Sanjabiil cusboon (la xoqay)
  • 2 Tuun (toon) (shiidan)
  • 3 QW Kabsaro caleen (jarjaran)
  • 1 Basbaas “halabeenyo”
  • 1 Yaanyo (la fiiqay, miraha laga saaray, oo la jarjaray)
  • 1 qy Yaanyo shiishiid
  • ¼ koob Saliid caddeey
  • 1 gasac (400 mL) Caano qumbe
  • 1 Liin dhanaan
  • 1 QW Boolboro maraq qudaar

geedo udgoon:

  • 1 qy Kabsaro
  • 1 qy Kaamuun
  • 1 qy Filfil madoow

 

Diyaarinta:

 

Diyaarinta kalluunka

  1. Geedaha isku shiid.
  2. Bir dab dhexdhexaad saaran ku shub saliidda iyo geedaha aad shiidday. Walaaq oo kari muddo 1 daqiiqo.
  3. Ku dar tuunta (toonta) iyo sanjabiisha.
  4. Ku dar yaanyada la jarjaray, kaddibna walaaq.
  5. Ku dar yaanyo shiishiid. Si fiican u walaaq. Kari muddo 2 daqiiqo.
  6. Caanaha qumbaha ku dar.
  7. Ku dar maraq qudaarta.
  8. Basbaaska iyo kabsara caleenta ku dar, si fiicanna u walaaq.
  9. Malayga ku rid. Kari muddo 3 daqiiqo.
  10. Malayga dhinaca kale u rog. Dabool oo kari muddo 4 daqiiqo kale. Liin dhanaanta ku miir, kaddibna ku qaddin Bariis Kaamuun iyo Bataato.

Quand nous avons lancé ce blog, un de nos objectifs était de présenter des recettes de pays voisins. Cette recette en est une, qui est populaire parmi les gens parlant le Swahili en Afrique de l’Est. Nous avons ajouté quelques touches personnelles et avons simplifié la recette. Ce plat n’est pas piquant du tout et les arômes sont plus subtils que la recette originale.

Un ingrédient important de la cuisine Swahili est le lait de coco frais. Dans cette recette, nous avons utilisé du lait de coco en boite et nous l’avons incorporé assez tôt dans la préparation. Ce qui atténue le parfum de noix de coco et ne couvre pas le goût du poisson.

Servir avec Pilaf de Riz aux Pommes de Terre et au Cumin.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Curry de Poisson Swahili:

  • 7 tilapia
  • 1 cs de Gingembre Frais (râpé)
  • 2 Gousses d’Ail (hachées)
  • 3 cs de Coriandre Frais (émincé)
  • 1 Piments Jalapeno
  • 1 tomate (pelées, épépinées et émincé)
  • 1 cc de Concentré de Tomates
  • ¼ mesure d’Huile de Colza
  • 1 boîte (400 mL) Lait de Coco
  • 1 citron vert
  • 1 cs d’Assaisonnement Légumes

Mélanges d’épices:

  • 1 cc de Graines de Coriandre
  • 1 cc de Graines de Cumin
  • 1 cc Poivre Noir

 

Instructions:

Étapes pour cuire le poisson

  1. Moudre les épices.
  2. Sur feu moyen, faire chauffer l’huile et les épices.
  3. Ajouter l’ail et le gingembre.
  4. Ajouter les dés de tomates.
  5. Ajouter le concentré de tomate.
  6. Ajouter le lait de coco.
  7. Ajouter l’assaisonnement pour légumes.
  8. Ajouter le piment haché et épépiné et le coriandre haché.
  9. Ajouter les filets de tilapia, puis couvrir et cuire à feu moyen un total de 7 minutes.
  10. Presser un citron vert dessus et servir.

فلفل هلابينيو 1
(طماطم( مقشرة، منزوعة البذور ومقطعة 1
معجون طماطم ملعقة صغيرة 1
زيت الكانولا كوب ¼
حليب جوز الهند علبة 1
ليمون حامض 1
مسحوق مرقة الخضار ملعقة كبيرة 1
كزبرة حبوب ملعقة صغيرة 1
كمون ملعقة صغيرة 1
فلفل اسمر ملعقة صغيرة 1

 
 

طريقة التحضير:

 

طريقة تحضير السمك

تطحن البهارات -1
في مقلاة على نار متوسطة يُسخن الزيت والبهارات ويحرك جيدا لمدة دقيقة واحدة. -2
يضاف الثوم والزنجبيل ويحرك -3
يضاف الطماطم -4
يضاف معجون الطماطم، يحرك ويطهى لمدة دقيقتين -5
يضاف حليب جوز الهند. -6
يضاف مرق الخضار -7
يضاف الفلفل الحار والكزبرة ويحرك جيدا -8
توضع شرائح السمك وتطهى لمدة 3 دقائق -9
تقلب شرائح السمك وتطهى لمدة 4 دقائق، يعصرعليها الليمون وتقدم مع أرز بالكمون والبطاطا -10

    Acww … Leila & Abdullah; hope you’re doing great .. walaalayaal, I have a couple of questions and I hope u’ll be able to help as usual:
    1. If i don’t hv the Coconut milk, wat can I use as an alternative?!
    2. I used to hear that having milk with fish is not good for the health, thu, i tried to check the accuracy of this issue, but found that some say its not good and others say there is no problem with having milk with fish. So wat do u think?

      Wacalaykum Assalaam Waraxmatullaahi Wabarakaatuhu,

      You cannot replace the taste of the coconut, but you can try evaporated milk and tamarind.

      Many years back in Somalia, we asked a doctor and he said there is no harm in combining milk and fish. It is just a myth. You could call it Old Husbands’ Tales. :)

    Can I add vegetable seasoning in the beginning because I do not have xawaah sister.

      The vegetable seasoning has salt in it, we use it in place of salt. You cannot use it twice. Use ground coriander if you don’t have cumin. If you don’t have both, use curry powder instead.
