Cheese Fatayer (Fataa’ir Farmaajo) Fatayer au Fromage فطائر بالجبنة
We are fatayer lovers and testament to that is the huge plate of assorted fatayer we showed you in the fatayer dough recipe. Fatayer are one of these recipe that we like to make year-round and not just on special occasions. Preparing the dough is a snap and you could use different types of fillings to make the fatayer always interesting.
These cheese fatayer are so tasty that they will appeal even to those that are addicted to meat. The combination of the salty cheese, fresh parsley, fresh mint, and nigella seeds makes the fatayer irresistible. We used feta cheese since it is more readily available but if you wish to make the fatayer more authentic, then use akkawi cheese.
We also tried a combination of ricotta and mozzarella cheese, using half of each, and we were pleased with the result. Experiment with different cheeses and see what you like best. Another reason we chose feta cheese over akkawi is because of our preference for the tart tanginess of feta. That makes the cheese fatayer taste more robust.
Shape the fatayer as soon as the dough finishes resting. To keep the fatayer from puffing up too much and losing their shape, it is important to bake them right away. We made the cheese fatayer into boat-like shapes, which is the way they are traditionally made, but you can use any shape you prefer, including making them into mini pizzas.
It is much more convenient to prepare a large batch of fatayer and partially bake them then freeze them. We usually bake them for 10 minutes, let them cool down then place them in freezer bags. When we need to serve them, we place the frozen fatayer in the oven (or toaster oven) and bake them until heated through and golden brown.

Cheese Fatayer
Yields 24 fatayer
Ingredients:
- 1 recipe Fatayer Dough – click for recipe

Cheese Filling
Ingredients:
- 9 ounces (255 grams) feta cheese – or akkawi cheese or ½ ricotta + ½ mozzarella
- ½ cup (80 grams) fresh parsley (chopped)
- ¼ cup (40 grams) fresh mint leaves (chopped)
- 1 tablespoon (15 milliliters) nigella seeds
- 1 large egg
Directions:
- Cut the cheese into small cubes.
- Soak in cold water for 10 to 15 minutes. Change the water twice.
- Drain the cheese then crumble.
Directions:
- Place all the ingredients in a bowl.
- Mix well until combined.
- Divide the dough into 24 equal pieces.
- Roll out into an oval shape.
- Put 1½ teaspoons of the filling in the middle and spread.
- Lift one edge and press the ends. Do the same with other edge making a boat-like shape.

Xashwo Farmaajo
Mukawinaadka:
- 9 wiqiyad (255 garaam) farmaajo feta – ou akkawi ou moitié ricotta + moitié mozzarella
- ½ koob (80 garaam) baqduunis cusboon (jarjaran)
- ¼ koob (40 garaam) caleemo nicnaac cusboon (jarjaran)
- 1 qaaddo weyn (15 mililitir) xabba sowdo
- 1 ukun weyn
Diyaarinta:
- Farmaajada gabalo yaryar u jar.
- Biyo qaboow la dhig muddo 10 ilaa 15 daqiiqo. Laba goor biyaha ka beddel.
- Biyaha ka miir kaddibna burburi.
Diyaarinta:
- Mukawinaadka oo dhan baaquli ku shub.
- Si fiican u walaaq.
- Cajiinka 24 gabal oo isle’eg u qaybi.
- Waxaa u fidisaa qaab wareeg ukun oo kale ah, sida fiidiyaha kaaga muuqda.
- Xashwada 1½ qy dhexda ku shub. Wax yar sin.
- Hal dhinac soo laab, kaddibna faraha ku riix. Dhinaca kale soo laab haddana riix. Sida doon oo kale ka dhig.
Nous sommes des amateurs de fatayer et la preuve en est la photo de l’énorme assiette de fatayers que nous avons publié avec la recette de la pâte à fatayer. Nous aimons faire la recette des fatayers tout au long de l’année et pas seulement pour les grandes occasions. La pâte se prépare en un rien de temps et les différentes farces rendent les fatayers toujours intéressants.
Ces fatayers au fromage sont tellement bons qu’ils plairont même à ceux qui ne mangent que de la viande. Le mélange du fromage salé, du persil frais, de la menthe fraîche, et des graines de nigelle, les rend irrésistibles. Nous avons utilisé de la feta car elle est plus facile à trouver, mais si vous souhaitez faire des fatayers authentiques, utilisez du fromage akkawi.
Nous avons testé un mélange de ricotta et de mozzarella, moitié-moitié, et nous avons aimé le résultat. Nous vous recommandons d’expérimenter avec différents fromages pour trouver celui qui vous plaît le plus. L’autre raison pour laquelle nous avons choisi la feta à la place de l’akkawi est que nous préférons son goût plus prononcé. Cela rend le goût du fatayer plus robuste.
Formez les fatayers aussitôt que la pâte a fini de lever. Pour éviter que les fatayers gonflent trop et perdent leur forme, il est important de les cuire immédiatement. Nous avons fait les fatayers au fromage en forme de bateau, ce qui est la présentation traditionnelle, mais vous pouvez utiliser la forme que vous préférez, même les faire en mini pizzas.
Il est plus pratique de préparer une grande quantité de fatayers, de les cuire partiellement puis de les congeler. Nous les cuisons 10 minutes, les laissons refroidir puis les mettons dans des sacs de congélation. Dès que nous voulons les servir, nous mettons les fatayers surgelés au four (ou au four toaster) et les faisons cuire jusqu’à ce qu’ils soient chauds et dorés.

Pour 24 fatayer
Ingrédients:

Farce au Fromage
Ingrédients:
- 9 onces (255 grammes) de fromage feta
- ½ mesure (80 grammes) de persil frais (haché)
- ¼ mesure (40 grammes) de feuilles de menthe fraîche (hachée)
- 1 cuillère à soupe (15 ml) de graines de nigelle
- 1 gros ouef
Instructions:
- Couper le fromage en petits cubes.
- Tremper les cubes dans l’eau froide 10 à 15 minutes. Changer l’eau deux fois.
- Égoutter le fromage puis l’émietter.
Instructions:
- Mettre tous les ingrédients dans un saladier.
- Bien mélanger.
- Couper la pâte en 24 morceaux de taille égale.
- Étaler chaque morceau en ovale.
- Mettre 11⁄2 cuillère à café de farce au milieu et étaler.
- Plier un bord et appuyer à chaque bout. Faire de même avec l’autre bord pour obtenir une forme de bateau.

حشوة الجبنة
المقادير:
- 9 أونصة (255 جرام) جبنة فيتا
- ½ كوب (80 جرام) بقدونس طازج (مقطعة)
- ¼ كوب (40 جرام) اوراق نعناع طازج (مقطعة)
- 1 ملعقة كبيرة (15 مليلتر) الحبة السوداء
- 1 بيض كبير
طريقة التحضير:
- تقطع الجبنة الى قطع صغيرة
- تنقع الجبنة في ماء بارد لمدة 10 الى 15 دقيقة. يغير الماء مرتين.
- تصفى من الماء ثم تفتت.
طريقة التحضير:
- توضع كل المكونات في سلطانية
- تخلط جيدا.
- تقسم العجينة الى 24 قطعة متساوية.
- تفرد العجينة على شكل بيضوي.
- توضع ½1 ملعقة صغيرة من الحشوة في الوسط وتفرد قليلا
- تغلق الاطراف وتشكل على هيئة قارب.
