This is an easy and tasty rice dish. It brings back beautiful memories of Mombasa, Kenya. However, this dish is not limited to Kenya but is popular in many parts of East Africa.

The cumin seeds gives it a flavour that is hard to resist and the potatoes make it very delicious. There are many variations of the dish. You can add diced carrots and peas, or you can substitute the potatoes with lima beans.

It can be served with any stew that you like. We served it with Swahili Fish Curry (Mchuzi Wa Samaki) and it was an exceptional combination.

Ingredients

1 cup = 237 mL · 1 Tbsp = 15 mL · 1 tsp = 5 mL. All are level measurements.

Method

  1. Wash the basmati rice, then soak for 10 minutes.

  2. In a pan set on medium heat, saute the onions in the oil, then add the garlic and the vegetable seasoning. Add the cumin seeds and stir well, then add the diced potatoes. Cover and cook for 10 minutes.

  3. With the potatoes half-cooked, add the soaked rice and stir well. Add the boiling water, then cover tightly and cook for 15 minutes on very low heat.

  4. Serve with Swahili Fish Curry (Mchuzi Wa Samaki) or any stew that you prefer.

      You will not get the same flavour, but you can use cumin seasoning.

    I am new beginner in the somali kitchen, and I made this dish yesterday for the first time.

    The taste was great, but I experienced that my rice was a little bit undercooked. I used the exact same amount of rice and water in the recipe. How low does the heat have to be? I think maybe my heat was too low?

      Thank you for the comment and the question. The heat has to be at the lowest during the last 15 minutes. Make sure you soak the rice for 10 minutes and when you add the HOT water, lower the heat immediately and cover well.
