Of the many soups that we prepare, this is by far the most popular among our guests. When we prepared the soup for this post, we had family come over to visit that day. We served them the soup but our nephew declined, saying that he did not like soup.
His mother enjoyed the soup so much that she insisted that he just taste it. He tried a few spoonfuls and he was hooked. Soon after, we saw him heading to the soup pot to fill a bowl. He did not have time to sit and finished his bowl of soup right in the kitchen.
On their way out, he turned and asked us, “Can you PLEASE prepare this soup when you host us for iftar (meal for breaking the fast) in Ramadan (month of fasting for Muslims)?”
Ingredients:
(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements
Soup:
- 5.5 oz (156 g) Chicken breast (skinless)
- 2 Small Celery stalks
- 1 Small Potato
- 1 Small Onion
- 1 Small Tomato
- 4 Garlic cloves
- 1 tsp (5 mL) Salt
- 4 cups (2 litres) Water
- 1 Small Carrot
- ¼ cup (59 mL) Olive oil
- ½ cup (70 g) All-purpose (plain) flour
- 2 cups (474 mL) Milk
- 1 tsp (5 mL) Honey mustard
- 1 Tbsp (15 mL) Lemon juice
- ⅓ cup (37 g) Parmesan cheese (grated)
Garlic & Herb Bread Cubes:
- 2 Tbsp (30 mL) Olive oil
- 2 Garlic cloves (minced)
- 2 Tbsp (30 mL) Fresh herbs (finely chopped)
- 4 cups (135 g) Baguettes (cubed)
- ¼ tsp (1.25 mL) Salt
Directions:
- Place the chicken breast, celery stalks, potato, onion, tomato, garlic, salt, and the water in a 6-litre pot. Cover and boil, using medium heat, for one and half hours.
- Remove the chicken and potatoes.
- Strain the broth.
- Chop the chicken and potatoes into small pieces, and grate the carrot.
- Heat the oil in a pan set on medium heat. Add the flour and cook for 5 minutes while stirring.
- Add the broth and stir well using a whisk.
- Add the milk and stir well. Add the mustard.
- Add the chopped chicken, potato, and grated carrot.
- Add the lemon juice and cheese. Serve hot.
- Heat the olive oil using medium heat, then add the garlic and herbs.
- Add the bread cubes and mix well to coat them.
- Add the salt and mix well. Add the cheese.

- 2 Farac selari , Yar
- 1 Bataato / baradho , Yar
- 1 Basal , Yar
- 1 Yaanyo , Yar
- 4 Tuun (toon)
- 1 qy (5 mL) Cusbo
- 4 koob (2 litre(s)) Biyo
- 1 Karooto (dabacase) , Yar
- ¼ koob (59 mL) Saliidda oliifada
- ½ koob (70 g) Bur cad
- 2 koob (474 mL) Caano
- 1 qy (5 mL) Mastard malab leh
- 1 QW (15 mL) Casiir liin dhanaan
- ⅓ koob (37 g) Farmaajo barmijaano (la xoqay)
Rooti tuun iyo geedo leh:
- 2 QW (30 mL) Saliidda oliifada
- 2 Tuun (toon) (shiidan)
- 2 QW (30 mL) Geedo cusboon (aad loo yaryareeyay)
- 4 koob (135 g) Rooti Faransiis (mukacabaad loo jary)
- ¼ qy (1.25 mL) Cusbo
Diyaarinta:
- Digsi 6 litir qaada oo dab dhexdhexaad ah saaran ku rid digaaga, selariga, bataatada, basasha, yaanyada, tuunta (toonta), cusbada, iyo biyaha. Dabool ee kari muddo hal saac iyo bar.
- Digaaga iyo bataatada ka bixi.
- Maraqa miir.
- Digaaga iyo bataatada jarjar, karootadana xoq.
- Saliidda ku kululeey dab dhexdhexaad ah, kaddibna burka ku dar. Muddo 5 daqiiqo shiil adigoon walaaqidda ka joojinayn.
- Maraqa ku dar, si fiicanna u walaaq.
- Caanaha ku dar ee si fiican u walaaq. Mastardka ku dar.
- Kudar digaagga, bataatada, iyo karootada.
- Ku dar casiirka liinta iyo farmaajada. Barooddada qaddin iyadoo kulul.
- Bir dab dhexdhexaad ah saaran saliidda ku shub, tuunta iyo geedaha ku dar.
- Rootiga ku rid. Si fiican u walaaq.
- Cusbada ku dar si fiican u walaaq. Farmaajada ku dar.
De toutes les soupes que nous préparons, celle-ci est de loin la plus populaire parmi nos invités. Quand nous avons préparé la soupe pour ce post, nous avions invité de la famille ce jour là. Nous leur avons servi la soupe mais notre neveu la refusa en disant qu’il n’aimait pas la soupe.
Sa mère, elle, a tellement aimé la soupe qu’elle a insisté pour qu’il la goûte. Au bout de quelques cuillères il était accro. Immédiatement après il est allé à la soupière pour remplir son bol. Il n’a même pas pris le temps de s’asseoir, il a fini son bol de soupe dans la cuisine.
Alors qu’ils partaient, il se retourna et nous demanda: “Pouvez vous S’IL VOUS PLAIT préparer cette soupe quand nous reviendrons pour iftar (le repas de rupture du jeûne) pendant le Ramadan (mois du jeûne pour les Musulmans)?”

