Most cultures have some form of fried dough: puff puffs, fry dough, beignet, zeppole, bofrot, loukoumades, etc. Somalis know it as bur saliid. It is a popular street food that is served as a snack. Bur saliid with samosas, bajiya, and tea make a great casariye (afternoon tea with snacks).

Together with a cup of tea, it is also a quick breakfast. Others like to dip it in basbaas (Somali hot sauce) and it becomes a great snack.

The recipe provides two options: with or without eggs. Traditionally, Somalis do not add eggs but eggs make the puff puffs lighter and richer in taste. When serving with samosas or any savoury dipping sauce, it is recommended not to increase the quantity of sugar. However, when serving it with just tea, we usually increase the quantity of sugar and make the puff puffs sweeter.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Somali Puff Puff:

  • 2 cups (280 g) All-purpose (plain) flour
  • ½ cup (75 g) White cornmeal (finely ground)
  • ¼ cup (50 g) Sugar (to taste)
  • 2 Large Eggs – Or ¼ cup water
  • 2 tsp (10 mL) Instant yeast
  • 1 cup (237 mL) Water (lukewarm)
  • ¼ tsp (1.25 mL) Salt
  • 1 pinch Cardamom

Directions:

 

Steps for preparing the puff puff

  1. Combine all the dry ingredients then add the eggs if using.
  2. Add 1 cup of lukewarm water if using eggs, otherwise add 1 ¼ cups of water.
  3. Beat well until well-combined.
  4. Cover and let it rise for 1 ½ hours.
  5. Fry in canola oil using medium heat. Stir to brown evenly.
  6. Fry until golden brown then drain.

  • 2 koob (280 g) Bur cad
  • ½ koob (75 g) Soor galleey (aad loo shiiday)
  • ¼ koob (50 g) Sokor (inta dooqaaga ah)
  • 2 Ukun , Weyn
  • 2 qy (10 mL) Qamiir rooti
  • 1 koob (237 mL) Biyo (qandac)
  • ¼ qy (1.25 mL) Cusbo
  • 1 far iyo suul Hayl

Diyaarinta:

 

Diyaarinta bur saliidka

  1. Mukawinaadka qalalan baaquli ku shub. Ukunta ku dar haddii aad isticmaalaysid.
  2. Koob biyo qandac ah ku dar haddii aad ukun isticmaalaysid. Haddii kale koob iyo rubi biyo ah ku dar.
  3. Si fiican u garaac ilaa uu cajiinka ka qasmo.
  4. Dabool oo muddo hal saac iyo nus dhig si uu cajiinka u qamiiro.
  5. Saliid caddey ku shiil adigoo isticmaalaysid dab dhexdhexaad ah. Walaaq si uu u wada gaduuto.
  6. Shiil ilaa ay ka gaduutaan, kaddibna saliidda ka miir.

Bur Saliid oo sokor shiidan lagu shubay

La plupart des cultures ont leur propre version du beignet : puff puffs, fry dough, beignet, zeppole, bofrot, loukoumades, etc. Les Somalis les appellent bur saliid. Les beignets sont une nourriture de rue populaire, servie en en-cas. Les Bur saliid accompagnés de samosas, bajiya, et de thé font un très bon casariye (thé de l’après-midi avec un goûter).

Accompagnés d’une tasse de thé, les beignets sont aussi un petit déjeuner rapide. Certains aiment les tremper dans du basbaas (sauce piquante Somalie) et les manger en en-cas.

Cette recette propose deux options: avec ou sans oeufs. Traditionnellement, les Somalis n’ajoutent pas d’oeuf mais les oeufs rendent les puff puffs plus légers et plus riches en goût. Quand ils sont servis avec des samosas ou une sauce salée, il est recommandé de ne pas augmenter la quantité de sucre. Quant à nous, quand nous les servons avec du thé, nous augmentons la quantité de sucre pour rendre les puff puffs plus sucrés.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Puff puff Somali:

  • 2 mesures (280 g) de Farine Blanche
  • ½ mesure (75 g) de Semoule de Maïs Blanc (moulue fin)
  • ¼ mesure (50 g) de Sucre (à votre goût)
  • 2 Gros Oeufs
  • 2 cc (10 mL) Levure Instantanée
  • 1 mesure (237 mL) d’Eau (tiède)
  • ¼ cc (1.25 mL) de Sel
  • 1 pincée de Cardamome

Instructions:

 

Étapes de préparation des puff puffs

  1. Mélanger tous les ingrédients puis ajouter les oeufs si vous en utilisez.
  2. Ajouter une mesure d’eau tiède si vous avez mis des oeufs, sinon ajouter 1 mesure ¼ d’eau.
  3. Battre jusqu’à ce que la pâte soit bien homogène.
  4. Couvrir et laisser lever pendant 1 heure ½.
  5. Frire dans l’huile de colza chauffée à feu moyen. Retourner les puff puff pour colorer uniformément chaque côté.
  6. Frire jusqu’à ce qu’ils soient brun dorés puis égoutter.

طريقة التحضير:

 

طريقة تحضير الـمـقـلـيـة

توضع المقادير الجافة في سلطانية. يضاف البيض في حال استعماله -1
يضاف 1 كوب ماء دافئ. في حال عدم استعمال البيض، يضاف كوب ونصف ماء -2
تخلط جيدا -3
تغطى العجينة وتترك لمدة ساعة ونصف لكي تختمر -4
تقلى في زيت كانولا على نار متوسطة وتقلب باستمرار -5
تقلى الى ان تصبح ذهبية اللون، ثم يصفى منها الزيت -6

    if i can make the puff puffs without the white cornmeal.
    if so do i need to adjust the indigents.
