What to look for

Fresh kidneys are plump, glossy and deep reddish-brown, with a firm feel and only a faint smell. Avoid any that look dull, dry or discoloured, or smell of ammonia. Many butchers have them or can order them; ask for them with the fat and outer membrane removed.
