When we started this blog, one of our objectives was to feature recipes from neighbouring countries. This is one such recipe that is popular among the Swahili-speaking peoples of East Africa. We added a few touches of our own and we simplified the recipe. This dish is very mild and the flavours are more subtle than the original recipe.
An important ingredient in Swahili cuisine is fresh coconut milk. In this recipe, we used canned coconut milk and we added it a little early. This toned down the coconut flavour and it did not overpower the fish.

1 cup = 237 mL · 1 Tbsp = 15 mL · 1 tsp = 5 mL. All are level measurements.

Steps for cooking the fish Grind the spices using a spice mill.
In a pan set over medium heat, add the oil and the spice mix. Stir well and cook for 1 minute.
Add the garlic and ginger.
Add the diced tomato and stir.
Add tomato paste, stir well and cook for 2 minutes.
Add the coconut milk.
Add vegetable seasoning.
Add the jalapeno and the chopped coriander. Stir well.
Add the tilapia fillets. Cover and cook over medium heat for 3 minutes.
Carefully flip the fish using a fork or spatula. Cover and cook for an additional 4 minutes. Squeeze one fresh lime on top of the fish and serve with Potato & Cumin Rice.

And once I add vegetable seasoning in the beginning do I add it again the second time around when you did?
Can I add vegetable seasoning in the beginning because I do not have xawaah sister.
The vegetable seasoning has salt in it, we use it in place of salt. You cannot use it twice. Use ground coriander if you don’t have cumin. If you don’t have both, use curry powder instead.
