Laddu is but one of the delicacies that was brought by Indian immigrants who settled in Brava, Somalia. They brought their typical dishes which were adapted based on locally available ingredients. In Brava, laddu was prepared with different combinations of the following: ground sesame seeds, ground peanuts, rice flour, and ground corn nuts. However, to qualify as laddu for the Bravanese, ground sesame seeds must always be present and must be the main ingredient. The binding agent is a heavy sugar syrup.

As in elsewhere in Somalia, there were no written recipes in Brava. Many recipes require tutoring as well as a lot of practice to perfect them. The traditional Bravanese recipe for laddu is one of those recipes that is easy to remember and prepare. The recipe calls for equal parts of ground ingredients and sugar. For example, if the weight of the ground ingredients (sesame seeds, peanuts, etc.) is one kilogram, the sugar should also be one kilogram. It is an easy recipe and it works all the time.

In this recipe, we broke with tradition and reduced the sugar by a fifth. The resulting laddu is more crumbly and requires that you work fast after transferring the mixture to a rolling surface. If it dries out quickly and is no longer pliable, there is no need to worry. Place it back in the pot and add a couple of tablespoons of water, and you are back in business.

We hope you will like this simple yet delicious sweet. As you sit down to enjoy the laddu, we would like to leave you with a thought that will make this delicacy taste even better. Imagine a time when there was no electricity, when a charcoal fire was used to toast the ingredients, when an ijiwe (grinding stone) was used to grind them, when you had to walk across town to the only family that had a stone dedicated for that purpose. Yes, that should give you the same feeling as listening to a radio report about rush hour traffic as you sip an ice-cold drink on a remote island. Now, enjoy.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Laddu:

  • ⅔ cup (100 g) Peanuts
  • 1 cup (150 g) White sesame seeds
  • 1 cup (200 g) Granulated white sugar
  • ½ cup (118 mL) Water
  • ½ tsp (2.5 mL) Cardamom (ground)
  • 1 Tbsp (15 mL) Oil – For the rolling surface

 

Directions:

 

Steps for preapring the laddu

  1. Roast the peanuts until golden brown and crush in a food processor.
  2. Using medium heat, toast the sesame seeds until fragrant. Let cool down completely then grind in a food processor.
  3. In a pot set over medium heat, combine the sugar and water. Boil for 5 minutes.
  4. Add the crushed peanuts and the ground sesame seeds. Stir continuously.
  5. Add the ground cardamom.
  6. Cook for two minutes.
  7. Transfer to an oiled surface. We wrapped a cutting board with aluminum foil.
  8. Roll out to 1/2 inch thickness, and cut as desired. If the mixture dries out and becomes crumbly, do not panic. Place it back in the pot, add two tablespoons water and cook until it becomes pliable.
  9. You can also shape them into balls.

Mukawinaadka:

(QW waa qaaddo weyn – midda cuntada lagu cuno; qy waa qaaddo yar)
(1 koob = 237 mL = 2.4 dl; 1 QW = 15 mL; 1 qy = 5 mL)

 

Laddu:

  • ⅔ koob (100 g) Loos
  • 1 koob (150 g) Sisin cad
  • 1 koob (200 g) Sokor cad
  • ½ koob (118 mL) Biyo
  • ½ qy (2.5 mL) Hayl (shiidan)
  • 1 QW (15 mL) Saliid

  1. Lowska dub ilaa uu ka gaduuto, kaddibna shiid.
  2. Dab dhexdhexaad ah adigoo isticmaalaysa, sisinta salool ilaa ay ka carafto. Dhig ha qaboowdo, kaddibna shiid.
  3. Sokorta iyo biyaha isku dar. Dab dhexdhexaad ah ku kari muddo 5 daqiiqo.
  4. Ku dar lowska iyo sisinta la shiiday. Si fiican u walaaq.
  5. Ku dar heylka shiidan.
  6. Muddo laba daqiiqadood kari.
  7. Ku geddi meel lagu fidiyo oo saliid la mariyay. Qoriga wax lagu jarjaro alamuunyam ku duub.
  8. U fidi dhumuc le’eg 1/2″ (1.25 cm). Sida aad jeceshahay u jarjar. Hadday adkaato, ha welwelin. Digsiga ku celi, laba qaaddo biyo ku dar. Kari adigoo walaaqeysa ilaa uu ka noqdo wax la fidin karo.
  9. Waad kuus kuusi kartaa haddaad jeceshahay.

