Roasted Chicken (Digaag La Foorneeyay) Poulet Rôti دجاج محمر بالفرن

I was in my second year of high school when the Somali government at the time decided to close all the schools for one academic year. All high school students were sent to the rural areas to participate in a literacy campaign (Rural Development Campaign). I was sent to Go’doon, a tiny village in the middle of nowhere. In Somali, go’doon means isolated, but forsaken describes the village much better. The government decided the name was so negative that they changed it to Gadoon (selected because it rhymes with Go’doon). They did not want the teenagers to be frightened by the name of the place. However, when we found out about the old name and how it bothered even the government, we were more apprehensive.

You might be wondering what that has to do with roasted chicken. Gadoon is in the heartland of Somalia and it is camel and goat country. There, chicken were despised. A few of them roamed the windy and dusty place and no one paid the slightest attention to the bug-eating creatures. It wasn’t just the chicken that were the object of aversion. Anyone who ate chicken was regarded with contempt.

When we, the city kids, descended on the place, the fortune of the few chicken changed overnight. Maybe misfortune would be the better word since they suddenly became food. The only shopkeeper in the village laid claim to the chicken and even the eggs were barely affordable. During the several months that we spent there, we never ate the birds. All we could do was just dream about roasted chicken.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

  • 3½ lb (1.6 kg) Chicken (whole)
  • 2 Tbsp (30 mL) Butter
  • 2 Tbsp (30 mL) Olive oil
  • 2¼ tsp (11.25 mL) Salt (to taste)
  • 1 Tbsp (15 mL) Lemon zest
  • 1 tsp (5 mL) Ground black pepper
  • 2¼ tsp (11.25 mL) Xawaash
  • 2 Garlic clove(s)
  • 2 Tbsp (30 mL) Lemon juice
  • Vegetables

Yogurt Dip:

  • ½ Cup(s) (118 mL) Drained yogurt
  • 1 Tbsp (15 mL) Olive oil
  • 1 tsp (5 mL) Lemon juice
  • ½ tsp (2.5 mL) Salt (to taste)
  • Green onions (garnish)

Bring the chicken to room temperature before roasting


 

Directions:

Steps for preparing the chicken

  1. Combine all the ingredients for the marinade: the butter, olive oil, salt, lemon zest, ground black pepper, xawaash, garlic paste, & lemon juice. Instead of xawaash, you can use berbere, curry powder, or just cumin powder.
  2. Using your fingers, loosen the skin from the meat.
  3. Avoid tearing the skin.
  4. Spoon the marinade under the skin.
  5. Turn the chicken upside down and repeat the same process.
  6. Rub the marinade all over the chicken.
  7. Combine 1/4 tsp xawaash and 1/4 tsp salt and sprinkle over the chicken.
  8. Elevate the chicken on a bed of vegetables or, more preferrably, use a rack with the roasting pan. The chicken must not sit in its juices.
  9. Roast the chicken for 30 minutes at 450°F/232°C. After that, add potatoes and roast for a further 40 minutes at 400°F/204°C. Let the chicken rest for 15 minutes before cutting or carving.

Steps for preparing the yogurt dip

  1. Drain the yogurt. The longer you drain it, the thicker it will become. Refrigerate if you wish to drain it for long period or overnight.
  2. Combine the drained yogurt, olive oil, lemon juice, and salt. Mix well.
  3. Garnish with chopped green onions and a few drops of olive oil.

  1. Mukawinaadka carafta isku wada dar. Waxaa isku dartaa buurada, saliidda oliifada, cusbada, qolofta liinta la xoqay, filfisha madoow, xawaashka, tuunta (toonta) iyo casiirka liinta. Xawaashka waxaa ku beddeli kartaa berbere, keeri, ama kaamuun la shiiday.
  2. Maqaarka in yar faraha ku fuji.
  3. Iska ilaali inaad maqaarka jeexdid.
  4. Carafta qaaddo kula shub maqaarka hoostiisa.
  5. Digaagga geddi, kaddibna isla sidii maqaarka hoostiisa carafta ku shub.
  6. Digaagga si fiican u wada mari carafta.
  7. Isku dar 1/4 qy xawaash iyo 1/4 qy cusbo, kaddibna kor uga rusheey digaagga.
  8. Digaagga qudaar hoos dhig si aad birta salkeeda kor uga qaaddid. Waxaa ka sii fiican in la isticmaalo shabaq la dul saaray birta foornada. Digaagga waa inuu dhex fariisanin maraqiisa.
  9. Digaagga 30 daqiiqo ku dub foorno la sii kululeeyay oo kulaykeeda yahay 450°F/232°C. Muddadaas kaddib, bataato (baradho) ku dar oo 40 daqiiqo oo kale ku dub 400°F/204°C. Dhig muddo 15 daqiiqo intaadan jarjarin, haddii kale dheecaan badan ayaa ka daadan doona digaagga.

  1. Caana fadhiga biyaha ka miir. Haddaad sii miirtid wuu sii culusaanayaa. Qaboojiyaha geli haddaad rabtid inaad waxbadan biyaha ka miirtid.
  2. Isku dar caana fadhiga, saliidda oliifada, casiirka liinta, iyo cusbada. Si fiican isku qas.
  3. Ku qurxi basal cagaaran la jarjaray iyo dhoor dhibcood saliidda oliifada.

