Somali Halwa (Xalwo) Halwa Somali

 

For Somalis, Halwa (Xalwo) is synonymous with festive occasions, particularly weddings. When a Somali says, “Xalwaddeeda ma-cunin,” (lit. “I didn’t eat her halwa”) it means “I didn’t attend her wedding.”

Made mainly of butter/oil and sugar, halwa is laden with calories. However, it was a delicacy that was consumed on special occasions and in small quantities. There was a time when halwa was eaten only during weddings, Eid, or Mawlid celebrations. In the diaspora this has changed. Nowadays, halwa is consumed at a high frequency and you will find many Somalis buying halwa as part of their Asariye (Somali afternoon tea with treats).

There were some very well known halwa shops in Somalia. In Mogadishu, the most popular halwa shops were Xalwo Hilaal and Xalwo Kismaayo. On the night before Eid, you’ll find huge lineups in front of halwa shops until late at night.

Halwa (Xalwo) originated in Oman and this recipe can be traced back to Oman. An Omani lady in Toronto taught the recipe to her neighbour who taught it to her friend who taught Zahra Kassim (Abdullahi’s sister) who taught us how to make it. Therefore you would agree that it is quite authentic :) . It is fit for a king, or we should say fit for a sultan!

Authentic halwa is made with ghee and a generous amount of spices (cardamom, nutmeg, and saffron) and rose water. Saffron is very expensive, therefore Somalis use food colouring instead. To further keep costs down, most halwa shops use oil instead of ghee and they skimp on the spices. Some halwa recipes call for toasted peanuts or toasted sesame seeds which are added just a couple of minutes before the halwa is done. The halwa is usually served with Qaxwo (traditional coffee).

 

Pour les Somalis, la Halwa (Xalwo) est associée aux occasions festives, particulièrement aux mariages. Quand un Somali dit: “Xalwaddeeda ma-cunin” (mot pour mot “Je n’ai pas mangé sa Halwa”), cela veut dire “Je ne suis pas allé à son mariage”.

Composée principalement de beurre/huile et de sucre, la halwa est très calorique. Aussi, elle était considérée comme une friandise qui était consommée uniquement pour des occasions spéciales et en petites quantités. Auparavant la halwa n’était mangée que lors des mariages, de l’Eid, ou du Mawlid. Dans la diaspora, cette coutume a changé. Aujourd’hui, la halwa se mange souvent et de nombreux Somalis achètent la halwa pour leur Asariye (la thé de l’après-midi servi avec des friandises).

Il y avait des magasins de halwa renommés en Somalie. A Mogadishu, les magasins de halwa les plus populaires étaient Xalwo Hilaal et Xalwo Kismaayo. La nuit précédant l’Eid, beaucoup de gens venaient faire la queue devant les magasins de halwa jusque tard dans la nuit.

La Halwa (Xalwo) est originaire d’Oman et notre recette vient elle aussi d’Oman. Une dame Omani de Toronto a enseigné cette recette à sa voisine qui l’a enseignée à son amie qui l’a enseignée à Zahra Kassim (la soeur d’Abdullahi) qui nous a montré comment la faire. Donc nous sommes d’accord, cette recette est tout à fait authentique :) . Elle est digne d’un roi, je dirai même digne d’un sultan!

La halwa authentique est faite à base de ghee et de généreuses doses d’épices (cardamome, noix de muscade, et safran) et d’eau de rose. Le safran est très cher, donc les Somalis utilisent du colorant alimentaire à la place. Pour réduire les coûts la plupart des magasins d’halwa utilisent du l’huile à la place du ghee et sont avares sur les épices. Certaines recettes d’halwa incorporent des arachides grillées ou des graines de sésame qui sont ajoutées quelques minutes avant que la halwa soit prête. D’habitude la halwa est servie avec le Qaxwo (café traditionnel).

