What to look for

Pick tomatoes that feel heavy for their size, with smooth, glossy skin and a sweet smell at the stem. They should give slightly when pressed; skip any with soft patches, cracks or wrinkles. Deep red, in-season tomatoes give sauces the richest flavour.
