Yeasted Cake (Doolshe Qamiir)

The Bravanese call this cake Mkate wa Khamiiri. They also know it as Ja, Teka (Eat & Smile).  Yes, it will bring a smile to your face but it will also test your patience.  In my opinion, this cake benefits from being cooled completely and let to rest for a few hours before eating it.  Actually, I prefer to eat this cake the next day, but that is my preference.

The cake has a unique texture and it is not too sweet.  The baking soda gives the cake its dark brown colour.  The cake also has a natural shine that makes it look more appealing. 

In Brava this cake is usually served with tea in the afternoon right after waking up from a refreshing siesta.  It brings memories of my aunt’s house in Brava where this cake was baked daily for delivery to local  restaurants and tea shops.

 

Les Bravanais appellent aussi ce gâteau Ja, Teka (Mange & Souris). Oui il fait sourire mais il teste aussi votre patience. A mon avis, le gâteau est meilleur quand il est refroidi complètement et laissé à reposer quelques heures avant de le manger. En fait, je préfère manger ce gâteau le lendemain, mais c’est ma préférence.

Le gâteau a une texture unique et n’est pas trop sucré. Le bicarbonate de soude donne sa couleur marron foncée au gâteau. Le gâteau est aussi naturellement brillant ce qui le rend plus appétissant.

A Brava ce gâteau est d’habitude servi avec le thé l’après midi juste après le réveil de la sieste rafraîchissante. Il me rappelle des souvenirs de la maison de ma tante à Brava où le gâteau était cuit tous les jours pour être livré aux restaurants et salons de thé locaux.

Ingredients:

2½ cups granulated sugar (suukari)[sokkor]
1 cup  canola or vegetable oil (mafta) [saliid]
4 eggs (mayaankuku) [ukun]
2½ cups milk (izivaa ish-shu) [caano]
3 cups all-purpose flour (unga) [bur]
2 tbsp instant active dry yeast (khamiiri) [qamiir]
1 tbsp baking soda (chamuuka)
1 tbsp vanilla extract
1 tsp ground cardamom (hilki) [hayl]

 Yields 2 cakes or 32 cupcakes.

 

 

 

Waxa loo baahan yahay:

2½ koob Sokor (suukari)
1 koob Saliid caddey (mafta) 
4 Ukun (mayaankuku) 
2½ koob Caano (izivaa ish-shu) 
3 koob Bur cad (unga) 
2 QW Qamiirka rootiga (khamiiri) 
1 QW Qamiirka baking soda (chamuuka)
1 QW Faniila
1 qy Hayl shiidan (hilki) 

 Wuxuu noqonayaa 2 doolsho waaweyn ama 32 yaryar.

 

Ingrédients:

2½ mesures de Sucre en Poudre
1 mesure d’Huile de Colza ou d’Huile Végétale
4 Oeufs
2½ mesures de Lait
3 mesures de Farine Blanche
2 cs de levure sèche instantanée
1 cs de Bicarbonate de Soude
1 cs d’Extrait de Vanille
1 cc de Cardamome moulue

Pour 2 Gâteaux ou 32 Cupcakes 

 

Directions:

In Brava, the mixing of the ingredients is done by hand.  When mixing by hand, add the hot milk a half cup at a time and use a wooden spoon to mix it in.  Then beat the batter by hand.  We used a stand mixer for convenience.

Baraawe doolshaha noocaan gacan ayaa lagu qasi jiray.  Haddaad gacan ku-qasaysid, caanaha kulul kis-kis ugu dar adigoo ku walaaqeysa qaaddada qoriga (si aadan u-gubanin).  Cajiinka si-fiican u-garaac (sida canjeerada oo kale).

A Brava, le mélange des ingrédients se fait à la main. Si on mélange à la main, il faut ajouter le lait chaud une demie mesure à la fois et utiliser une cuillère en bois pour l’incorporer. Puis pétrir la pâte à la main. Nous avons utilisé un robot mixer par commodité.

In a stand mixer, combine the sugar, oil, eggs, flour, yeast, baking soda, vanilla extract, and cardamom. 

Isku-dar sokorta, saliidda, ukunta, burka, qamiirka rootiga, qamiirka baking soda, fanillada iyo haylka.

Dans un robot ménager, combiner le sucre, l’huile, les oeufs, la farine, la levure, le bicarbonate de soude, l’extrait de vanille, et la cardamome.

