Pound cakes were some of the few cakes that were popular in Somalia. They were second in popularity to sponge cakes. Pound cakes were sold in teashops but they were not baked there. They were sold to the teashops by ladies who baked them at home and the recipes were closely guarded secrets.

There were many recipes and variations of pound cakes but in Somalia the flavour ingredient was always the same. Cardamom was cheaper than vanilla and it was used to flavour the pound cakes.

A good pound cake should be moist but not over greasy, fluffy and not too dense, soft but with a good crumb, and it should have a great flavour. We baked several cakes and we consulted family and friends, to settle on a recipe that met those criteria. We had this recipe for a couple of years but we used to make it with butter only. Zeinab Abu (Zeinabu Chihaba) suggested that we use a combination of butter and oil for added moistness, and she was absolutely right.

The combination of the orange zest and the pure vanilla extract imparts a great flavour to the cake and the aroma of this cake will fill the whole house. What a great way to welcome guests to your home!

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Pound Cake:

  • 1 cup (200 g) Granulated white sugar
  • ½ cup (125 mL) Unsalted butter (softened)
  • ½ cup (118 mL) Canola oil – Or vegetable oil
  • 3 Large Eggs
  • 1 Tbsp (15 mL) Vanilla extract
  • ¼ tsp (1.25 mL) Salt (optional)
  • 1 tsp (5 mL) Baking powder
  • 1 Orange zest
  • 2 cups (560 g) All-purpose (plain) flour
  • ¼ cup (59 mL) Milk – Any type
  • 1 Tbsp (15 mL) Butter – For greasing the pan (we used a 10×4″ (25×11 cm) tube cake pan)

Cake Topping:

  • 8 oz (227 g) Cream cheese
  • 2 Eggs
  • ½ cup (100 g) Granulated white sugar
  • Powdered sugar – For dusting

 

Directions:

 

  1. Preheat the oven to 350°F/177°C.
  2. Zest 1 orange.
  3. Put the sugar in the mixer bowl.
  4. Add the softened butter.
  5. Add the oil and beat on high speed for 5 minutes. Scrape the sides once during those 5 minutes.
  6. Add the eggs.

Steps for preparing the cake


 

  1. Add the baking powder.
  2. Add the salt.
  3. Add the vanilla.
  4. Add the orange zest.
  5. Mix on high speed for 2 minutes.
  6. Add the flour and mix for 1 minute.
  7. Add the milk and mix for 1 minute.
  8. Grease a 10″×4″ tube cake pan with 1 Tbsp butter then pour in the batter.
  9. Bake at 350°F/176°C for 45 minutes. Let the cake cool for 10 minutes before removing from the pan.

  • 3 Ukun Weyn
  • 1 QW (15 mL) Faniilla
  • ¼ qy (1.25 mL) Cusbo (waa ka dhaafi kartaa)
  • 1 qy (5 mL) Beekin baawdar
  • 1 Bishir oranjo
  • 2 koob (560 g) Bur cad
  • ¼ koob (59 mL) Caano
  • 1 QW (15 mL) Buuro – Waxaad marisaa birta doolshaha

Kareemada Doolshaha:

  • 8 oz (227 g) Farmaajo kareemo leh – Farmaajo ama jubna kareemo ah oo jilicsan
  • 2 Ukun
  • ½ koob (100 g) Sokor cad
  • Sokor la shiiday – Doolshaha dusha loogu qurxiyo

 

Diyaarinta:

 

  1. Foornada sii kululeey, ku aaddi 350°F/177°C.
  2. Hal oranjo maqaarka ka hool.
  3. Sokorta baaquliga makiinadda ku shub.
  4. Buurada jilicsan ku dar.
  5. Saliidda ku shub. Surcad sare ku garaac muddo 5 daqiiqo. Dhinacyada ka nadiifi.
  6. Ukunta ku dar.

Diyaarinta doolshaha


 

  1. Beekin bawdarka ku dar.
  2. Cusbada ku dar.
  3. Faniilada ku dar.
  4. Ku dar qolofta oranjada la xoqay.
  5. Surcad sare ku qas muddo 2 daqiiqo.
  6. Burka ku dar. Qas muddo 1 daqiiqo.
  7. Caanaha ku dar, muddo 1 daqiiqana qas.
  8. Hal qaaddo weyn buuro mari bir doolsho dhexda ka duleesha oo cabbirkeeda yahay 10″×4″ (25×4 cm). Cajiinka ku shub.
  9. Ku dub foorno 350°F/176°C muddo 45 daqiiqo. Dhig ha qaboobo muddo 10 daqiiqo intaadan ka bixin birta.

Les quatre-quarts faisaient partie des quelques gâteaux populaires en Somalie. Ils étaient seconds en popularité après les génoises. Les quatre-quarts étaient vendus dans les salons de thés mais ils n’étaient pas cuits sur place. Ils étaient vendus aux salons de thé par les femmes qui les cuisinaient chez elles et leurs recettes étaient gardées secrètes.

Il existait beaucoup de recettes et de variations de quatre-quarts mais en Somalie le parfum était toujours le même. La cardamome était moins chère que la vanille et elle était utilisée pour parfumer les quatre-quarts.

