For Somalis and East Africans in general, these flour tortillas are a healthier version of chapati. The ingredients are the same, the difference being the quantity of oil used and the method of rolling out the dough. East African chapati is prepared with a lot more oil, making them richer and flakier.

This recipe was inspired by our son’s love for tortillas and burritos. We decided to post this recipe when we noticed the large quantity of store-bought, preservative-laden tortillas that Maher was eating on a regular basis. Tortillas are made of very few ingredients and their preparation is easy and straight forward. Home-made tortillas also taste so much better than the store-bought variety.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Flour Tortillas:

  • 2 cups (280 g) All-purpose (plain) flour
  • ½ tsp (2.5 mL) Salt
  • 1 tsp (5 mL) Baking powder
  • ¼ cup (59 mL) Vegetable oil
  • ⅔ cup (158 mL) Water (warm)

 

Directions:

 

Steps for preparing the tortillas

  1. Place all the dry ingredients in a bowl and mix well. Add the oil and water, then mix into a dough.
  2. Knead the dough for 5 minutes. Cover and let it rest for 30 minutes.
  3. Form the dough into an elongated shape and divide into 5 equal pieces.
  4. Roll out into a 10″ (25 cm) circle.
  5. Preheat a pan for two mimutes, then cook for 1 minute on each side.
  6. Wrap with a kitchen towel to keep warm and prevent from drying. Place in a freezer bag and freeze for up to 6 months.

  • 2 koob (280 g) Bur cad
  • ½ qy (2.5 mL) Cusbo
  • 1 qy (5 mL) Beekin baawdar
  • ¼ koob (59 mL) Saliid caddeey
  • ⅔ koob (158 mL) Biyo (qandac ah)

 

Diyaarinta:

  1. Waxyaabaha qalalan baaquli ku shub, si fiican u walaaq. Saliidda iyo biyaha ku dar si fiicanna u qas.
  2. Burka rifaaq muddo 5 daqiiqo. Dabool oo dhig muddo 30 daqiiqo.
  3. Cajiinka u qaybi 5 gabal isle’eg.
  4. U fidi wareeg cabbirkiisa yahay 10″ (25 cm).
  5. Birta kululeey muddo 2 daqiiqo. Dhinac walba 1 daqiiqo dub.
  6. Maro ku duub ee huuri si ay u qalalin. Bacyaha firiizarka ku rid ee barafka ku kaydi ilaa 6 bilood.

Pour les Somalis et les Africains de l’Est en général, ces galettes de blé représentent la version plus légère du chapati. Les ingrédients sont les mêmes mais la différence est dans la quantité d’huile utilisée et la façon d’étaler la pâte. Le chapati Est-Africain est préparé avec beaucoup plus d’huile ce qui le rend plus riche et plus friable.

L’inspiration pour cette recette nous est venue du goût de notre fils pour les tortillas et autres burritos. Nous avons décidé de mettre au point cette recette quand nous nous sommes aperçus que notre fils consommait beaucoup de tortillas, et que ces dernières étaient remplies de conservateurs. Nos tortillas sont fabriquées avec peu d’ingrédients et sont faciles à préparer. Les tortillas faites maison ont aussi bien meilleur goût que les tortillas du supermarché.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Tortillas de Blé:

  • 2 mesures (280 g) de Farine Blanche
  • ½ cc (2.5 mL) de Sel
  • 1 cc (5 mL) de Levure Chimique (poudre à lever)
  • ¼ mesure (59 mL) d’Huile Végétale
  • ⅔ mesure (158 mL) d’Eau (tiède)

 

Instructions:

 

Étapes de préparation des galettes

  1. Mettre tous les ingrédients secs dans un bol et mélanger. Ajouter l’huile et l’eau, puis malaxer pour obtenir une pâte.
  2. Pétrir la pâte pendant 5 minutes. Couvrir et laisser reposer 30 minutes.
  3. Rouler la pâte pour l’allonger et la diviser en 5 morceaux de taille égale.
  4. Étaler en cercle de 10” (25 cm).
  5. Préchauffer une poêle pendant deux minutes, puis cuire 1 minute de chaque côté.
  6. Recouvrir les galettes d’un torchon pour les garder au chaud et éviter qu’elles sèchent. Les galettes peuvent être conservées jusqu’à 6 mois au congélateur emballées dans un sac de congélation.

طريقة التحضير:

 

طريقة تحضير التورتيا

توضع المكونات الجاافة في سلطانية وتخلط جيدا، يضاف الزيت والماء وتعجن جيدا -1
تعجن لمدة 5 دقائق ثم تغطى وتترك لمدة 30 دقيقة -2
تقسم العجينة الى 5 قطع -3
تفرد الى دائرة 25 سم -4
تسخن المقلاة لمدة دقيقتين ثم تطهى التورتيا لمدة دقيقة من كل جانب -5
تلف بمنشة حتى لا تنشف. يمكن ان تحفظ في الفريزر لمدة 6 اشهر -6

    I was thinking to do this tortilla for Ramadan in large quantity
    to keep in the freezer. I was wondering if I can make
    half wheat flour and half white flour. Is it possible?
