Firni is not one of the foods we were familiar with growing up in Somalia. It was egg custard and tapioca pudding that we were accustomed to. Firni has a magic of its own. Even before digging in with your spoon and tasting its satiny-smooth texture, this dessert will excite your senses. The milky whiteness of firni and the bright green colour of the pistachio topping make it a very pretty-looking dessert. Then there is the scent of rose water. Tiltillating.

We used whole milk (3.25% milk fat) for this recipe. We believe it provides enough creaminess and does not compromise the dish. Those looking for a richer pudding can substitute a cup of table cream for that extra creaminess.

When pouring hot firni into the serving bowls, it will look very runny but will thicken as it cools down. Let the firni cool down before refrigerating. Firni is usually served cold but you can also serve it hot or at room temperature.

Ingredients

1 cup = 237 mL · 1 Tbsp = 15 mL · 1 tsp = 5 mL. All are level measurements.

  2. Combine the milk and sugar in a pan set over medium heat.

  3. In a bowl, combine the corn starch with ½ cup milk and stir well.

  4. Add the corn starch mixture when the milk starts to foam and stir vigorously. Cook for 1 minute.

  5. Add the rose water and stir well then turn off the heat.

  6. Pour into 6 bowls and after the firni cools down, refrigerate for 3 hours.

  7. Garnish with pistachios before serving.

    Amazing! Thank you so much for posting this I have only enjoyed it in fancy afghani restaurant never thought I could find a recipe. Quick question where do you get rose water from? I live in Alberta, Canada I can’t find it around me :S

      Did you try ethnic stores? Indian and middle eastern grocers cary it. If you cannot find rose water then look for orange blossom water or kewra water.
