Many people skip breakfast even though most know that it is not a good idea. Everyone has his or her reasons but we will not get into those now. We believe in having a good, nourishing breakfast. It helps tremendously if you have a good repertoire of dishes that make breakfast something to look forward to.
Good planning is very important because there is not much time to spend preparing breakfast in the morning. Little time in the morning does not mean settling for cereal or pre-packaged foods. For this dish, we prepared the ingredients the night before and assembled everything in very little time in the morning. To wrap the eggs, we used homemade tortillas that were in the fridge, which quickly heated up. The wrap makes it easy to eat breakfast on the way to work or school. Delicious, nutritious, and quick.

1 cup = 237 mL · 1 Tbsp = 15 mL · 1 tsp = 5 mL. All are level measurements.

Steps for preparing the egg burrito In a bowl, combine the eggs, parsley, green onions, jalapeno peppers, xawaash spice mix, and salt. Whisk well.
In a pan set over medium heat, saute the onions in the olive oil for 1 minute then add the mushrooms and tomatoes. Cook for 5 minutes.
Add the egg mixture then top with the shredded cheese.
Cover and cook over low heat for 3 minutes.

Wrap the tortilla sandwich.
