Mashmash (rhymes with hush-hush) is a classic Somali snack that is usually paired with samosas. It is on the greasy side but in Somalia, greasy was not always associated with bad. There was a time when oily meant nutritious. We remember seeing construction workers in Mogadishu using mashmash as a sandwich filling. At the time we thought it was strange, sandwiching bread in bread, but come to think of it, that was a brilliant idea! Who needs mayonnaise?
What we like most about eating mashmash with samosas is the wonderful sweet and salty combination. It is a combination that you will encounter often as you learn more and more about Somali food. Examples of sweet and salty combinations are dates with rice, maashara with meat dishes, ambabur (cambaabur), but the most visible example is bananas with rice or spaghetti. While some might dismiss it as an extreme “ethnic” practice, those initiated in it will never go back. The realities of life in the diaspora have altered some of our eating habits, but we remember the times in our childhood when we would refuse to eat our food if bananas were not on the plate.
Mashmash was mainly street food and they were a convenient and affordable mid-morning and late afternoon snack. Made of only flour, water and sugar, they are easy to prepare. They are also one of the foods that you will find regularly on the Somali iftar table (breaking the fast in Ramadan).
For us, being more health conscious has meant that mashmash is one of those guilty pleasures that we crave every now and then.
Mashmash (rime avec cache-cache) est un encas Somali classique qui est servi d’habitude avec des samosas. C’est plutôt gras mais en Somalie, le gras n’a pas toujours été associé avec mauvais. Il fut un temps où gras voulait dire nutritif. Nous nous rappelons avoir vu les ouvriers du bâtiment à Mogadishu qui utilisaient du Mashmash comme garniture de leur sandwich. Sur le coup, cela nous a semblé étrange, de faire un sandwich de pain au pain, mais en y repensant , c’était une idée brillante! Pas besoin de mayonnaise.
Ce que nous préférons le plus quand nous mangeons des mashmash avec des samosas, c’est le fabuleux mélange sucré-salé. Vous allez souvent retrouver ce mélange sucré-salé en apprenant la cuisine Somali. Les exemples de sucré et salé sont le riz aux dattes, maashara avec des plats de viande, ambabur (cambaabur), mais le meilleur exemple sont les bananes servies avec du riz ou des spaghetti. Si certains rejettent cette pratique “ethnique” extrême, les initiés ne s’en lassent pas. Les réalités de la vie dans la diaspora ont altéré certaines de nos habitudes alimentaires, mais nous nous rappelons que pendant notre enfance nous refusions de manger notre repas s’il n’y avait pas des bananes dedans.
Les Mashmash étaient surtout vendus dans la rue et servaient d’en-cas pratique et pas cher pour le matin ou l’après-midi. Composés seulement de farine, d’eau et de sucre, ils sont faciles à préparer. Ils font aussi partie des plats que vous trouverez régulièrement sur une table Somali pour iftar (rompre le jeûne pendant Ramadan).
Pour nous, faire plus attention à notre santé implique que les mashmash sont devenus des petits plaisirs qui nous font envie de temps en temps.
Ingredients:
(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements
Yields 16 Mashmash
2⅔ cups (374 g) All-purpose flour
1¾ cups (415 mL = 4.2 dl) Water
Syrup (see below)
Canola oil for frying
For the syrup:
1 cup (200 g) Sugar
1 cup (237 mL = 2.4 dl) Water

2⅔ koob (374 g) Bur cad
1¾ koob (415 mL = 4.2 dl) Biyo
Sokor biyo lagu kariyay (Syrup) (soo’da hoos ka-fiiri)

Sokorta la-karkariyay (syrup):

Ingrédients:
(cs est une cuillère à soupe; cc est une cuillère à café)
(1 mesure = 237 mL; 1 cs = 15 mL; 1 cc = 5 mL); mesures rases
Pour 16 Mashmash
2⅔ mesures (374 g) de Farine Blanche
1¾ mesure (415 mL) d’Eau
Sirop (voir ci-dessus)
Huile de Colza pour la friture
Pour le sirop:
1 mesure (200 g) de Sucre
1 mesure (237 mL) d’Eau
Combine the sugar and water and bring to a boil. Turn off the heat and let it cool down completely.
Sokorta iyo biyaha isku dar, kaddibna karkari. Dabka ka-demi oo dhaaf ha-qaboowdo.
Mélanger le sucre et l’eau et porter à ébullition. Couper le feu et laisser refroidir complètement.
1. Place the flour in the bowl of a mixer. 2. Add the water. 3. Mix for 6 minutes on low. If mixing by hand, beat well for ten minutes as shown in the video. 4. Add the cooled syrup. 5. Mix for 1 minute. 6. Set a round bottom frying pan on medium-high heat and add the oil. 7. Use a quater cup of batter each time. 8. Fry until the edges turn golden brown. 9. Drain the oil and transfer onto a paper towel.

