Some recipes come to you very easily. The recipe for the carrot salad is one such example. It was sent to us by our friend J. who lives in France. She is the person who does all the French translation for us. Thank you J.!

Other recipes are difficult to get. Many of us had the experience of visiting a friend or family member and being offered a food that we fall in love with at first bite. But the recipe is a secret. It is no use insisting on being given the recipe, because when you really insist, suddenly the recipe for samosas yields hot dogs.

My mother once told us about a cake she had at a friend’s house. At the time, she was in Baidoa, Somalia and that friend was an American lady whose husband worked at Bonca, the experimental farm near Baidoa. Whenever she visited her, she was offered this delicious cake together with a cup of tea. When my mother asked for the recipe, her friend always evaded the question, making it evident that the recipe was a secret.

An American lady in Somalia, of course, doesn’t cook her food every day! She had a Somali cook but he was sworn to secrecy and he was not talking. Many times, the cook would see my mother making up excuses to enter the kitchen only to leave empty-handed. The cook’s position was not enviable. He was burdened with a secret and inside him was a word that had to be spoken. His plight reminded me of the poem Kudu by Maxamed Xaashi Dhamac Gaariye. He begins:

Long ago there lived a king
who sprouted a pair of horns – just buds,
at first, but he checked them every day
and wore his turban low to hide
this blemish, to hide this mark of shame.

But a king, of course, doesn’t wash his own hair!
His man-servant knew all about the king’s shame
and day by day the knowledge grew
inside him, a word that had to be spoken,
a terrible secret that had to be told.

For many, many days, the poor servant suffered in silence until the day when he finally went outside the city, dug a hole in the ground and whispered his secret to the earth. Gaariye then ends the poem thus:

When the man told his tale
to the earth, the burden left him, it went
underground, and the man, why, he brushed himself down
and went on his way. And this is the strangest
part of the story: that even today,
when the soft rain falls on that place in the bush,
that very same place where he planted his secret,
horns like the kudu’s grow from the ground.

My mother’s persistence finally paid off. One day, she went again into the kitchen and discovered the secret. The cook did not place the secret in a hole in the ground. He strategically placed it in the garbage bin and it was sticking out like the horns of a kudu: an empty package of cake mix! In it went underneath her garbasaar (shawl) to be handed to my father to complete the mission.

Whenever I visit the supermarket and see packages of cake mix on the shelves, I remember this story and I smile.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

  • 1¾ lb (800 g) Salmon fillet
  • 3 Garlic cloves (minced)
  • ¼ tsp (1.25 mL) Ground black pepper
  • 1 tsp (5 mL) Salt
  • 3 Tbsp (45 mL) Olive oil
  • 2 Tbsp (30 mL) Honey mustard
  • 2 tsp (10 mL) All-purpose (plain) flour

Carrot Salad:

  • 3 Carrots
  • 1 Lemon (juiced)
  • 1 Orange (juiced)
  • 3 Tbsp (45 mL) Olive oil
  • ½ tsp (2.5 mL) Salt
  • ¼ tsp (1.25 mL) Ground black pepper
  • 1 Tbsp (15 mL) Honey
  • 1 Tbsp (15 mL) Cider vinegar
  • 1 Tbsp (15 mL) Honey mustard
  • ½ cup (75 g) Currants – Or raisins
  • ¼ cup (80 g) Parsley (chopped)

Steps for preparing the baked salmon

  1. Cut the salmon fillet into serving sizes.
  2. In a bowl, combine the garlic, black pepper, salt, olive oil, honey mustard and the flour.
  3. Mix well.
  4. Place the salmon pieces on a baking pan layered with aluminum foil.
  5. Apply half the marinade on the salmon fillets.
  6. Apply the other half of the marinade on the other side of the salmon fillets. Bake uncovered in a preheated oven for 12 minutes at 500°F/260°C.

Directions:

Steps for preparing the carrot salad

  1. Grate the carrots in the food processor.
  2. You can also use a grater.
  3. Combine all the dressing ingredients (lemon juice, orange juice, olive oil, salt, black pepper, honey, cider vinegar and honey mustard). Mix well.
  4. Place the shredded carrots in a bowl and add the currants and chopped parsley.
  5. Add the dressing.
  6. Mix well. It can be served immediately but it is best after it is refrigerated for a couple of hours or even overnight.

Certaines recettes sont très faciles à trouver. La recette de la salade de carottes en est un exemple. Elle nous a été envoyée par notre amie J. qui vit en France. Elle est la personne qui fait la traduction en français pour nous. Merci J.! (*you’re welcome ^^*)

Certaines recettes sont difficiles à obtenir. Beaucoup d’entre nous ont eu l’expérience d’aller visiter un ami ou un proche, de se faire offrir un plat dont on tombe amoureux dès la première bouchée. Mais la recette est un secret. Il ne sert à rien d’insister pour obtenir la recette, parce que si vous insistez vraiment, soudain la recette des samosas donne des hot dogs.

Ma mère nous raconta l’histoire du gâteau qu’elle avait goûté chez son amie. A l’époque, elle était à Baidoa, Somalie et son amie était une dame Américaine dont le mari travaillait à Bonca, la ferme expérimentale près de Baidoa. A chaque fois qu’elle lui rendait visite, elle lui offrait de ce gâteau délicieux avec une tasse de thé. Quand ma mère lui demandait la recette, son amie esquivait toujours la question, ceci signifiant évidemment que la recette était un secret.

