This has been the seventh weekend in a row that we had guests over for lunch. No, we are not complaining, but just stating it as a fact. Actually, we got to see many friends and family members that we have not seen for years and we enjoyed their company. Whenever we have guests coming over, we also invite other family members who live close by. This way, the guests are always more than twenty. In our home, twenty-something has a different meaning: a Somali gathering…

Cooking for that many people requires pre-planning and there are several things that we make ahead. This way, we get to spend time with the guests; and overall it makes for a less stressful event for us. With so many hands, clean-up is a breeze. All we have to do is show where things belong. 

The forecast called for a beautiful, sunny day and we decided to fire up the grill. It is not yet summer, but the weather has been just phenomenal this past couple of weeks. We have 5 more months of grilling to look forward to and we couldn’t be more excited!

We ordered beef tenderloin from the butcher but we did not end up paying too much for it. We buy ungraded beef and what that means is you get meat that has little or no marbling. Marbling makes the meat more tender, but with tenderloin it is not important, especially when making kebabs. No marbling means leaner and healthier, but don’t get us wrong, we don’t want to leave you with the impression that marbling and good quality meat are unimportant. We both love a dry aged and richly marbled strip loin steak, but that is a story for another day.

 

C’est le septième week-end d’affilé que nous avons des invités à déjeuner. Non, nous ne nous plaignons pas, nous faisons juste un constat. En plus, nous avons reçu des amis et des membres de nos familles que nous n’avions pas vu depuis des années et nous avons apprécié leur compagnie. Quand nous avons des invités à la maison, nous invitons aussi nos proches parents qui habitent alentour. Comme ça, nous avons toujours une vingtaine d’invités. Chez nous, la vingtaine a une signification différente: une fête Somali.

Faire à manger pour autant de personnes nécessite de planifier en amont et il y a plusieurs choses que nous préparons à l’avance. Comme ça, nous avons plus de temps disponible pour nos invités; et dans l’ensemble la journée est moins stressante pour nous. Avec tant de mains disponibles, le nettoyage se fait sans difficulté. Tout ce que nous avons à faire c’est indiquer où se rangent les choses.

La météo prévoyait une belle journée ensoleillée donc nous avons décidé d’allumer le barbecue. Ce n’est pas encore l’été, mais le temps a été phénoménal ces deux dernières semaines. Nous avons 5 mois à venir de grillades et nous en sommes on ne peut plus excités.

Nous avons commandé du filet de boeuf à notre boucher mais nous n’en avons pas eu pour trop cher. Nous achetons du boeuf sans label ce qui veut dire une viande qui est très peu ou pas du tout marbrée. Lorsque la viande est marbrée elle est plus tendre, mais pour du filet ça n’a pas d’importance, en particulier pour des brochettes. Une viande non marbrée est plus maigre donc plus saine, mais ne vous méprenez pas, nous n’essayons pas de vous faire croire que nous n’utilisons jamais de viande marbrée ou de bonne qualité. Nous adorons tous deux un bon faux filet affiné et bien marbré, mais c’est une histoire pour une autre fois.

 

Ingredients:

Serves 8

2.2 lb (1 kg)                                 Beef tenderloin (filet) or top sirloin (also known as top butt)
½                                               Onion
3                                                Tomatoes (firm, underripe)
2                                                Sweet peppers (red & yellow)
1 Tbsp (15 mL)                             Garlic cloves (minced)
1 Tbsp (15 mL)                             Cilantro (chopped)
1 tsp (5 mL)                                 Salt
½ tsp (2.5 mL)                             Black pepper (ground)
¼ cup (59 mL)                              Olive oil

2.2 lb (1 kg)                                 Hilib falleeti (‘filet’) ama ‘top sirloin’ (waxaa kaloo loo yaqaannaa ‘top butt’)
½                                               Basal
3                                                Yaanyo (adag oo xoogaa ceyriin ah)
2                                                Barbarooni (gaduud & jaallo midabka huruudda)
1 QW (15 mL)                              Tuun (toon) la-xoqay
1 QW (15 mL)                              Kabsaro caleen
1 qy (5 mL)                                 Cusbo
½ qy (2.5 mL)                             Filfil madow (shiidan)
¼ koob (59 mL)                           Saliidda oliivada

