Eggs & Veggies (Ukun iyo Khudaar) Oeufs et Légumes

We usually cook this recipe on weekends, on those days that we wake up a bit later than usual. Yes, we do sleep in on weekends! It’s true that it makes it harder to wake-up on Monday mornings, but we do it anyhow, particularly on Saturdays. We need to recharge and relax…

Brunch. We coined a word for it in Somali: Qurado (Quraac + Qado). Just like brunch is breakfast and lunch. In our house, qurado is served anywhere between 11:00 a.m. to 12:30 p.m. and all the family sit together at the table. It’s a tradition that we’ve continued for many, many years.

For us, brunch is a light affair. No elaborate recipes, just easy and quick dishes. This frittata dish is one of our favourite recipes. It is simple and elegant and a cinch to put together. It’s also an effective way of sneaking in vegetables for those who wouldn’t eat them otherwise. 

To make the recipe lighter, you can use light cream cheese or use less of it. You could also use any other cheese that you prefer. For the vegetables, you can add zucchini, mushrooms, asparagus, potatoes, etc. They are all good additions or substitutes.

 

Nous cuisinons souvent cette recette les week-ends, ces jours où nous nous levons un peu plus tard que d’habitude. Oui nous faisons la grasse matinée le week end! C’est vrai que ça le reveil du lundi matin plus difficile, mais on le fait quand même, surtout le samedi. Nous avons besoin de nous reposer et de recharger les batteries…

Brunch. Nous avons créé le mot en Somali: Qurado (Quraac + Qado). De la même manière que le brunch est le petit-déjeuner et le déjeuner. Dans notre maison, qurado est servi entre 11:00 et 12:30 et toute la famille s’assoit à table. C’est une tradition que nous suivons depuis de nombreuses années.

Pour nous, le brunch est une affaire simple. Pas de recettes élaborées, juste des plats simples et rapides. Ce frichti est une de nos recettes préférées. Il est simple et élégant et peut être fait les yeux fermés. Elle est aussi un moyen de faire manger des légumes à ceux qui n’en mangeraient pas autrement.

Pour rendre la recette plus légère, vous pouvez utiliser du fromage allégé ou une quantité moindre. Vous pouvez sinon utiliser un autre fromage si vous préférez. Pour les légumes, vous pouvez inclure des courgettes, des champignons, des asperges, des pommes de terre, etc. Ils peuvent être utilisés comme compléments ou comme substituts.

 

Ingredients:

1/2 Onion (diced)
2 Tomatoes (diced)
1/2 Yellow or red pepper
2 cups Spinach (chopped)
1/2 cup Parsley (chopped)
125 g Cream cheese
2 Tbsp Olive oil
2 tsp Kosher salt (or to taste)
9 Eggs (large)

2 Yaanyo (la yaryareeyay)
1/2 Barbarooni jaala ah (midabka huruudda) (la yaryareeyay)
2 koob Isbinaasho (la jarjaray)
1/2 koob Baqduunis (la yaryareeyay)
125 g Farmaajo jilicsan (mukacab loo jaray)
2 QW Saliidda oliifada
2 qy Cusbo (ama inta aad jeceshahay)
9  Ukun (waaweyn)

 

Ingrédients:

½ Oignon (en dés)
2 Tomates (en dés)
½ Poivron Jaune ou Rouge
2 mesures d’Epinards (hachés)
½ mesure de Persil (haché)
125 g de Fromage à tartiner (cream cheese)
2 cs d’Huile d’Olive
2 cs de Gros Sel (ou selon votre goût)
9 Oeufs (gros)

 

Directions:

Place the cream cheese in the freezer while you prepare the other ingredients. This will make it easier to cut the cheese into cubes.

Dice the onions, tomatoes, and yellow (or red) pepper. Chop the spinach and parsley.  

Crack 9 large eggs and whisk thoroughly. It’s a good idea to break each egg into a small bowl to avoid adding a bad egg to the rest.

On medium heat, saute the diced onions in the oil until the onions become soft and translucent (about 3 minutes). Add the diced tomatoes and cook for 5 minutes, then add the diced yellow pepper. Add the chopped spinach and parsley and cook for 2 minutes. 

Add the cubed cream cheese and arrange them as show, spacing them as evenly as possible. Pour the whisked eggs on top then cover tightly and cook for 10 minutes. Serve immediately.

 

Instructions:

Mettre le fromage au congélateur pendant que vous préparez les autres ingrédients. Cela le rendra plus facile à couper en cubes.

Couper l’oignon, les tomates et le poivron jaune (ou rouge) en dés. Hacher les épinards et le persil.

Casser 9 gros oeufs et les battre. C’est une bonne idée de casser chaque oeuf dans un petit bol pour éviter de mettre un mauvais oeuf avec les autres.

A feu moyen, faire revenir les dés d’oignon dans l’huile jusqu’à ce qu’ils deviennent tendres et translucides (environ 3 minutes). Ajouter les dés de tomate et cuire 5 minutes, puis ajouter les dés de poivron jaune. Ajouter les épinards et le persil hachés et cuire 2 minutes.

Ajouter le fromage coupé en cubes et les disposer comme montré sur la photo, les espacer aussi régulièrement que possible. Verser les oeufs battus dessus et couvrir hermétiquement et cuire 10 minutes. Servir immédiatement.

 1. Casser 9 oeufs et les battre minutieusement. 2. Faire revenir les oignons dans l’huile d’olive. 3.Ajouter les tomates détaillées. 4. Ajouter le poivron émincé. 5. Ajouter les épinards hachés. 6. Ajouter le persil haché. 7. Ajouter les cubes de fromage et les arranger comme montré. 8. Ajouter les oeufs battus. 9. Couvrir hermétiquement et cuire à feu très doux pendant 10 minutes.

      Kosher salt is not a must. You can use any type of cheese you have but if you don’t have, then no worries.
