Sorghum porridge is one of those traditional dishes that are very popular in many parts of Somalia. With the addition of buttermilk, sugar, and ghee, it is considered a very nutritious meal. That is why it is one of the essential Ramadan dishes for iftar (breaking the fast). Porridge (mishaari), whether made from wheat or sorghum, is the go-to dish when Somalis want to nourish the old, the feeble and the ailing.
In Somalia, after childbirth (umusha), new mothers are cared for forty days (afartan bax). This porridge is prepared for the new mother to speed up her recovery and it is considered a great diet for breastfeeding.
We have used sorghum flour but traditionally sorghum porridge is prepared from whole grains. The grains are soaked, then they are crushed using the traditional grinding stones and turned into a paste. Some prefer to add soaked rice and grind it with the sorghum. You can substitute rice flour for some of the sorghum flour in the recipe.
When preparing sorghum porridge, make sure that you do not add the flour to hot water as lumps will form immediately. First mix the flour with water and add the mixture to the water or milk before it becomes hot. We have used milk and water to cook the porridge but you can use water only.
For serving the porridge, it is preferable to add buttermilk rather than regular milk. The sweetness from the sugar (or honey) together with the sourness of the buttermilk, make the porridge tasty and delicious. You can add either untoasted sesame oil or clarified butter, or omit them altogether.
Le porridge au sorgho est un des plats traditionnels très populaires dans de nombreuses régions de Somalie. En ajoutant du babeurre, du sucre, et du beurre clarifié, il devient un repas très nutritif. C’est pour cela qu’il est un des plats essentiels du Ramadan pour l’iftar (la rupture du jeûne). Le porridge (mishaari), qu’il soit à base de blé ou de sorgho, est ce que les Somalis utilisent pour nourrir les gens âgés, les personnes faibles ou malades.
En Somalie, après l’accouchement (umusha), on prend soin des mères pendant 40 jours (afartan bax). Ce porridge est préparé pour la nouvelle mère pour accélérer son rétablissement et il est aussi considéré comme un aliment bénéfique pour l’allaitement.
Nous avons utilisé de la farine de sorgho mais traditionnellement le porridge se prépare avec la céréale entière. Les graines sont trempées, puis écrasées avec les mortiers et pilons traditionnels pour en faire une pâte. Certains préférent ajouter du riz détrempé et le moudre avec le sorgho. Vous pouvez substituer une partie de la farine de sorgho par de la farine de riz dans la recette.
Lorsque vous préparez le porridge, faites attention à ne pas verser la farine dans de l’eau chaude ce qui créerait des grumeaux immédiatement. Mélangez d’abord la farine avec un peu d’eau puis verser le mélange dans l’eau ou le lait avant qu’elle ne devienne chaude. Nous avons utilisé un mélange d’eau et de lait pour cuire le porridge mais vous pouvez utiliser seulement de l’eau.

½ cup (119 mL) Water (for mixing with the sorghum flour)
2 cups (474 mL) Milk
1 cup (237 mL) Water
¼ tsp (1.25 mL) Salt
¼ cup (50 g) Granulated sugar or honey
1 cup (237 mL) Buttermilk
1 Tbsp (15 mL) Untoasted sesame oil or melted butter (optional)
¼ tsp (1.25 mL) Ground black pepper

Ingrédients:

1. Place the sorghum flour in a bowl. 2. Add the water. 3. Mix well, making sure there are no lumps.

1. In a pot set on medium heat, pour in the milk. 2. Add the water. 3. Add the sorghum mixture. 4. Stir well. 5. Add the salt. 6. Add the sugar. 7. Stir continuously. 8. Lower the heat and cook for a total of 10 minutes. 9. This is the required consistency.

1. Dans un faitout sur feu moyen, verser le lait. 2. Ajouter l’eau. 3. Ajouter le mélange de sorgho. 4. Bien mélanger. 5. Ajouter le sel. 6. Ajouter le sucre. 7. Tourner sans s’arrêter. 8. Baisser le feu et cuire pendant 10 minutes. 9. Lorsque le porridge nappe une cuillère à soupe, c’est la consistance désirée.