Wuxuu ku-filan yahay 8 qofood 

 

Ingrédients:

Pour 8 personnes

2.2 livres (1 kg) de filet de boeuf ou d’aloyau
½ Oignon
3 Tomates (fermes, pas trop mûres)
2 poivrons (rouge et jaune)
1 cs (15 mL) d’ail haché
1 cs (15 mL) de coriandre haché
1 cc (5mL) de sel
½ cc (2.5 mL) de poivre noir moulu
¼ de mesure (59 mL) d’Huile d’Olive

Steps for preparing the kebabs - Étapes de préparation des brochettes

1. Cut the sweet peppers into large pieces, roughly 1½” to 2″ squares.  2. Cut the onion into large pieces, roughly 1½” to 2″ squares. 3. Cut the tomatoes into quarters and core as shown. 4. Combine the minced garlic, chopped cilantro, salt, black pepper, and olive oil. 5. Cut the meat into 1½”  cubes. 6. Combine the meat with the marinade. 7. If you are using a cut other than tenderloin, let it marinade for 3 hours to overnight in the fridge. 8. Skewer the meat and the vegetables, alternating between them. 9. Grill on high heat for 12 minutes, turning the skewers every 3 minutes.

1. Barbarooniga gabalo waaweyn u-jarjar, taqriiban 1½” to 2″ .  2.  Basasha gabalo waaweyn u-jar jar, taqriiban 1½” to 2″ . 3. Yaanyada afar gabal u-jar. 4. Isku dar tuun (toon), kabsaro caleen, cusbo, fulfil madow, saliida. 5. Hilibka waawey u-jar 1½”  . 6. Carafta aad qastay hilibka ku rid. 7.  Haddaadan faleti isticmaalaynin, hilibka qas 3 saacadood ama ilaa maalinta dambe qaboojiyaha dhig. 8. Hilibka iyo khudradda biraha ama qoryaha gelgeli, isweydaari khudradda iyo hilibka. 9. Dab sare ku dub muddo 12 daqiiqo,  3 -dii daqiiqoba geddi.

1. Couper les poivrons en gros morceaux, des carrés d’environ 4 à 5 cms. 2. Couper l’oignon en gros morceaux carrés de 4 à 5 cms. 3. Couper les tomates en quartiers et enlever le coeur, voir photo. 4. Mélanger l’ail haché, le coriandre haché, le sel, le poivre moulu et l’huile d’olive. 5. Couper la viande en cubes de 4 cm. 6. Mélanger la viande et la marinade pour bien la recouvrir. 7. Si vous utilisez un autre morceau que du filet de boeuf, laisser mariner de 3 heures à une nuit dans le réfrigérateur. 8. Piquer la viande et les légumes en les alternant. 9. Griller à feu fort pendant 12 minutes en retournant les brochettes toutes les 3 minutes.

Some experts say that it is best to wait for 5 minutes before serving the kebabs so the juices will redistribute. We like to bite into them while still hot and juicy. If a few drops run down your chin, it is O.K. 

Certains experts préconisent d’attendre 5 minutes avant de servir les brochettes pour que les sucs se répartissent mieux. Nous aimons les manger tout de suite lorsqu’elles sont chaudes et juteuses. Si un peu de jus coule sur votre menton, ce n’est pas grave.

    If we haven’t got a grill, is there another way to get the same great kebabs? perhaps on the stove? Thank you

      You can use a stove top grill or griddle. Since grilling is done on high heat, you need a good exhaust fan, or open a window for ventilation. There is one very important thing to remember: NEVER use a charcoal grill indoors. You also should not use an outdoor gas grill indoors. When buying a grill for indoor use make sure the instructions say that it is safe to use indoors.

    Eat meat with no side dish how so what should i serve the meat with any suggestions please ?