Le Laddu est une des spécialités gastronomiques introduites par les immigrants Indiens qui sont venus s’installer à Brava, Somalie. Ils ont amené leurs plats traditionnels qui ont ensuite été adaptés avec les ingrédients locaux. A Brava, le laddu était préparé avec des combinaisons des ingrédients suivants: graines de sésame moulues, cacahuètes hachées, farine de riz, et grains de maïs moulues. Cependant, pour être qualifiée de variante Bravanaise du laddu, des graines de sésame moulues devaient toujours être présentes et être l’ingrédient principal. Un sirop de sucre épais sert de liant.

Comme partout en Somalie, il n’a pas de recette écrite à Brava. Beaucoup de recettes nécessitent un apprentissage ainsi que beaucoup de pratique pour être maîtrisées. La recette traditionnelle Bravanaise du laddu est une de ces recettes faciles à mémoriser et à préparer. La recette nécessite autant d’ingrédients moulus que de sucre. Par exemple, si le poids des ingrédients moulus (graines de sésame, cacahuètes, etc) est de un kilogramme, la quantité de sucre doit être aussi de un kilogramme. C’est une recette simple qui marche à tous les coups.

Dans cette recette, nous avons rompu avec la tradition et réduit le sucre d’un cinquième. Le laddu obtenu est plus friable et nécessite d’être travaillé rapidement après le transfert de la pâte sur le plan de travail. Si elle sèche trop vite et n’est plus assez souple, il ne faut pas s’inquiéter. Remettez-la dans la casserole et ajoutez deux cuillères à soupe d’eau, et c’est reparti.

Nous espérons que vous apprécierez ce bonbon simple et délicieux. Nous aimerions vous faire apprécier cette confiserie encore plus quand vous vous assoirez pour déguster le laddu. Imaginez une époque où il n’y avait pas d’électricité, quand le feu de charbon servait à griller les ingrédients, quand une ijiwe (pierre à moudre) était utilisée pour les réduire en poudre, quand il fallait traverser la ville à pied pour se rendre chez la seule famille qui possédait cet outil. Oui, cela devrait vous évoquer la même sensation que d’écouter un reportage radio sur la circulation aux heures de pointe alors qu’on se trouve sur une île lointaine en train de déguster une boisson fraîche. Maintenant, appréciez.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Laddu:

  • ⅔ mesure (100 g) de Cacahuètes
  • 1 mesure (150 g) de Graines de Sésame Blanc
  • 1 mesure (200 g) de Sucre Blanc en Poudre
  • ½ mesure (118 mL) d’Eau
  • ½ cc (2.5 mL) de Cardamome (moulue)
  • 1 cs (15 mL) d’Huile – pour la surface de travail

 

Instructions:

 

Étapes de préparation des laddu

  1. Griller les cacahuètes jusqu’à ce qu’elles colorent et hacher dans un robot ménager.
  2. Griller les graines de sésame à feu moyen, jusqu’à ce qu’elles commencent à sentir. Laisser refroidir complètement puis broyer dans le robot.
  3. Verser le sucre et l’eau dans un faitout chauffé à feu moyen. Laisser bouillir 5 minutes.
  4. Ajouter les cacahuètes hachées et les graines de sésame moulues. Tourner constamment.
  5. Ajouter la cardamome moulue.
  6. Cuire 2 minutes.
  7. Transférer sur une surface huilée. Nous avons recouvert une planche à découper de feuille d’aluminium.
  8. Étaler sur ½ pouce (1,25 cm) d’épaisseur, et découper comme vous le souhaitez. Si la pâte sèche et devient cassante, ne paniquez pas. Remettez-la dans le faitout, ajoutez deux cuillères à soupe d’eau et cuire jusqu’à ce qu’elle redevienne souple.
  9. Vous pouvez aussi faire des boules.

طريقة التحضير:

 

طريقة تحضير اللَدّو

يحمص الفول السوداني الى ان يصبح لونه ذهبيا ثم يطحن -1
يحمص السمسم على نار متوسطة الى ان تخرج رائحته الزكية. يترك ليبرد ثم يطحن -2
يخلط الماء مع السكر ويطهى على نار متوسطة مدة خمسة دقائق -3
يضاف الفول السوداني والسمسم المطحون، ويحرك باستمرار -4
يضاف الهيل المطحون -5
يطهى لمدة دقيقتين -6
ينقل الى سطح مدهون بالزيت. يلف لوح التقطيع بورق الألمونيوم -7
يفرد الى سماكة 1.25 سم تقريبا. اذ اصبح الخليط هشاً وغير قابل للفرد، يعاد الى القدر ويضاف اليه ملعقتين ماء ثم يطهى الى ان يصل الى القوام المطلوب -8
يمكن ان يشكل الى كور -9