Un bon quatre-quarts devrait être moelleux mais pas trop gras, aéré et pas trop dense, tendre mais avec du croustillant, et il devrait avoir un très bon goût. Nous avons cuit plusieurs gâteaux et nous avons consulté la famille et les amis, pour trouver la recette qui répondait à ces critères. Nous avions cette recette depuis quelques années mais nous l’utilisions seulement avec du beurre. Zeinab Abu (Zeinabu Chihaba) nous suggéra d’utiliser une combinaison de beurre et d’huile pour ajouter du moelleux, et elle avait tout à fait raison.

La combinaison du zeste d’orange et d’extrait pur de vanille donne un parfum délicieux au gâteau et l’arôme de ce gâteau emplira toute la maison. Quel bon moyen d’accueillir des invités à la maison!

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Quatre-Quarts:

  • 1 mesure (200 g) de Sucre blanc en Poudre
  • ½ mesure (125 mL) de Beurre Doux (ramolli)
  • ½ mesure (118 mL) d’Huile de Colza
  • 3 Gros Oeufs
  • 1 cs (15 mL) d’Extrait de Vanille
  • ¼ cc (1.25 mL) de Sel (optionnel)
  • 1 cc (5 mL) de Levure Chimique
  • 1 de Zeste d’Orange
  • 2 mesures (560 g) de Farine Blanche
  • ¼ mesure (59 mL) de lait – nous avons utilisé du demi-écrémé, vous pouvez utilisé celui que vous voulez
  • 1 cs (15 mL) de Beurre – pour graisser le moule (nous avons utilisé un moule à savarin de 25×11 cm)

Garniture du Gâteau:

  • 8 onces (227 g) de Fromage Frais
  • 2 Oeufs
  • ½ mesure (100 g) de Sucre blanc en Poudre
  • Sucre en poudre – pour saupoudrer

 

Instructions:

 

  1. Préchauffer le four à 350°F/177°C.
  2. Zester une orange
  3. Ajouter le sucre.
  4. Ajouter le beurre.
  5. Ajouter l’huile de colza. Battre à vitesse rapide pendant 5 minutes. Pendant ces 5 minutes, racler les bords une fois.
  6. Ajouter les oeufs.

Étapes pour préparer le gâteau

  1. Ajouter la levure.
  2. Ajouter le sel.
  3. Ajouter l’extrait de vanille.
  4. Ajouter le zeste d’orange.
  5. Mélanger à vitesse rapide pendant 2 minutes.
  6. Ajouter la farine et mélanger pendant 1 minute.
  7. Ajouter le lait et mélanger pendant 1 minute.
  8. Graisser le moule à savarin avec 1 cuillère à soupe de beurre puis verser l’appareil.
  9. Cuire à 350°F/176°C pendant 45 minutes. Laisser le gâteau refroidir pendant 10 minutes avant de le démouler.

طريقة التحضير:

 

يسخن الفرن الى درجة حرارة 177 د.م. (350 ف) -1
يبشر قشرة برتقالة -2
يوضع السكر في سلطانية الخلاط الكهربائي -3
تضاف الزبدة الطرية -4
يضاف الزيت وتخفق المكونات لمدة 5 دقائق على سرعة عالية -5
يضاف البيض -6

طريقة تحضير الباوند كيك

يضاف البيكنج بودر -1
يضاف الملح -2
تضاف الفانيليا -3
يضاف بشر البرتقال -4
تخفق على سرعة عالية لمدة دقيقتين -5
يضاف الدقيق ويخلط لمدة دقيقة -6
يضاف الحليب ويخلط لمدة دقيقة -7
يدهن قالب كيك 25×10 سم (10×4 إنش) بملعقة كبيرة زبدة -8
يخبز في الفرن على درجة حرارة 177 د.م. (350 ف) لمدة 45 دقيقة. يترك ليبرد لمدة 10 دقائق ثم يقلب -9

      Invite over some family or friends for tea and bake the cake. The key to a successful diet is eating in moderation (smaller portions). A little indulgence helps put in check uncontrollable cravings. Good attempt, even though unsuccessful, for trying to make us feel guilty. :) Enjoy!

    amazing cake maashaAllah sodehdeeda always makes me this cake when ever i visit her and always cake ga kitchen table ka uunbay ku dhaaftaa fridge ka ma geliso it usually lasts a week but kitchen table ka uunbay ku dhaaftaa can you please tell me what is your way of storing this cake Thanks.

      Thank you very much for your comment. A pound cake can last 2 days on the kitchen counter and up to a week in the refrigerator. You can also freeze it, if you like, for up to 6 months. Thanks for the question.

      Yes, you can substitute margarine for butter. Make sure it is a baking or cooking margarine and not a spread.

    This cake was delicious my friend. I baked it without the orange zest because i didn’t have some yesterday. But it came very great with the margarine.

    Salam aleikum!
    I just want to Thank u and tell u guys what an incredible nice site you’ve created. I’m really not a good cook and have a limited imagination but that’s all changed since I found your site. What I love about it is except that everything(and I MEAN everything I’ve cooked/baked with the help of recipes) turns out great, all the steps are so detailed and exact. All from the steps to the amount to the time. I live in Sweden so I have to change the measures but everything comes out great. So a BIG thanks from me. A request is if u could add a sugar free cake/dessert. My dad has diabetes and it would be fun if he could have dessert when we have :)
