Our trip to Istanbul was everything our Spain trip was not. Months before our trip to Spain, we planned in detail, everything we were going to do: the places we were going to visit, the foods we wanted to try, the shows we wanted to watch, etc. We had a plan for every hour of our 17-day vacation. In addition to breakfast, which we usually had at the hotels we were staying at, we knew where we were going to eat lunch, afternoon snacks, and dinner, and we even made some reservations in advance. It seems that we overestimated how much we could eat and sample.

We remember the day we were in Toledo. It was midway through our vacation and we were seated in a restaurant that was known for its lechazo asado (roasted suckling lamb). Earlier that day, we had a wonderful Spanish breakfast and while touring the city, we snacked on delicious Toledo marzipan. Our appetite was completely gone. We stared at the lechazo asado and we looked at each other, both of us unable to lift a finger. A doggie bag was out of the question because dinner was already pre-planned and pre-paid. Cancelling dinner would also have meant cancelling the flamenco show. Luckily, the food did not go to waste. Our Spanish guide, who we invited to eat lunch with us, had a very big appetite. He ate two meals very quickly and took his time with the third as he kept recounting, in detail, about the glory days of General Franco. We were prepared to listen to anything while he was washing away our guilt.

Later that day, we cancelled some of our restaurant reservations and decided to slow down our pace. Lesson learned. For our Istanbul trip, we decided to try spontaneity. Apart from our hotel reservations, nothing else was pre-planned. It was a more relaxed vacation and we made plans on the go, discovering things as we went along. So what if we missed a particular attraction, or if we did not try a particular delicacy? We will have things to look forward to on our next trip.

One of the things we discovered in Istanbul was this meat pide (Turkish: kiymali pide). We loved it. It has a crunchy dough and a moist, meat and vegetable filling. The meal came after a tour of the Sultanahmet Mosque, Hagia Sophia, the Grand Bazaar, and a long walk in the old city. We worked up a huge appetite and we licked our plates clean.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Meat Pide:

  • 3 cups (420 g) All-purpose (plain) flour
  • 1 tsp (5 mL) Instant active dry yeast
  • 1 tsp (5 mL) Sugar
  • 1 ¼ cups (296 mL) Water (lukewarm)
  • 1 tsp (5 mL) Salt
  • 2 Tbsp (30 mL) Yogurt – For brushing BEFORE baking
  • 2 Tbsp (30 mL) Water – For brushing BEFORE baking
  • 2 Tbsp (30 mL) Butter (melted) – For brushing AFTER baking

Toppings:

  • ½ cup (75 g) Onions (finely diced)
  • 1 tsp (5 mL) Allspice
  • 1 tsp (5 mL) Sumac
  • 1 tsp (5 mL) Salt
  • ½ tsp (2.5 mL) Ground black pepper
  • 3 Tbsp (45 mL) Olive oil
  • 1 Tbsp (15 mL) Tomato paste
  • ½ lb (227 g) Ground beef
  • 1 cup (200 g) Tomatoes (finely diced)
  • ½ cup (75 g) Bell peppers (finely diced)
  • ¼ cup (38 g) Jalapeno peppers (seeded & diced)
  • ¼ cup (59 mL) Water

 

Directions:

 

Steps for preparing the meat pide

  1. Place the flour in a bowl. Make a well in the centre and add the yeast, sugar, water and salt.
  2. Mix well and knead for 5 minutes. Cover and let the dough rise for 1 hour.
  3. In a bowl, combine the chopped onions, allspice, sumac, salt, and black pepper. Rub the spices into the onions.
  4. Add the olive oil, tomato paste, ground beef, diced tomatoes, chopped sweet pepper and jalapeno peppers. Combine well but do not over-mix.
  5. Divide the dough into 6 equal pieces and shape into balls. Roll out each dough ball into a 10″ (25 cm) elongated oval.
  6. Spread on top of it about 3 tablespoons of the meat mixture.
  7. Fold the sides and shape like a boat.
  8. Mix the yogurt and water then brush the sides of the pide. Pull the pide from both ends to make it more elongated.
  9. Bake in a pre-heated oven with a pizza stone or baking sheet at 500°F/260°C for 15 minutes. When done, brush the sides with butter and enjoy while still crunchy.

