Have you ever tried using extra virgin olive oil to make mayonnaise in a food processor or blender? If you did, you will have learned that the result is a bitter-tasting mayonnaise. Extra virgin olive oil turns bitter when blended in a food processor or blender. So, if you are planning to add extra virgin olive oil to your hummus, mix it in AFTER blending the rest of the ingredients. For us, the only olive oil we let come near our hummus is the extra virgin one.

Making good hummus starts with quality ingredients. We use a good quality tahini that is made from roasted, hulled sesame seeds. The tahini must be thick and creamy, so stay away from the very oily and runny types. Runny tahini has other good uses but we believe it is not the best for hummus. However, if the choice is between using runny tahini or not making hummus at all, the better choice is to make hummus.

Good hummus is never watery, and in most cases watery hummus is not smooth. The secret to smooth hummus is to use just enough liquid to make it possible for the food processor to blend the chickpeas to a smooth paste. If you use too much liquid, the resulting hummus will not be as smooth. If you prefer thinner hummus, add a little water after getting a smooth paste. As far as peeling the chickpeas is concerned, we never saw the need for that. Making great hummus is very easy and does not need complicated steps.

  1. Steps for preparing hummus
  2. If using canned chickpeas, drain then rinse with cold water.

  3. Place all the ingredients, except the olive oil, in a food processor.

  4. Blend for 3 minutes.

  5. Scrape the sides and blend for 2 minutes. Scrape again and blend for 3 more minutes.

  6. Add the olive oil and stir well. Blending olive oil results in a bitter taste.

  7. Serve with olive oil and any toppings you prefer. Hummus goes well with grilled meats or shawarma.