Using the paddle attachment, mix for 1 minute.

Qas muddo hal daqiiqo.

Utiliser le batteur plat, mélanger pendant 1 minute.

Heat the milk until it reaches the boiling point.  Set the mixer to the lowest speed and gradually add the hot milk.  Mix until all the milk is incorporated and the dough has a uniform consistency (about 4-5 minutes).  

Cover the bowl with a towel and place it in a warm location.  Let the dough rise for 2 hours.  Preheat the oven to 350°F/177°C.  Grease two 9 inch cake pans.  Bake for 45 minutes.

Caanaha aad u-kululeey ilaa ay wax yar ka-karaan. Makiinadda meesha ugu gaaban ku-aaddi, oo caanaha kulul si-tartiib ah ugu-shub. Isku-qas ilaa caanaha aad ku-dhamaysid, muddo 4 ilaa 5 daqiiqo.

Baaquliga dabool.  Dhig jikada meesha ugu kulul si uu u-qamiiro muddo 2 saacadood. Foornada ku-aaddi 350°F/177°C ee kululeey. Laba bir oo 9 inch ah saliid mari. Foornada ku-dub muddo 45 daqiiqo.

Chauffer le lait jusqu’à ébullition. Mettre en marche le mixer à vitesse réduite et ajouter le lait chaud petit à petit. Mélanger jusqu’à ce que le lait soit incorporé et la pâte soit de consistance uniforme (environ 4-5 minutes).

Couvrir le bol avec une serviette et le placer dans un endroit chaud. Laisser la pâte lever pendant 2 heures. Préchauffer le four à 350°F/180°C. Graisser deux plats à gâteaux de 9 pouces/22 cm. Cuire pendant 45 minutes.

    so i wanted to try one of your recipes, and thought i should start with something easy. I halfed this recipe because i did not want to make so much, and it smelled great, tasted great, had the right colour and gloss to it, only problem was when i cut into it i had two layers! The top was light and fluffy like it was supposed to be, the bottom layer was a darker brown colour, and was a lot more dense. What did i do wrong?
    Otherwise it tasted and smelt just like my mum’s.

      -The measuring cup we used is 237 ml. Is yours 250 ml?
      -Was the milk boiling hot? This could be the problem if the milk isn’t hot enough.
      -Mix well, making sure that the baking soda is evenly incorporated. You could sift it with the flour to make sure.
      -Finally if the oven is too hot, the cake won’t cook evenly. If the oven rack is low, the bottom which is closer to the heating element will brown faster.

      Hope those points help. We make this cake frequently and it always turns out great.

    asc thanks for this yummy recipe. i made this cake, but used baking powder insted of baking soda. while reading i thought it said baking powder. than i added the baking soda with the baking powder and it came out just like this pic. now i;m baking w/o the baking powder lets see which comes out better. thanks again

      Thanks for the feedback. Baking powder is a raising agent similar to yeast. When we were gathering information for this recipe, we came across a recipe that includes baking powder in addition to the yeast. One recipe also used self-rising flour which is basically all-purpose flour and baking powder.

      Let us know which version you prefer, with or without baking powder.

    lol i was wondering why my cake didn’t turn out brown but after reading the responses i just found out that i used baking powder instead of baking soda lol i will make it again because my sister always makes this cake and it turns out really good for her.

      Wa’alaikum as-salam warahmatullahi wabarakatuh,
      We do not recommend baking it earlier. The batter needs to ferment for the full two hours so the yeast will do its thing. That is why it is called a Yeasted Cake.

      The baking soda is a must in this recipe, otherwise it will not brown and it will not have the desired flavour.

    Assalamou aleykoum A&L I tried the cake it was delicious and moist but I reduced the yeast to 2 teaspoons instead of 2 table spoons because I was afraid that it would to much for that amount of flour.

      Wa’alaikum Assalam Warahmatullahi Wabarakatuh.
      The two tsp will work as a cake, but you definitely won’t get the taste and texture of the authentic Yeasted Cake. Try it next time and you will notice the difference.

    using hot milk,will it not kill the yeast

      If you add hot milk directly to yeast, it will definitely kill the yeast. However, the yeast is first mixed with 2 1/2 cups sugar, 3 cups flour, 1 cup oil and 4 eggs. That mixture will temper the milk. In this cake, the yeast is added to give flavour to the cake. The cake gets its rise from the baking soda which is a leavening agent.