  • 3 koob (420 g) Bur cad
  • 1 qy (5 mL) Qamiir rooti
  • 1 qy (5 mL) Sokor
  • 1 ¼ koob (296 mL) Biyo (qandac)
  • 1 qy (5 mL) Cusbo
  • 2 QW (30 mL) Caano fadhi
  • 2 QW (30 mL) Biyo
  • 2 QW (30 mL) Buuro (la dhalaaliyay)

Korkasaarka:

  • ½ koob (75 g) Basal (aad loo yaryareeyay)
  • 1 qy (5 mL) Filfil fameeykaan
  • 1 qy (5 mL) Sumaa
  • 1 qy (5 mL) Cusbo
  • ½ qy (2.5 mL) Filfil madoow shiidan
  • 3 QW (45 mL) Saliidda oliifada
  • 1 QW (15 mL) Yaanyo shiishiid
  • ½ baawun (227 g) Hilib lo’aad shiidan
  • 1 koob (200 g) Yaanyo (aad loo yaryareeyay)
  • ½ koob (75 g) Barbarooni (aad loo yaryareeyay)
  • ¼ koob (38 g) Basbaas “halabeenyo” (miraha laga saaray oo la jarjaray)
  • ¼ koob (59 mL) Biyo

 

Diyaarinta:

 

Diyaarinta biitsada Turkiga

  1. Burka baaquli ku shub dhexdana banneey. Ku shub qamiirka, sokorta, biyaha iyo cusbada.
  2. Si fiican u rifaaq muddo 5 daqiiqo. Dabool oo ha qamiiro muddo hal saac.
  3. Isku dar basasha la yaryareeyey, buhaarka “allspice,” sumaa’, cusbada iyo filfisha madoow. Basasha geedaha ku rug.
  4. Ku dar saliidda oliifada, yaanyo shiishiidka, hilibka shiidan, yaanyada la yaryareeyey, barbarooniga iyo basbaas halabeenyo. Isku qas, laakiin qasidda ha ka badinin.
  5. Cajiinka u qaybi 6 qaybood kaddibna mid walba kuus. U fidi dherer 10 inji (25 sentimitir).
  6. Saddex qaaddo hilibka dul saar cajiinka, kuna fidi.
  7. Dhinacyada laab oo sida doon oo kale ka dhig.
  8. Isku qas caana fadhiga iyo biyaha. Dhinacyada mari, kaddiba wax yar kala jiid.
  9. Ku dub foorno lasii kululeeyey kuna jiro dhagaxa biitsada ama bir foorno 500°F/260°C muddo 15 daqiiqo. Dhinacyada buuro mari. Qaddin iyada oo weli qababacleynaysa.

Notre voyage à Istanbul a été l’opposé de notre voyage en Espagne. Des mois avant notre voyage en Espagne, nous avions planifié en détail tout ce que nous allions faire: les endroits que nous allions visiter, les plats que nous souhaitions goûter, les spectacles que nous voulions voir, etc. Nous avions un emploi du temps heure par heure pour les 17 jours de notre voyage. En plus du petit déjeuner, que nous prenions en général à l’hôtel, nous savions où nous allions déjeuner, goûter et dîner, et nous avions même fait des réservations à l’avance. Il se trouve que nous avions surestimé notre appétit et la capacité de nos estomacs.

Nous nous rappelons le jour où nous sommes allés à Toledo. Nous en étions à la moitié de notre voyage et nous étions attablés dans un restaurant renommé pour son lechazo asado (agneau de lait rôti). Plutôt dans la journée, nous avions pris un merveilleux petit déjeuner espagnol et avions grignoté du massepain de Toledo pendant notre visite de la ville. Nous n’avions plus d’appétit du tout. Nous avons regardé le lechazo asado puis nous nous sommes regardés, incapables d’avaler une seule bouchée. Nous ne pouvions pas demander un doggie bag car le dîner était déjà organisé et payé. Annuler le dîner aurait entraîné l’annulation du spectacle de flamenco. Heureusement, le repas n’a pas été perdu pour tout le monde. Notre guide Espagnol que nous avions invité à déjeuner, avait un très gros appétit. Il engloutit les deux repas en vitesse et pris son temps pour le troisième pendant lequel il nous raconta, en détail, la splendeur du règne du Général Franco. Nous étions préparés à écouter tout ce qu’il nous racontait tandis qu’il faisait disparaître notre culpabilité.

Plus tard dans la journée, nous avons annulé certaines réservations au restaurant et décidé de ralentir un peu. Leçon retenue. Pour voyage à Istanbul, nous avons essayé d’être plus spontanés. A part les réservations d’hôtels, nous n’avions rien planifié d’autre. Le voyage a été plus détendu et nous avons fait notre emploi du temps au fur et à mesure, en allant à la découverte. Tant pis si nous avons manqué telle attraction, ou si nous n’avons pas goûté telle spécialité. Cela nous fera des choses à faire pour notre prochain voyage.