 

 

Ingredients:

½ cup (65 g) Corn starch
½ cup (118 mL) Water (for the corn starch mixture)
2½ cups (500 g) White granulated sugar
½ cup (95 g) Light brown sugar (golden yellow sugar)
½ cup (125 mL) Unsalted butter
½ cup (118 mL) Canola oil (or any flavourless oil)
3 cups (711 mL) Water (for the sugar)
1 Tbsp (15 mL spoon) Ground cardamom (you can reduce if you wish)
3 Nutmeg nuts (you can reduce if you wish)
Pinch Orange and yellow food colour

(1 koob = 237 mL; 1 QW = 15 mL; 1 qy = 5 mL)

½ koob (65 g) Waraango
½ koob (118 mL) Biyo (waraangada lagu qaso)
2½ koob (500 g) Sokor
½ koob (95 g) Sokor maroon (golden yellow sugar)
½ koob (125 mL) Buuro aan cusbo lahayn
½ koob (118 mL) Saliid cad
3 koob (711 mL) Biyo (sokorta lagu karinaayo)
1 QW (15 mL spoon) Hayl shiidan
3 Jows 
Far iyo suul Midabbada cuntada lagu daro (oranj iyo jaalo)

 

Ingrédients:

½ mesure (65 g) de Fécule de Maïs (maïzena)
½ mesure (118 mL) d’Eau (pour le mélange avec la fécule de maïs)
2½ mesures (500 g) de Sucre en Poudre
½ mesure (95 g) de Sucre Roux ou cassonade (sucre jaune doré)
½ mesure (125 mL) de Beurre Doux (non salé)
½ mesure (118 mL) d’Huile de Colza (ou tout type d’huile au goût neutre)
3 mesures (711 mL) d’eau (pour le sucre)
1 cs (15 mL) de Cardamome en poudre (ou moins si vous le souhaitez)
3 Noix de Muscade (moins si vous le voulez)
Une pincée de Colorant Alimentaire jaune et orange

 

Directions:

Using a mortar and pestle, break the nutmeg shells then crush the nuts. Next, grind the cardamom into a fine powder and then grind the crushed nutmeg nuts. 

Melt the butter and lightly brown it. When the foam subsides, turn off the heat and add the ground cardamom, ground nutmeg, and the canola oil. Set aside. 

Prepare the corn starch mixture by combining the corn starch, food colouring, and ½ cup of water. Stir well.

In a deep pot set on high heat, combine the white sugar, light brown sugar, and 3 cups of water. When the mixture comes to a boil, stir in the corn starch mixture. Make sure that you wear mitts and use a long wooden spoon to avoid getting burned. Reduce the heat to medium-high and cover for 2 to 3 minutes to control the splattering.

After 5 minutes, start adding the oil, a ladleful at a time and stir well. Keep adding the oil every 2 minutes or so, until all the oil is incorporated.

In the last 10 minutes of cooking, the halwa will start releasing some of the oil. Use a ladle to remove the oil and repeat between stirrings. We removed almost ½ cup of oil. 

It is important to stir well in the last stages to ensure that the halwa cooks evenly. You don’t want parts of the halwa to reach the candy stage. You will know that the halwa is ready when it starts to come together into one mass.

Be extremely careful when transferring the halwa to a bowl. Make sure that you remove the oil from the halwa and that the bowl is secured and doesn’t move. Cool the halwa for 30 minutes before serving.

 

Instructions:

Avec un mortier et un pilon, casser les coquilles des noix de muscade puis écraser les noix. Ensuite, moudre la cardamome en poudre fine puis moudre les noix de muscade écrasées.

Faire fondre le beurre et le faire colorer légèrement. Quand l’écume disparaît, couper le feu et ajouter la cardamome moulue, la muscade moulue, et l’huile de colza. Réserver.

Préparer le mélange de fécule de maïs en combinant la fécule de maïs, le colorant alimentaire, et ½ mesure d’eau. Bien mélanger.

Dans une casserole avec des bords assez hauts chauffé à feu fort, mélanger le sucre blanc, le sucre roux, et 3 mesures d’eau. Quand le mélange commence à bouillir, ajouter la fécule de maïs tout en tournant. Assurez vous d’utiliser des maniques et d’utiliser une cuillère en bois pour éviter les brûlures. Baisser le feu à feu moyen-fort et couvrir pendant 2 à 3 minutes pour contrôler les éclaboussures.

