Plain Goat Stew (Hilib Ari oo Cad) Ragoût de chèvre simple

 

There are days when you want to avoid spicy dishes or tomato-based stews, and you want just a simple and flavourful dish. This dish is perfect for those days.

In Brava, Somalia, this is what is normally served with grits for the midday meal. It is accompanied by yoghurt or buttermilk, maankale (a type of sesame paste that is similar to tahini), and a wedge of achaari (preserved lemon). 

This stew also goes extremely well with sabaayad (chapati), anjero, or muufo. It is very easy to prepare and does not require much attention while it is cooking.

 

Il y a des jours où vous voulez éviter les plats épicés ou les ragoûts à base de tomate, où vous voulez un plat simple et goûteux. Ce plat est parfait pour ces jours-là.

A Brava, en Somalie, il est habituellement servi avec de la bouillie pour le repas du midi. Il s’accompagne de yaourt ou de babeurre, de maankale (une sorte de pate de sésame similaire au tahini), et un quartier de achaari (citron confit).

Ce ragoût va aussi très bien avec des sabaayad (chapati), anjero, ou muufo. Il est très facile à préparer et ne requiert pas d’être surveillé pendant la cuisson.

Serves 8

2.2 lb (1 kg)                                  Frozen goat meat (or fresh)
1                                                 Onion (sliced)
4                                                 Garlic cloves (minced)
1 Tbsp (15 mL)                              Vegetable seasoning
3 litres                                         Water

4                                                Tuun (toon) la-shiiday
1 Q.W. (15 mL)                             Maraq dajaaj
3 litir                                          Biyo

Ingrédients:

Pour 8 parts

2.2 livres (1 kg) de Viande de Chèvre surgelée (ou fraîche)
1 Oignon émincé
4 gousses d’ail (haché)
1 cs (15 mL) d’assaisonnement légumes (ex bouillon cubes) (1 cs d’assaisonnement
Vegeta (18g) = 2 bouillon cubes Maggi ou Knorr = 2 cc de sel)
3 Litres d’Eau


Steps for preparing the stew - Étapes de préparation du ragoût

 1- Hilibka dhaq. 2- Hilibka digsiga ku-rid. 3- Basasha ku-dar. 4- Tuunta (toonta) ku-dar. 5- Maraq dajaajka ku-dar. 6- Biyaha ku-shub. 7- Markuu karkaro, xumbada ka-qaad. 8- Dabool oo 2 saacadood kari.

1. Laver la viande de chèvre. 2. Mettre la viande dans un faitout. 3.Ajouter l’oignon émincé. 4. Ajouter l’ail haché. 5. Ajouter l’assaisonnement en poudre. 6. Ajouter l’eau et faire bouillir. 7. Écumer les impuretés. 8. Couvrir et laisser cuire pendant 2 heures.

    Acww … Maalin/habeen wanaagsan, walaal Leila, hope both of u are doing awesome. I was checking the “my somali food” website that u have on ur home page, and noticed that they prepared the “surbiyaan rice” and the muufo, and I know that u made the muufo previously but without the vedio, so could u kindly make the surbiyaan rice with vedio and the muufo??!!!       The vegetable seasoning we use is Vegeta, there is no vegetable stock in this recipe.