Une des choses que nous avons découvertes à Istanbul a été le pide à la viande (en Turc: kiymali pide). Nous adorons ce plat. Il a une pâte croustillante et moelleuse, une garniture de viande aux légumes. Nous avons pris notre repas après la visite de la Mosquée Bleue, de la Basilique Sainte Sophie, du Grand Bazar et une longue marche dans la vieille ville. Nous avions l’appétit bien ouvert et nous avons vidé nos assiettes.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Pide à la Viande:

  • 3 mesure (420 g) de Farine Blanche
  • 1 cc (5 mL) de Levure sèche instantanée
  • 1 cc (5 mL) de Sucre
  • 1 ¼ mesure (296 mL) d’Eau (tiède(s))
  • 1 cc (5 mL) de Sel
  • 2 cs (30 mL) Yaourt – Pour appliquer AVANT la cuisson
  • 2 cs (30 mL) d’Eau – Pour appliquer AVANT la cuisson
  • 2 cs (30 mL) de Beurre (fondu) – Pour appliquer APRÈS la cuisson

Garnitures:

  • ½ mesure (75 g) d’Oignon (coupés en tous petits dés)
  • 1 cc (5 mL) Quatre-épices (piment de la Jamaïque)
  • 1 cc (5 mL) de Sumac
  • 1 cc (5 mL) de Sel
  • ½ cc (2.5 mL) de Poivre Noir moulu
  • 3 cs (45 mL) d’Huile d’Olive
  • 1 cs (15 mL) de Concentré de Tomate
  • ½ livre (227 g) de Boeuf haché
  • 1 mesure (200 g) de Tomate (hachées en petits dés)
  • ½ mesure (75 g) de Poivrons (finement hachés)
  • ¼ mesure (38 g) de Piments Jalapeno (sans les graines, hachés)
  • ¼ mesure (59 mL) d’Eau

 

Instructions:

 

Étapes de préparation du pide à la viande

  1. Verser la farine dans un bol. Creuser un puit au centre et ajouter la levure, le sucre, l’eau et le sel.
  2. Bien mélanger et pétrir 5 minutes. Couvrir et laisser la pâte lever pendant 1 heure.
  3. Mettre les oignons hachés, le quatre-épices, le sumac, le sel et le poivre noir dans un bol. Frotter les épices sur les oignons.
  4. Ajouter l’huile d’olive, le concentré de tomate, le boeuf haché, les tomates en dés, les poivrons doux hachés et les piments jalapeno. Bien mélanger mais sans trop insister.
  5. Diviser la pâte en 6 morceaux égaux et former des boules. Étaler chaque boule en ovale allongé de 10” (25 cm).
  6. Étaler 3 cuillères à soupe de farce à la viande sur la pâte.
  7. Plier les bords et former un bateau.
  8. Mélanger le yaourt et l’eau puis brosser les bords du pide avec. Tirer sur le pide par les deux bouts pour l’allonger encore plus.
  9. Cuire 15 minutes sur une pierre à pizza ou une plaque de cuisson dans un four préchauffé à 500°F/260°C. Une fois cuits, brosser les pides avec du beurre et consommer rapidement tant qu’ils sont croustillants.

طريقة التحضير:

 

طريقة تحضير بيتزا اللحم التركية

يوضع الطحين في سلطانية وتعمل حفرة في الوسط ثم توضع الخميرة، السكر، الماء والملح -1
تخلط وتعجن لمدة 5 دقائق ثم تغطى وتترك تختمر لمدة ساعة -2
يدعك البصل المفروم مع البهار الحلو، السماق، الملح والفلفل الاسود -3
يضاف الزيت، معجون الطماطم، اللحم المفروم، الطماطم، الفلفل الرومي وفلفل هلبينيو. تخلط برفق ولا يبالغ في الخلط -4
تقسم العجينة الى 6 اقسام وتشكل على هيئة كور ثم تفرد بطول 25 سم -5
توضع 3 ملاعق كبيرة من الحشوة في الوسط وتفرد -6
تطوى جوانب العجينة وتشكل على هيئة قارب. -7
يخلط الزبادي والماء ويدهن بها الجوانب ثم تسحب البيتزا من الطرفين. -8
تخبز في فرن مسخن مسبقا وبه حجر البيتزا او صحن الفرن على درجة حرارة 260 د.م. (500 ف) لمدة 15 دقيقة تدهن الجوانب بالزبدة وتقدم ساخنا -9
