In Somali, this corn flatbread is known as muufo tinaar or simply muufo. We believe the word muufo came from the Arabic word mofa موفا. Mofa and mifa ميفا are other names for the tanoor تنور or tandoor oven. It is our theory that the name mofa bread (bread baked in a mofa) was shortened to muufo. This theory is reinforced by the fact that in the northern part of Somalia, there is another bread that is named after an oven. The bread is called furun from the Arabic word فرن which means oven.

The Somali tinaar (tandoor oven) is made from clay and the heat is generated by a wood fire that is lit inside it. Once the tinaar becomes hot enough, the oven’s inside walls are wiped with a cloth cushion that has been lightly moistened. This removes any ashes on the walls and helps the bread stick to the wall. When the baker skips this step, some of the bread fall off the wall and get covered with ashes. That bread is not thrown away but the ashes are just brushed off. Sometimes the bread accidentally falls into the ashes when it is being pried off the walls. Baking bread in a tinaar is difficult work and not many can handle the heat.

The traditional Somali muufo is an unleavened bread. Since it has no yeast or other leavening agents, the bread does not rise during baking. The Bravanese (from Brava, Somalia) know this bread as mandaa ku dirsha (hurried bread) since it is baked right after the corn dough is brought from the mill. This is in contrast to the traditional maanda (Bravanese bread) known in Somali as muufo Baraawe. That bread is left to ferment and rises during baking.

We used white corn flour (not to be confused with cornstarch) to prepare the bread. The flour has a little texture and is not as fine as all-purpose flour. When we cannot find corn flour, we grind corn meal or corn grits and the resulting flour is also perfect for making muufo.

Some Somalis know muufo tinaar as garmash. The flatbread is served with stews and bananas but is often broken into small pieces, sprinkled with sugar, drizzled with ghee or untoasted sesame oil, then soaked with hot black tea.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Somali Corn Flatbread:

  • 2 cups (300 g) White corn flour – NOT cornstarch
  • 1½ cups (210 g) All-purpose (plain) flour
  • ¼ cup (50 g) Granulated white sugar
  • 1 tsp (5 mL) Salt
  • 1 tsp (5 mL) Instant yeast
  • 2 cups (474 mL) Water

 

Directions:

 

Steps for preparing corn flatbread

  1. Place all the ingredients in a bowl.
  2. Mix until well combined. Cover and let the dough rise for one hour.
  3. Wet your hands in a bowl of water and shape a fistful of dough.
  4. Form the dough into a round shape and place it in the middle of a preheated pan.
  5. Flatten the dough and make indents.
  6. Cover and cook over medium heat for 3 minutes.
  7. Flip over and cook uncovered for another minute.

Carabta waxay muufada u yaqaanaan خبز الموفا oo micnihiisa yahay rootiga tinnaarta. Soomaalida waxay u soo gaabiyeen muufo. Taas waxaa kaloo kuu cadeynaysa in waqooyiga Soomaaliya rootiga lagu dubo foornada loo yaqaanno furun. Erayga furun فرن waxaa laga keenay foornada rootigaas lagu dubay.

Tinaarta waxaa laga samayn jiray dheri dhoobo ah oo dhulka la gelin jiray. Tinaarta qoryo ayaa lagu dhex ridi jiray, kaddibna waa la shidi jiray. Markay kululaato, maro la kuusay oo xoogaa qoyan ayaa lagu tirtiri jiray meesha muufada lagu dhejinaayo. Ujeeddada waxay ahayd wixii dambas ah in laga tirtiro si uu cajiinka tinnaarta ugu dhego oo aysan muufada u soo dhicin. Hadday muufada tinaarta ku dhex dhacdo, muufadaas lama tuuri jirin oo dambaska uun baa laga jafi jiray. Dubista muufa tinnaarta waa hawl adag oo u baahan adkaysi badan.

Muufo tinnaarta laguma dari jirin qamiir, sidaas darteed muufada ma fuuri jirin. Cajiinka marka la soo shiido horay ayaa laga dubi jiray. Reer Baraawaha waxay muufada noocaas u yaqaanaan mandhaa kudirsha oo micnihiisa yahay muufo la boobsiiyay ama muufo ka gaarsiis ah. Muufa Baraawaha waqti badan ayay qaadataa oo waxaa la sugaa ilaa ay ka qamiirto, markii la dubana way fuurtaa.