J’étais en deuxième année de lycée quand le gouvernement Somali en place a décidé de fermer toutes les écoles pour une année scolaire entière. Tous les lycéens ont été envoyés dans les zones rurales pour participer à une campagne d’alphabétisation (Campagne de Développement Rural). On m’a envoyé à Go’doon, un petit village au milieu de nulle part. En Somali, go’doon veut dire isolé, mais “paumé” décrit ce village beaucoup mieux. Le gouvernement avait décidé que le nom était tellement négatif qu’il fut changé en Gadoon (choisi parce qu’il rime avec Go’doon). Ils ne voulaient pas que les adolescents soient effrayés par le nom de l’endroit. Cependant, quand nous avons découvert l’ancien nom et qu’il dérangeait même le gouvernement, nous étions encore plus inquiets.

Vous devez vous demander quel est le rapport avec le poulet rôti. Gadoon se situe au centre de la Somalie et c’est une région d’élevage des chameaux et des chèvres. Là-bas, les poulets sont méprisés. Quelques-uns déambulaient sur la place poussiéreuse balayée par le vent et personne ne prêtait attention à ces créatures insectivores. Il n’y avait pas que les poulets qui étaient considérés avec aversion. Tous ceux qui mangeaient du poulet étaient considérés avec mépris.

Quand nous, enfants des villes, sommes arrivés sur place, le destin de ces quelques poulets changea du jour au lendemain. Peut être que malchance est le mot plus approprié puisqu’ils sont soudainement devenus comestibles. Le seul épicier du village s’arrogea la propriété des poulets et même les oeufs étaient à peine bon marché. Pendant les quelques mois que nous avons passé là-bas, nous n’avons jamais mangé les oiseaux. Tous ce que nous pouvions faire c’était rêver de poulet grillé.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

  • 1 Poulet entier de 3½ livres (1.6 kg)
  • 2 cs (30 mL) de Beurre
  • 2 cs (30 mL) d’Huile d’Olive
  • 2¼ cc (11.25 mL) de Sel (à votre goût)
  • 1 cs (15 mL) de Zest de Citron
  • 1 cc (5 mL) de Poivre Noir moulu
  • 2¼ cc (11.25 mL) de Xawaash
  • 2 Gousses d’Ail
  • 2 cs (30 mL) de Jus de Citron
  • Légumes

Sauce au Yaourt:

  • ½ mesure (118 mL) de Yaourt égoutté
  • 1 cs (15 mL) d’Huile d’Olive
  • 1 cc (5 mL) de Jus de Citron
  • ½ cc (2.5 mL) de Sel (selon votre goût)
  • Oignons verts (garniture)

 

Le poulet

Instructions:

Étapes pour préparer le poulet

  1. Combiner tous les ingrédients de la marinade: le beurre, l’huile d’olive, sel, le zest de citron, le poivre noir moulu, le xawaash, l’ail écrasé, et le jus de citron. A la place du xawaash, vous pouvez utiliser du berbere, du curry en poudre, ou juste du cumin en poudre.
  2. Avec vos doigts écarter la peau de la chair.
  3. Éviter de déchirer la peau.
  4. Mettre la marinade sous la peau avec une cuillère.
  5. Retourner le poulet et répéter la même procédure.
  6. Masser la marinade sur tout le poulet.
  7. Combiner ¼ de cc de xawaash et ¼ de cc de sel et saupoudrer le poulet.
  8. Poser le poulet sur un lit de légumes ou, de préférence, sur une grille posée sur un plat à rôtir. Le poulet ne doit pas être dans son jus.
  9. Rôtir le poulet pendant 30 minutes à 450°F/204°C. Après ça, ajouter les pommes de terre et rôtir 40 minutes de plus à 400°F/204°C. Laisser le poulet reposer pendant 15 minutes avant de la découper ou de le dépecer.

Étapes pour préparer la sauce au yaourt

  1. Égoutter le yaourt. Plus il est égoutté, plus il devient épais. Réfrigérez-le si vous souhaitez l’égoutter pendant une longue période ou jusqu’au lendemain.
  2. Mélanger le yaourt égoutté, l’huile d’olive, le jus de citron, et le sel. Bien mélanger.
  3. Garnir avec les oignons verts émincés et quelques gouttes d’huile d’olive.

طريقة التحضير:

تحضير الدجاج

تخلط جميع مكونات التتبيل: الزبدة، زيت الزيتون، الملح، بشر الليمون، الفلفل الاسمر، الحوائج، معجون الثوم، وعصير الليمون. يمكن استبدال احوائج بكاري، او كامون مطحون، او اي بهارات اخرى. -1
تمرر اصابع اليد تحت الجلد. -2
يراعى عدم تمزيق الجلد. -3
ينقع تحت الجلد. -4
يقلب الدجاج وتكرر نفس الخطوات. -5
يتبل الدجاج من الخارج ايضا. -6
تخلط 1/4 ملعقة صغيرة حوائج مع 1/4 ملعقة صغيرة ملح وترش فوق الدجاج. -7
توضع خضار لرفع الدجاج من قاع الصينية. حتى نبعد الدجاج عن السوائل المتساقطة اثناء الشوي. يفضل استعمال شبك فوق صينية الفرن. -8
يشوى الدجاج لمدة 30 دقيقة في فرن مسخن سابقا على حرارة 232 د.م. (450 ف). تضاف بطاطس ثم يشوى الدجاج لمدة 40 دقيقة اخرى في فرن مسخن سابقا على حرارة 204 د.م. (400 ف.) -9

    walaal aad iyo aad ayaad uGu mahadsantahay jawaabta aad I siisay this was very helpful. actually aniga xitaa roast pan kayga Canadian tire uunbaan ka soo iibsaday but maynan haynin midka idinka aad isticmaalaysaan maybe they stopped selling it anyway I will do as you said in sha Allah thank you so much once again

    Asalamu calaykuim sis do I roast the chicken for 70 mints total? 30 at first without the veggies and 40 after I add the veggies?