Sokorta oo qaboowday ku-shub. 5. Hal daqiiqo qas. 6. Digsi salkiisa godan yahay, saar dab dhexdhexaad-sare ah, saliidna ku-shub. 7. Hadba rubac koob oo cajiin ah shiil. 8. Shiil ilaa ay dhinacyada ka-guduutaan. 9. Saliidda ka-miir.
1. Mettre la farine dans le bol du mixer. 2. Ajouter l’eau. 3. Mélanger pendant 6 minutes à vitesse lente. Si vous mélangez à la main, pétrir pendant 10 bonnes minutes comme montré sur la vidéo. 4. Ajouter le sirop refroidi. 5. Mélanger pendant 1 minute. 6. Faire chauffer l’huile dans une casserole à fond rond (comme un wok) à feu moyen. 7. Utiliser un quart de mesure de pâte à chaque fois. 8. Frire la pâte jusqu’à ce que les bords deviennent marron doré. 9. Égoutter de l’huile et poser sur du papier absorbant.

I haven’t tried any of your recipes because I stumbled on it today. I have seen all of your videos on youtube and I fell in love with every recipe that was in there. Especially the mashmash because my mom used make them for me when I was little. Whenever I was sick she would ask me “what would you like to eat”? I would always ask for the “mashmash”. Ramadan mubarak sister Ayan. These are mashmash not macsharo, macsharo is made out of rice or rice flour nowadays. We had them for iftar last night. We poured some syrup and coconut milk on the top and they were delicious. There is no harm in turning them over but it is not necessary. Thank you for your comments.

Ohhhhh these look amazing! The video captured perfectly their texture, that I can almost feel how soft and chewy they are. I so need to get myself a rounded bottom frying pan to make mashmash and the rice cake during Ramadan. What an interesting way of cooking, I can only imagine how great they taste. We had them for iftar last evening. After frying them, we drizzled them with a little syrup and coconut milk and they became even more delicious! You could use honey instead of the syrup. Thank you very much for your greetings and good wishes.

Thank you very much for your comment. You can use a flat pan but it has to be small, as the oil has to cover the batter otherwise you will have to pour a lot of oil in the pan. Ramadan karim.

Wa’alaikum as-salam warahmatullahi wabarakatuh,
The oil needs to be hot. If not, the mashmash will absorb more oil. Having said that, mashmash is by nature oily, the same way that a French croissant is buttery. After draining the oil from the mashmash, press them with a paper towel. Try pouring some syrup (or honey) and some coconut milk on top and they will taste fabulous.

Where is the origin of mashmash? Most of my Somali friends tell me they are not familiar with it. Is there a specific region that eats this?
We do not know. We haven’t seen anything similar to it but that doesn’t mean it does not exist. It is well known in the southern parts of Somalia, particularly along the coast.

Mashmashka waa wax saliid badan, saliid la’aan ma-hagaagayo. Waxyaabahaan isku day si-ay saliidda uga yaraato: 1) Saliidd kulul ku-shiil. 2) markaad ka-saaraysid saliidda si-fiican uga miir. 3) xaashiyaha jikada saar si-ay saliidda uga nuugto.
Markaad dubto waxaad ku-dartaa caanaha qumbaha oo sokor aad ku-qastay; mashmashka wuu ku macaan yahay. Mahadsanid.

About the recipe:
- How much do you poor in when you make one mashmash? it looks like one cup? and how many ml is that?
- Also do you keep adding oil after every mashmash? because it looks like the oil becomes less after every mashmash.does it matter how much oil you use? if so how much would you recommend?
- Do i need to use a cooking pan that is very deep, because i have one that is slighty deep. Is that a problem?

Thank you so much for your kind comment. The name of the song is at the end of the video. We put 1/4 cup of the batter. The quantity of oil you use will depend on the pan you are using. Make sure you have enough oil to cover the batter at all times. Whenever you see the oil level going down, you will need to replenish it. It is best with a round bottom pan, but you can use the one you have.

Thank you so much for your recipe. This is one of my favorite pairings with sambusa, so I thank you for providing the recipe. I’m almost there with the recipe, however when I fry it, it ends up with a huge knot in the middle and thinner and crispier on the sides. I’m using a round bottom wok, although not exactly shaped like yours in the video. Should I maybe try a small frying pan? I thought maybe if the batter touches the bottom when I pour, then it will spread evenly and also have a consistent shape each time.
