These coconut sweets were popular street food in Somalia. They were made of freshly grated coconut that was readily available. After leaving Somalia, many people had problems finding the ingredients they were familiar with. As a result, many foods could not be made or they did not taste the same when other ingredients were substituted.

Many have tried making these coconut sweets using dried coconut flakes soaked in water or milk. However, the result was not the same. That is until we discovered “fresh” frozen shredded coconut. We were pleased with the result and hope you will be too. The frozen shredded coconut is available in Asian grocery stores, in the freezer section.

For those of you who live in places where there are no Asian grocers, we have included a recipe using the dried coconut flakes. We recommend buying the finer shredded coconut and soaking them in milk and coconut milk. We found that adding a little coconut milk enhances the flavour of the coconut sweets, but adding too much will make the sweets very oily.

Ingredients

1 cup = 237 mL · 1 Tbsp = 15 mL · 1 tsp = 5 mL. All are level measurements.

Method

  1. Put the sugar in a saucepan over medium heat.

  2. Let it melt slowly. Once the sugar is half melted, start stirring. Make sure the sugar does not burn.

  3. Add the shredded coconut (if you are using frozen coconut), otherwise add the coconut soaked in the milk.

  4. Add half of the butter and let it cook.

  5. Add the flour.

  6. Add the rest of the butter.

  7. The total cooking time is 8 minutes.

  8. Let it cool.

  9. Shape into balls.
