I left Somalia when I was 18. My elder brother and I had to sneak out of the country because at the time no one younger than 40 years was allowed to leave Somalia. Passports were not issued to “minors” aged 39 years or younger. Hard currency was also difficult to obtain and we took the little amount our family could arrange for us from the black market. We had a long and arduous journey waiting for us, but we were excited. Our destination was Saudi Arabia where we hoped to get scholarships to go to university.
I remember Mom’s parting words of advice: be good, work hard, and take care of each other. Then she added, “Canned tuna is cheap in Saudi Arabia and so is bread. You can save money that way.” Many cans of tuna later, we got the scholarships. Tuna was a lifesaver. I love tuna. Really do.
Years later, immediately after graduation, my stipend was cut and I was broke. Good old tuna came to the rescue. A couple of months later, I was employed as an architect. Tuna got me through. I adore tuna.
You cannot fathom my love for tuna unless you see our pantry. It is well-stocked with different types of canned tuna: in olive oil, vegetable oil, and in broth.

1 cup = 237 mL · 1 Tbsp = 15 mL · 1 tsp = 5 mL. All are level measurements.

Steps for preparing the tuna patties In a bowl, combine the mashed potatoes, canned tuna (flaked), bread crumps, parsley, green onions, garlic, paprika, salt, black pepper, and the beaten egg.
Mix well until combined, and divide into 10 equal parts.
Flatten each part on your hand and put the cheese in the middle, if using.
Form into a ball and flatten into a patty.
Fry in the olive oil on both sides using medium heat until golden brown.
To make the sauce, blend the mayonaise, lemon juice, parsley and mixed pickles until smooth.

Yes, you can bake them. Preheat the oven at 400°F for 20 minutes. Heat the baking tray in the oven until hot. Drizzle the patties with some oil and bake them for 10 minutes on each side.

Thank you. You can omit the egg, but use only 1/4 cup breadcrumbs so they don’t become dry.
