Qamar al-din is a juice prepared from dried apricot paste. It is a very popular drink for breaking the fast in the month of Ramadan. The origin of qamar al-din can be traced to Syria and from there it spread to many parts of the Middle East and North Africa. The best qamar al-din is still made in Syria.

There are many versions of why the dried apricot paste was named qamar al-din. One version states that the man who invented the process was called Qamar al-Din. It is said that he was so handsome that he looked like the moon (qamar قمر). He was named after the moon and his invention was named after him.

Another version states that the dried apricot paste becomes available in the market with the sighting of the new moon of the month of Ramadan which marks the beginning of the month of fasting. That is the reason why it was named qamar al-din.

The traditional method of preparing qamar al-din is to soak the dried paste in water overnight. However, we used the much quicker method of rehydrating it by cutting it into small pieces and boiling it for a few minutes. We believe straining the juice is important even though some skip that step.

Chilled qamar al-din juice is very refreshing and delicious if it has the right consistency: not too thick and not watery. We also recommend that you go easy on the orange blossom water as it can be overwhelming for some palates. We liked the qamar al-din even more after we added some orange juice. Not only more delicious, but a true thirst-quencher.

Ingredients

1 cup = 237 mL · 1 Tbsp = 15 mL · 1 tsp = 5 mL. All are level measurements.

  1. Steps for preparing qamar al-din
  2. Using scissors, cut the qamar al-din (dried apricot paste) into strips.

  3. Cut the strips into small pieces.

  4. In a pot set over medium heat, place the qamar al-din, water and sugar.

  5. Bring to a boil, then stir until fully dissolved.

  6. Strain, then chill.

  7. Add the rose water. Stir well and serve. For a tastier drink, we recommend adding orange juice.
