Kalkals (Shushumoow – Zinanaande) كلكل

 

There are sweets that you eat because they taste good; then there are those that go a step further by bringing back memories of your childhood, a way of life long gone, of places fondly missed. That is what shushumoow (kalkals) does for us. In Brava, Somalia, they are known as zinanaande or zinanoonde

The art of making these sweets seems to have been lost. We have seen them made so hard that they are a challenge to eat. Some jokingly call them kuwa ilkaha u-daran (the ones that are hostile to your teeth). Well, we have good news for you. You can now cancel that portion of your dental insurance that covers tooth breakages resulting from eating shushumoow. :)  

Il y a des sucreries que l’on mange parce qu’elles sont bonnes; et il y a celles qui en plus vous rappellent vos souvenirs d’enfance, un mode de vie disparu, des lieux qui vous manquent beaucoup. Ceux sont ce que les shushumoow (kalkals) représentent pour nous. A Brava, en Somalie, ils s’appellent zinanaande ou zinanoonde.

Il semble que l’art de fabriquer ces sucreries se soit perdu. Nous avons constaté qu’ils étaient fabriqués tellement durs qu’ils en étaient difficiles à manger. Certains pour plaisanter les appellent kuwa ilkaha u-daran (ceux qui sont hostiles à vos dents). Et bien, nous avons une bonne nouvelle à vous annoncer. Vous pouvez annuler dans votre mutuelle l’option dentaire “dents cassées en mangeant des shushumoow”.

 

 

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL; 1 Tbsp = 15 mL; 1 tsp = 5 mL) 

Yields about 50 kalkals

3 cups (420 g) All-purpose flour
¼ cup (50 g) Granulated sugar
¼ tsp Salt
¼ tsp Baking powder
⅔ cup (158 mL) Canola or vegetable oil
1 Large egg (or 3 Tbsp canola oil)
⅔ cup Water

For coating 

600 g Kalkals
½ cup Sugar

¼ cup Water

 

Waxa loo baahanyahay:   

(QW waa qaaddo weyn – midda cuntada lagu cuno; qy waa qaaddo yar)
(1 koob = 237 mL; 1 QW = 15 mL; 1 qy = 5 mL)

Waxaad ka-sameyn kartaa 50 shushumoow

3 koob (420 g) Bur
¼ koob (50 g) Sokor
¼ qy Cusbo
¼ qy “Baking powder”
⅔ koob (158 mL) Saliid cad
1 Ukun weyn (ama 3 QW saliid cad)
⅔ koob biyo

Sokorta la-marinaayo:

600 g Shushumoow
½ koob Sokor
¼ koob Biyo 

 

Ingrédients:

(cs est une cuillère à soupe; cc est une cuillère à café)
(1 mesure = 237 mL; 1 cs = 15 mL; 1 cc = 5 mL)

Pour 50 kalkals

3 mesures (420g) de farine de blé (type 45 ou 55)
¼ de mesure (50g) de sucre en poudre
¼ de cc de sel
¼ de cc de levure
⅔ de mesure (158mL) d’huile végétale (colza ou arachide)
1 oeuf gros (ou 3 cs d’huile)
⅔ mesure d’eau

Pour l’enrobage:

600g de kalkals
½ mesure de sucre
¼ de mesure d’eau

Preparing the dough - Préparation de la pâte

1. Measure the flour into a bowl, and add the sugar, salt & baking powder. 2. Add the oil. 3.  Add the egg (or 3 Tbsp oil). 4. Add the water. 5. Mix well for 5 minutes, or 10 minutes if mixing by hand. 6. Shape the dough into a disc and and let it rest for 10 minutes.

1. Burka baaquli ku-shub, waxaana ku-dartaa sokorta, cusbada iyo baking powder-ka. 2. Saliidda ku-dar. 3. Ukunta ku-dar (ama 3 QW saliid). 4. Biyaha ku-shub. 5. Shan daqiiqo qas, ama 10 daqiiqo haddaad gacan ku-qaseysid. 6. Cajiinka baaquli ku-rid oo 10 daqiiqo dhig.

1. Mettre la farine dans un récipient, ajouter le sucre, le sel et la levure. 2. Ajouter l’huile. 3. Ajouter l’oeuf (ou les 3 cs d’huile). 4. Ajouter l’eau. 5. Bien mélanger pendant 5 minutes, ou pendant 10 minutes si vous le faites à la main. 6. Rassembler la pâte en forme de disque et laisser reposer 10 minutes.