Après 5 minutes, commencer à ajouter l’huile, une louche à la fois et bien mélanger. Ajouter l’huile toutes les 2 minutes environ, jusqu’à ce que l’huile soit bien incorporée.

Pendant les 10 dernières minutes de cuisson, la halwa va commencer à relâcher de l’huile. Utiliser une louche pour retirer l’huile et répéter entre chaque mélangeage. Nous avons retirer presque ½ mesure d’huile.

Il est important de bien touiller pendant les dernières étapes de la préparation pour s’assurer que la halwa cuise de manière homogène. Il vaut mieux éviter que des morceaux de halwa se tranforme en bonbon. Vous saurez que la halwa est prête lorsqu’elle s’agrège en une seule masse.

Faites très attention lorsque vous transférez la halwa dans un bol. Assurez vous que l’huile en trop a bien été retirée et que le bol est stable et ne bouge pas. Laisser refroidir la halwa pendant 30 minutes avant de servir.

1. Isku-dar sokorta cad iyo tan maroonka ah. 2. Biyaha ku-shub. 3. Markay biyaha karkaraan, waraangada aad qastay ku-dar, si-fiicanna u-walaaq. 4. Fanfaniinka iska ilaali. 5. Dabool digsiga si aadan u-gubanin. 6. Shan daqiiqo kaddib, billoow inaad saliidda kiskis ugu dartid. Toban daqiiqo gudaheed, saliidda ku-dhameey. 7. Markay xalwadda saliid soo tufto, ka-saar saliidda. 8. Xalwadda xurbi oo qaaddada qoriga ku-jarjar. 9. Markay isku-timaaddo, xalwadda waa diyaar. 

1. Ajouter le sucre et la cassonade. 2. Ajouter l’eau. 3. Quand le mélange de sucre commence à bouillir, ajouter le mélange de fécule de maïs et bien mélanger. 4. Le mélange bouillant commence à éclabousser. 5. Couvrir la casserole pour éviter les brûlures. 6. Après 5 minutes, ajouter peu à peu l’huile et finir pendant les 10 premières minutes. 7. Quand la halwa commence a dégorger de l’huile, utiliser une louche pour retirer l’huile. 8. Tourner continuellement pour que la halwa cuise de manière homogène. 9. Quand la halwa s’agrège en une seule masse, elle est prête.

    What a tittle(Xawaash) I wonder how you came up with such a title. That’s my little joke to you guys. Thank you so much for all this wonderfull recipes. Waxaa tihiin dad fahansan dadkeena soomaalida, Anaga Soomaali ahaan wax aqriska wuu nagu yaryahay laakiin markii muuqaal laga dhigo aad ayaan wax u fahanaa,sidaa daraadeed waxaan idiinka mahad celinaa video aad soo galisaan iyo habka loo karinaayo cuntada. Q:Xalwada looks little dark to me. I do not know if it’s the picture or maybe too much nutmeg nuts and cardamom. Anyway whatever it’s I will try. I never make xalwo before it’s going to be my first xalwo.But I need your suggestion, what kind pan should I use? Is nonstick pan okay? Should I use red instead of orange food colour?

      Yes, the xalwo does look dark in the photo and this was due to the orange colour which was almost red. Xalwo was originally coloured by using saffron, but since saffron is expensive, the best colour to use is a yellowish one. Don’t reduce too much the nutmeg and cardamom, their flavours are amazing in the xalwo.

      A deep, non-stick pan is a preferable, otherwise you’ll run the risk of having the xalwo stick to the pan.

      As for the rose water, 1 teaspoon (i qaaddo yar) should be sufficient, which is what you added to the xalwo.

    Hi,
    I tried to make the Xalwo,but it came out soft–it’s bit hard but soft like cake. I thought i cooked it well.
    Does it need more more corn starch? The Xalwo that i bought in the past were more harder and more elasticy(mine is not at all!)
    Help!