En Somali, la galette de maïs est connue sous le nom de muufo tinaar ou simplement muufo. Nous pensons que le mot muufo vient de l’Arabe mofa موفا. Mofa et mifa ميفا sont les autres nom utilisés pour le tanoor تنور ou le four tandoor. C’est notre théorie en tout cas, que le nom du pain mofa s’est trouvé raccourci en muufo. Théorie renforcée pour le fait que dans le nord de la Somalie, il existe un autre pain nommé d’après le four dans lequel il est cuit. Le pain s’appelle furun du mot arabe فرن qui signifie four.

Le tinaar Somali (four tandoor) est fait d’argile et la chaleur provient d’un feu de bois qui est allumé dedans. Une fois le tinaar assez chaud, les parois du four sont essuyées avec coussin en tissu légèrement humide. Cela est fait pour retirer les cendres éventuellement collées aux parois et pour que le pain adhère mieux. Si le boulanger oublie cette étape, une partie des galettes se détache des parois et tombe dans les cendres. Le pain n’est pas jeté, les cendres sont juste brossées. Parfois le pain tombe accidentellement dans les cendres lorsqu’on le retire à la fin de la cuisson. Faire cuire du pain dans un tinaar est une tâche difficile et beaucoup ne supporte pas la chaleur.

Le muufo Somali traditionnel est un pain à pâte non levée. Comme il ne contient pas de levure ou d’agent de levage, le pain ne lève pas pendant la cuisson. Les Bravanais (de Brava, Somalie) connaissent ce pain sous le nom de mandaa ku dirsha (pain rapide) comme il cuit dès que la pâte de maïs arrive du moulin. A l’opposé, le mandaa traditionnel (pain Bravanais) s’appelle en Somali muufo Baraawe. Ce pain est fermenté et lève pendant la cuisson.

Nous avons utilisé de la farine de maïs blanc (à ne pas confondre avec de la maïzena) pour préparer les galettes. La farine a une certaine texture, elle n’est pas aussi fine que la farine ménagère. Quand nous ne trouvons pas de farine de maïs, nous utilisons de la semoule de maïs ou du gruau (porridge) que nous moulons nous-mêmes et nous obtenons une farine parfaite pour faire le muufo.

Certains Somalis appellent le muufo tinaar, garmash. Le pain est servi avec des ragoûts et des bananes mais il est souvent découpé en petits morceaux, saupoudré de sucre, arrosé de ghee ou d’huile de sésame non toastée, puis trempé dans du thé noir.

  • 2 mesures (300 g) de Farine de Maïs Blanc – pas de fécule/Maizena
  • 1½ mesures (210 g) de Farine Blanche
  • ¼ mesure (50 g) de Sucre blanc en Poudre
  • 1 cc (5 mL) de Sel
  • 1 cc (5 mL) de Levure Instantanée
  • 2 mesures (474 mL) d’Eau

 

Instructions:

 

Étapes de préparation de la galette de maïs

  1. Mettre tous les ingrédients dans un bol.
  2. Bien mélanger. Couvrir et laisser lever la pâte pendant une heure.
  3. Se mouiller les mains dans un bol rempli d’eau et attraper une poignée de pâte et la modeler.
  4. Déposer la boule de pâte au centre de la poêle préchauffée.
  5. Bien aplatir la pâte en appuyant avec les doigts et former des petits creux.
  6. Couvrir et cuire à feu moyen pendant 3 minutes.
  7. Retourner et cuire à découvert une minute de plus.

طريقة التحضير:

توضع كل المكونات في سلطانية -1
تخلط جيدا ثم تغطى وتترك تختمر لمدة ساعة -2
تغمس اليدين في ماء وتأخذ قطعة من العجينة -3
تشكل العجينة على هيئة كرة وتوضع في وسط مقلاة ساخنة -4
تفرد باليد بشكل دائري وتضغط بالاصابع -5
تغطى وتطهى على نار متوسطة لمدة 3 دقائق -6
يقلب الخبز ويطهى بدون غطاء لمدة دقيقة -7

    Salaam,

    I tried to make this recipe but for some reason it was not the same consistency as yours did you add more water? i used the same measurement you used but it didn’t come out that way. I remember watching my mom make muffo but she always used more flour then white corn flour. Please let me know what i am doing wrong.
