Red snapper

What to look for
A fresh whole snapper has clear, bulging eyes, bright red gills, shiny skin and flesh that springs back when pressed. It should smell of the sea; cloudy eyes or a strong fishy smell mean it’s old. Ask for it scaled and gutted.
