Clotted cream (ashta)
Also called: Qishto (Soomaali) · Crème caillée (ashta) (Français) · قشطة (العربية)
What to look for
Ashta is sold chilled in tubs at Middle Eastern grocers. It should be creamy white with a fresh, milky smell; yellowing, a sour smell or watery separation mean it’s past it. It’s the classic filling and topping for kunafa and other Middle Eastern sweets.