Une Américaine en Somalie, bien sûr, ne cuisine pas tous les jours! Elle avait un cuisinier Somali mais il était tenu au secret et il ne parlait pas. A de nombreuses reprises, le cuisinier voyait ma mère entrer dans la cuisine sous un faux prétexte et repartir les mains vides. La position de cuisinier n’était pas enviable. Il avait le poids du secret et portait en lui un mot qui voulait s’exprimer. Sa situation difficile me rappelait le poème Kudu de Maxamed Xaashi Dhamac Gaariye. Il dit cecii:

Il y a longtemps vivait un roi A qui il poussa une paire de cornes – juste des bourgeons, au début, mais il les vérifiait chaque jour et portait son turban bas pour cacher cette tache, pour cacher cette marque de la honte.

Mais un roi, évidemment, ne lave pas lui-même ses cheveux! Son serviteur était au courant de l’embarras du roi et jour après jour cette information grandissait en lui, un mot qui devait être prononcé, un terrible secret qui devait être dit.

Jour après jour, le pauvre servant souffrait en silence jusqu’au jour où il sortit de la ville, creusa un trou dans le sol et murmura son secret à la Terre. Gaariye termine ensuite son poème ainsi:

Quand l’homme raconta son histoire à la terre, le fardeau disparut, il partit sous terre, et l’homme, * *, s’épousseta et repris son chemin. Et c’est la plus étrange partie de cette histoire: aujourd’hui encore, quand la pluie tombe doucement à cet endroit dans la brousse, à ce même endroit où il planta son secret, des cornes de kudu sortent du sol.

La persévérance de ma mère porta ses fruits. Un jour, elle entra dans la cuisine et découvrit le secret. Le cuisinier n’avait pas caché le secret dans un trou dans le sol. Il l’avait stratégiquement mis dans la poubelle et il dépassait comme les cornes d’un kudu: une boite vide de préparation pour gâteau! Elle le mis sous son garbasaar (châle) pour le donner à mon père et ainsi accomplir sa mission.

Quand je vais au supermarché et que je vois les paquets de préparation à gâteau dans les rayons, je me rappelle cette histoire et je souris.

  • 3 Gousses d’Ail (hachées)
  • ¼ cc (1.25 mL) de Poivre Noir moulu
  • 1 cc (5 mL) de Sel
  • 3 cs (45 mL) d’Huile d’Olive
  • 2 cs (30 mL) de Moutarde au Miel
  • 2 cc (10 mL) de Farine tous usages

Salade de Carottes:

  • 3 Carottes
  • 1 Citron (pressé)
  • 1 Orange (pressée)
  • 3 cs (45 mL) d’Huile d’Olive
  • ½ cc (2.5 mL) de Sel
  • ¼ cc (1.25 mL) de Poivre Noir moulu
  • 1 cs (15 mL) de Miel
  • 1 cs (15 mL) de Vinaigre de Cidre
  • 1 cs (15 mL) de Moutarde au Miel
  • ½ mesure (75 g) de Raisins secs
  • ¼ mesure (80 g) de Persil (haché)

Instructions:

Filet de Saumon


Étapes de préparation du saumon grillé

  1. Découper le filet de saumon en portions individuelles
  2. Mélanger l’ail, le poivre noir, le sel, l’huile d’olive, la moutarde au miel et la farine dans un bol.
  3. Bien mélanger.
  4. Poser les morceaux de saumon sur une plaque de cuisson recouverte de papier aluminium.
  5. Étaler la moitié de la marinade sur les filets de saumon.
  6. Étaler l’autre moitié de la marinade sur l’autre côté des filets de saumon. Cuire 12 minutes sans couvrir dans un four préchauffé à 500°F/260°C.

Instructions:

Étapes de préparation de la salade de carottes

  1. Râper les carottes dans un robot.
  2. Vous pouvez aussi utiliser une râpe.
  3. Assembler tous les ingrédients de la vinaigrette (jus de citron, jus d’orange, huile d’olive, sel, poivre noir, miel, vinaigre de cidre et moutarde au miel). Bien mélanger.
  4. Mettre les carottes râpées dans un bol et ajouter les raisins secs et le persil haché.
  5. Verser la vinaigrette.
  6. Bien mélanger. La salade peut être servie immédiatement mais elle est meilleure si elle est réfrigérée quelques heures ou même toute une nuit.

طريقة تحضير السلمون بالفرن

يقطع السمك الي اجزاء بحجم حصص التقديم -1
يوضع الثوم، الفلفل الاسود، الملح، زيت الزيتون، الخردل والطحين في سلطانية. -2
تخلط التتبيلة جيدا -3
تغطى صينية الفرن بورق الالمنيوم ثم ترص عليها قطع السمك -4
يتبل السمك بنصف التتبيلة -5
تتبل الجهة الاخرى. يخبز في فرن مسخن مسبقا على حرارة 500°F او 260°C لمدة 12 دقيقة -6

يبشر الجزر -1
يمكن استخدام بمبشرة يدوية -2
تخلط مقادير التتبيلة (عصير الليمون، عصير البرتقال، زيت الزيتون، الملح، الفلفل الاسود، العسل، خل التفاح والخردل) وتهز جيدا -3
يوضع الجزر المبشور في سلطانية. يضاف الكشمش (زبيب صغير) والبقدونس -4
تضاف التتبيلة -5
تخلط جيدا ثم تقدم. يفضل وضعها في الثلاجة لمدة ساعتين او اكثر. -6

    I have recently heard that Fingreek or Xulba as the somalis call is cure for many diseases. Could please you provide some recipes for its preparation.
