There are sweets that you eat because they taste good; then there are those that go a step further by bringing back memories of your childhood, a way of life long gone, of places fondly missed. That is what shushumoow (kalkals) does for us. In Brava, Somalia, they are known as zinanaande or zinanoonde.
The art of making these sweets seems to have been lost. We have seen them made so hard that they are a challenge to eat. Some jokingly call them kuwa ilkaha u-daran (the ones that are hostile to your teeth). Well, we have good news for you. You can now cancel that portion of your dental insurance that covers tooth breakages resulting from eating shushumoow. 🙂

1 cup = 237 mL · 1 Tbsp = 15 mL · 1 tsp = 5 mL. All are level measurements.

Preparing the dough Measure the flour into a bowl, and add the sugar, salt & baking powder.
Add the oil.
Add the egg (or 3 Tbsp oil).
Add the water.
Mix well for 5 minutes, or 10 minutes if mixing by hand.
Shape the dough into a disc and and let it rest for 10 minutes.
Shaping and frying the kalkals Cut the dough into 1-inch balls.
Put the dough on the comb or fork (watch the video).
Flatten the dough on the comb.
Roll it up to shape the kalkals.
Deep fry the kalkals on medium heat for 10 minutes.
Transfer the kalkals to a colander.
Melt the sugar and water.
Add the kalkals.
Mix well until the sugar crystallizes.

Salam!! First of all, thanks for all the amazing recipes! They’ve really come in handy. I have a question about this one though. Is it possible to freeze the dough (or refrigerate it) in order to make the sweets later? If yes, for how long? And would I set it aside for 10 minutes and then put it away? Thanks again!!