      Based on your description, it looks like the heat was not high enough. Make sure that the heat is set to medium-high, otherwise the xalwo will need more time to harden. Adding more cornstarch will make the xalwo even softer. Follow the recipe closely and watch the video.

    One more question…after the Xalwo has cooled down do you referigerate
    it or can it be left out side in a container?
    I thought you could leave it outside and it wouldn’t go bad.

      As soon as the xalwo cools down, put it in a plastic bag and seal it. There are people who freeze it when they want to store it for a longer period. We haven’t tried that because in our house, it disappears really fast!

    I made the xalwa today and it turned out great except it didn’t release the oil for some reason, i don’t know what went wrong.

      We believe it is because the heat was too high. We’re guessing that you probably didn’t cook it for the full 30 minutes. Keep the heat at medium high.

    Hi Xawaash team, I’m going to set you what might seem an impossible task, you see there is something I love more than Xalwad- that is its cousin the Harisad. I’ve found it impossible to find a decent tasting one with plenty of nutty flavour. I live in the UK and all you find is Asian replica harisad which is really not honouring the traditional flavoursome original. Pretty please, with a cherry on top could you try to provide me with a recipe so that I no longer have to be subjected to the foul tasting ones in London.

    i never dared to make xalwo in my life..i used to say xalwo is for buying only…but becoz of you guys i tried to make it for the first time in my life and waaaw i couldn’t believe myself…it turned out great..a bit soft but i think i took it off the heat too early but hey im still happy with the result.     jazakallah kheiran. i tried the halwa 2day and came out well, only that it was soft n didnt release oil while cooking. how can i make it to hav the normal texture for halwa {as in not too hard nor too soft {moderate}.otherwise the appearance n everithing else was just like a real halwa. thank u once again.

      You can add the peanuts at the end, just before turning off the heat. Normaly we use roasted peanuts but you can use any nuts of your liking.

    ASC. Thank you xawash team. I have tried to make the xalwa, and it turned out great when it comes to tast and the color, but I had one problem at the end which was my xalwa didn’t come thogather really well and on top of that it started having lumps at the last stage not first, when I added the corn strach. Please help.

      Wa’alaikum as-salaam warahmatullaahi wabarakaatuh.
      If the xalwa didn’t come together, you need to cook it longer, probably the heat was low. Having lumps means you didn’t stir well. You need to stir it frequently while cooking and constantly at the end.

    First of all I wanna thank you both from the bottom of my heart, I love everything on your page and you make everything look soo easy mashAllah tabarakaAllah. I wanted to make this recipe for my family this coming eid InshAllah, will it taste better if I use ghee and saffron instead of canola oil and food color? ALso how much can will I use if I went this route? My mom and siblings live in England and I wanted to make some and mail it :) , they will be very pleased… I can’t wait to make this, what tips would you give someone using electric stove? I can’t seem to get the heat right when I use electric stove and is it OK if I use the stainless steel pot instead of the non stick? Sorry I don’t own non stick. Thank you and sorry for the million question.

      The smell and taste of the brown butter is just amazing. We wouldn’t advise you to replace it with ghee. We didn’t try it with ghee, but when we cooked with butter only, the taste was out of this world but it hardened and was sugary after a few hours. As for your mom and siblings, give them the link to xawaash.com, and they can have fresh xalwo instead. This xalwo does not transport well.

      The heat is very critical when cooking xalwo. Make sure you use medium-high heat, otherwise with low heat you need to cook it longer and with high heat it will cook faster and harden. Using a non-stick pot will make the job easier. Thank you for the comments and the questions.

    I just made the halwa. The oil never came out . I was stirring it a lot but it didn’t come. So when it came together I just took it off. I followed everything you said.Do you know what I did wrong? It is still cooling so i don’t if it will turn out good.

    wow masha allah nice display i believe u can have your cooking show on tv. i always wanted to make shushumo and i followed the steps and it turned out really great thanx alot for this website keep up the good work i have 2 question one can i use food colour for the shushumo sugar syrup and the other question is can i eliminate the nutmeg (joos) from the xalwo cause my son is allergic to it thanx in advance