 

Shaping and frying the kalkals - Modelage et cuisson des kalkals

1. Cut the dough into 1-inch balls. 2. Put the dough on the comb or fork (watch the video). 3.  Flatten the dough on the comb. 4. Roll it up to shape the kalkals. 5. Deep fry the kalkals on medium heat for 10 minutes. 6. Transfer the kalkals to a colander. 7. Melt the sugar and water. 8. Add the kalkals. 9. Mix well until the sugar crystallizes.

1. Burka kuukuus u-jarjar. 2. Shanlada saar. 3. Ku-fidi. 4. Isku soo duub. 5. Saliid dab dhexdhexaad saaran ku-shiil. 6. Miiro ku-rid 7. Sokorta iyo biyaha isku kari. 8. Shushumoow ku-rid. 9. Si-fiican u-walaaq ilaa sokorta ay ka-qalasho.

1. Couper la pâte en boules de 2.5 cm. 2. Poser la pâte sur un peigne ou une fourchette (voir la vidéo). 3. Aplatir la pâte sur le peigne. 4. L’enrouler pour former les kalkals. 5. Faire frire les kalkals à feu moyen pendant 10 minutes. 6. Transférer les kalkals dans une passoire. 7. Faire fondre le sucre et l’eau. 8. Ajouter les kalkals. 9. Bien mélanger jusqu’à ce que le sucre cristallise.

    Asalamu-Aleykum my brother & sister,

    I used to think shushumoow can be made only on comb,but Thank you for showing of using the fork and other stuff. I told my cousing about this website yesterday. She is pregnant with her first baby and she love Qumbe so much, so I told her she can now make her own homemade qumbe by going to Xawaash.com She is happy to know how to make her favorite sweets. Now I know what to say to someone who don’t know how to make our traditional sweets. Thank you guys so much for creating this unique Somalifood blog.

I’ll admit I am a terrible cook but I think that’s because I give up after I mess up the first time, now with your blog I think I’ll try and try until I get it right.     i love your website- mashallah, in shock at the shoshomo recipie post- IT IS AMAZING!! walahi just in shock. Mashalallah is all i can say.
    i just i have one quetion is balbalow batter the same as shoshomo? also im after icun recipe- its flour, icing sugar,hale, butter- and some other stuff, i cant remeber right now- anyway my mom makes it and it turns out more like a biscuit- really hard- im guessing we are using too much flour? can you help?? thanks.

    also for the somali buiscuit recipe with the coconuts- in somalia they also add sesame seed- is this the same recipe only with sesame substitution instead of hte coconut???
    i really like this version- and also is the pound cake the traditional somali cake? i love somali cake..
    sorry for all the questions, but then you never get an opportunity like this. when you have an expert infront of you, you just got to ask!

      Thank you for the comment and enthusiasm. Our recipe for baalbaalow is different than shushumow. Too much flour does make the icum hard, but no worries. God willing, we will post the recipe for icun before Eid.

      We never used sesame seeds with the Somali cookies recipe. The pound cake is different from the traditional Somali cake, which has very little or no oil/butter added. Thank you for being a great fan.

    I wanted to know if I could bake the dough after shaping it??? As a posed to deep frying it in oil for health reasons(don’t wanna gain weigh lol)..

      The shushumow dough could be used for baalbaalow. You can also shape them into small balls and fry them. It is a good dough for anything that you would like it to be crunchy. Thank you.

      Walaasheenna qaaliga ah, Nuura. Waan ku noqonnay qiyaasta biyaha ee shushumoowga. Adiga ayaa naga saxsan, annaga waan qaldanayn. Qiyaasta la rabo waa 2/3 koob (158 mL) biyo. Fidiyaha iyo soo’da warqadda noogu qoran ayaan ku noqonnay, shushumoowgana mar kale ayaan sameynay. Mahadsanid.

    Hello,

    This snack is very famous in India especially during Christmas. It is also called Kalkals. Loved this recipe and the way it is shown. Some of them do add coconut cream. Thanks for this wonderful recipe. I will be soon making :)

      Thank you very much for your comment. Somalia’s location along the Indian Ocean littoral has resulted in Somali cuisine being influenced by many cultures. However, the influence was not one-directional. We are not food historians and do not know where these originated. The fact that an Afro comb is used in making them, might give a clue. :)

    Salam!! First of all, thanks for all the amazing recipes! They’ve really come in handy. I have a question about this one though. Is it possible to freeze the dough (or refrigerate it) in order to make the sweets later? If yes, for how long? And would I set it aside for 10 minutes and then put it away? Thanks again!!