Ingrédients:

(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras
Soupe:
- 5.5 onces (156 g) d’Escalope de poulet (sans la peau)
- 2 Petites Branches de Céléri
- 1 Petite Pomme de Terre
- 1 Petit Oignon
- 1 Petite Tomate
- 4 Gousses d’Ail
- 1 cc (5 mL) de Sel
- 4 mesures (2 litres) d’Eau
- 1 Petite Carotte
- ¼ mesure (59 mL) d’Huile d’Olive
- ½ mesure (70 g) de Farine Blanche
- 2 mesures (474 mL) de lait
- 1 cc (5 mL) de Moutarde au Miel
- 1 cs (15 mL) de Jus de Citron
- ⅓ mesure (37 g) de Parmesan (râpé)
Croûtons à l’Ail et aux Herbes:
- 2 cs (30 mL) d’Huile d’Olive
- 2 de Gousses d’Ail (hachées)
- 2 cs (30 mL) d’Herbes fraîches (émincées fin)
- 4 mesures (135 g) de Baguettes (découpée en cubes)
- ¼ cc (1.25 mL) de Sel
Instructions:
- Dans un faitout de 6 litres, mettre l’escalope de poulet, les branches de céléri, la pomme de terre, l’oignon, la tomate, l’ail, le sel, et l’eau; Couvrir, faire bouillir et cuire à feu moyen pendant une heure et demie.
- Retirer le poulet et la pomme de terre.
- Réserver le bouillon.
- Hacher le poulet et la pomme de terre en petits morceaux, et râper la carotte.
- Chauffer l’huile dans une casserole à feu moyen. Ajouter la farine et cuire 5 minutes en tournant.
- Ajouter le bouillon et bien mélanger avec le fouet.
- Ajouter le lait et bien mélanger. Ajouter la moutarde.
- Ajouter le poulet et la pomme de terre et la carotte râpée.
- Ajouter le jus de citron et le fromage. Servir chaud.
- Chauffer l’huile à feu moyen, puis ajouter l’ail et les herbes.
- Ajouter les croûtons et bien mélanger pour les enrober.
- Ajouter le sel et bien mélanger. Ajouter le fromage.

طريقة التحضير:
فى قدر سعة 6 لتر يوضع صدر الدجاج، الكرفس، البطاطس، البصل، الطماطم، الثوم، الملح والماء، تغلى المكونات لمدة ساعة ونصف على نار متوسطة. | -1 |
يرفع الدجاج والبطاطس من القدر | -2 |
يصفى المرق | -3 |
يقطع الدجاج والبطاطس الى قطع صغيرة ويبشر الجزر | -4 |
يسخن الزيت على نار متوسطة ويضاف اليه الدقيق، يحمص لمدة 5 دقائق مع التحريك المستمر | -5 |
يضاف المرق ويخلط جيدا بواسطة مضرب شبك يدوي | -6 |
يضاف اليه الحليب ويحرك جيدا، ثم يضاف الخردل | -7 |
تضاف قطع الدجاج والبطاطس والجزر المبشور | -8 |
